Comforting food

Hi friends! Happy Friday! What are you up to this weekend? I have a baby shower, bachelorette party and wedding to attend- lots going on this weekend ๐Ÿ™‚

The Pilotโ€™s schedule has been crazy as ever this week, so when he requested eggplant parmesean last night, I delivered.

Sometimes comfort food is all ya need ๐Ÿ™‚

But, bread anything, fry it and bake it with marinara and cheese and youโ€™re pretty much guaranteed a foodgasm ๐Ÿ˜‰

Prep station:

I sautรฉed my eggplant with olive oil, sea salt and pepper

and the Pilotโ€™s got an egg bath, dip in fresh bread crumbs and pan-fried in olive oil

It was nice, too, because we enjoyed dinner at the table, sans technology. I mentioned the other night that itโ€™s pretty easy for both of us to come home and unwind- Pilot at the TV and me at the laptop. Technology is awesome, but sometimes can get in the way of life ๐Ÿ˜‰ Itโ€™s good to know when to turn things off and enjoy the company of others, ya know?

Something to talk about: How do you keep technology from getting in the way? Do you turn off the laptop at certain times? What about the TV? We refuse to have one in our bedroom for that very reason ๐Ÿ™‚

    I think technology can definitely get in the way of togetherness (and good sleep). I try to turn off the laptop and phone an hour before bed, and no TV in the bedroom.
    Your eggplant parmesan is beautiful! And your pilot is really lucky that you are willing to make his and hers meals…

    I’m pretty bad about prying myself away from the computer…mostly because I’m writing reading blogs! But ya we have a no TV in the bedroom rule. We believe the bedroom is for two things…sleep and well um you know ๐Ÿ˜‰

    Roasted eggplant with marinara is pretty much the only way I’ll eat it! So delicious!

    I have a question about ab exercises. Currently I do 10-15 min of ab exercises 3 times a week. Is that necessary to maintain my abs, or could I get by with just doing 2 or 3 ab exercises in my weight-workouts twice a week?

      abs are more about eating and cardio than what type of exercises you’re doing. if your cardio and eats are good, you could definitely get away with doing less (or hardly any at all)

    Your dishes looked lovely. We don’t have any technology in the bed room, nor do we have t.v! We just download the shows we want to watch when we want to watch them! Then time is ours. And you totally zevia inspired me! I got the lemon lime one today!

    Hey there- Ive been following your blog for a little while now and Ive noticed that a lot of your meals include gluten-free foods. Do you have an allergy/intolerance or is it just a preference? Personally I have a gluten intolerance and prefer to eat mostly vegetarian with the exception of some seafood and eggs. I am in a relationship with a meatitarian who has 0 diet restrictions so its always nice to see what type of meals you and your hubby come up with to share together.

      i’m sensitive to gluten. i can eat it occasionally, but prefer to stay away because i feel better without it

    My blackberry is programmed to go to sleep at 9:00 pm weeknights and 10 pm on the weekends. We live in a smallish condo so no room or desire to have a TV in the bedroom. We both find that if we “unplug” from blackberries, laptops, and even TV before bedtime we both sleep better. Keep up the great posts!

    The lasagna looks delicious! Def agree about the no technology times… My fiance got a new job in the past year [and I’ll be starting next week] so it’s hard sometimes because certain things need immediate attention but our biggest goal is not to bring our phones to the dinner table…
