Slow cooker detox chicken
Hi friends! Howโs the day going? Itโs been a great one over here, most of it is attributed to the fact that itโs warm and glorious.
Quick trip to the beach:
Some more adventures from lately:
Liv asked for pancakes before she went to bed last night, so I had fresh Mickey face โcakes waiting for her when she woke up. (I make extra and freeze them for easy breakfasts.)
Made some raw brownies (and will post the recipe after I add the finishing touch!):
walking and reading on the treadmill before training a client last night:
(I am thisclose to finishing Big Little Liesย and just got to the crazy plot twist aka the moment Iโve been waiting for. I may have gasped audibly on the treadmill haha.)
and this enormous salad + Caroline’s โI want all your chickenโ face.
Our little detox is going well for the most part – Iโve already cheated and had half-caf coffee twice because of the bedtime battles weโve been experiencing – and this salad was almost pure leftovers from dinners. One of my favorite things about having lots of roasted veggies, protein, and homemade dressing on hand is that itโs so easy to put together a delicious and satisfying salad. Greens on the bottom, roasted veg on top, chicken, balsamic dressing, and lunch is served. When we have a ton of options to choose from, itโs so much easier for me to get quality produce and protein (aka eat like a PRO).
Slow Cooker Detox Chicken
Hereโs what I did for the chicken last night! It was so quick to put together and turned out awesome. The family loved it!
Also donโt let the name of this post fool ya. Thereโs nothing particularly detoxifying about this chicken. I made it in the slow cooker (an Instant Pot would probably work, too), and we ate it during out detox, haha.
At the bottom of the slow cooker, I added one large sweet onion (rough chopped), 4 carrots (peeled and rough chopped), and one bag of peeled and cubed butternut squash from Trader Joe’s. The veggies got a quick salt and pepper shower.
I cleaned out the chicken (organic whole chicken, also from TJ’s), and patted it dry before placing it on the top of the veg. Inside the chicken, I added one halved meyer lemon, one head of garlic (cut in half lengthwise), and a palmful of fresh thyme. You could throw in a bay leaf, too. To season the outside of the chicken, I used salt, pepper, smoked paprika (LOTS), garlic powder, and a bit of onion powder. Two little cuts of butter went on top, and it cooked for 4 1/2 hours on high (and was falling off the bone). The veggies were so beautifully seasoned from cooking in the chicken broth; served with roasted garlic broccoli, it was an awesome dinner.
The “before” shot:
If you have leftover chicken, you can shred the chicken and make a “detox soup” with nourishing bone broth, veggies, and herbs. I have a feeling you’ll absolutely love this recipe – let me know what you think!
Time to get ready for spin and Zumba! Hope you have a lovely night <3 See ya in the morning with a quick and dirty bodyweight circuit.
xoxo

Something to talk about:ย Whatโs one movie or show that you watch EVERY TIME you see that itโs on? I currently have My Best Friendโs Wedding on in the background, and have seen it at least 18263 times.
Dessert:ย these Paleo almond butter lava cakes ๐
Notting Hill with Julia Roberts. I think I can recite every line….whoops did I say that outloud?!
HUGH GRANT
hahahahahha precisely!!!
There are so many! This Means War the other day with Reese Witherspoon and the Devil Wears Prada. Lots of girlie movies. ๐
love devil wears prada!
I love Julia Roberts movies! Others that fit into that “watch a million times” category for me are A Walk to Remember, Love Actually, and He’s Just Not That Into You. I’m a chick flick lover, there’s no denying it!
The Notebook. I can never resist watching that movie.
Mean Girls
I absolutely loved Little Big Lies! They are actually making it into a miniseries with Reese Witherspoon and Nicole Kidman. I can’t wait!
I must watch “Jaws”. Every. Single. Time. And I know I own it on DVD – but I feel compelled to sit and watch it whenever I catch it on television. The same goes for “Serenity”.
So funny… I have a simple crockpot chicken cookin away as we speak! I prepped it last night (like 5min–WOOOO!), and threw it on low this morning before heading off to work. GENIUS!
I never cook whole chicken for fear of under/over cooking in the oven (several failed attempts in the past). Enter crockpot. Life.Changer.
Sooooo love that you have an early early generation kindle and still use it! Me too!
twinsies! i thought about getting a new one and was like why? this one is perfectly awesome ๐
You’ve Got Mail or basically anything with the classic Meg Ryan+Tom Hanks combo. ๐
Yum, I see shredded coconut in there. That’s always a fav!
Top Gun. After watching it with navy pilots so many times, I now know all the flaws in it, but it’s so ridiculous I love it.
Father of the Bride! Every time it’s on, I have to watch it! And Father of the Bride 2, when Franc is doing aerobics with pregnant Annie and Nora? I die!
You’ve Got Mail, every time!
I watch Legally Blonde and How To Lose A Guy In 10 Days. I just love the love fern!
I forgot you were in San Diego. I am going to have to see if I can take one of your classes. I am a freshman at SDSU, and it would be such an honor to meet you sometime. Thanks for the recipe!
How to Lose a Guy in 10 Days ๐ That movie seems to be on all the time lately. Don’t mind watching a little Matthew McConaugheyyy.
What a beautiful beach!
What size slow cooker do you use?
it’s a standard large one; i’m not sure how many quarts it is
My Cousin Vinny… it’s hilarious every time!
OMG i miss that beach/boardwalk. ๐
Every time The Wedding Date is on I HAVE to watch it. No clue what it is about it since it’s just a typical rom-com, but every scene is my fave and I love it.
I just cooked a whole chicken in the crockpot two nights ago and it was delicious! Hope bedtime starts getting better soon ๐
That chicken looks delish! Bed time battles oh can so relate. I overcaffienated today and now I am shakey and still tired haha. Thankfully I don’t have to make any big decisions today.
I finally got a crock pot for Christmas so this recipe is definitely being saved!
That chicken sounds so good and simple! I need to bust out my slow cooker for more than bone broth! Thanks for sharing.
I don’t know why, but I could watch Bridget Jones’ Diary every.single.time it’s on TV. I mean, I partially know why, but still. Every time?
i LOVE my slow cooker!! It’s the best for healthy, easy dinners!
Hey Gina! Have you tried pop physique? It’s a California based barre company, but they just happen to have one where I live (in Baltimore)! I love it and thought I would pass along a recommendation in case there is one nearby you! Your review of barre classes in general helped encourage me to go for the first time, and now I’ve been going consistently. Thanks! Have a great day!
i haven’t but i’ve been wanting to check it out! maybe i can do it next week ๐
I’m never thrilled with how skin-on chicken comes out in the slow cooker. It always looks gray. Do you just discard the skin? I guess I should stop expecting it to come out like a roasted chicken.
no i eat it haha
broil it in the over for 4-5 minutes at the end. crispy skin. amazing.
For some reason, How to Lose a Guy in 10 Days I must always watch.
THE LOVE FERN. YOU KILLED IT.
Beautiful beach picture!
It’s hard to pick just 1 movie. Enemy of the State is one I could watch anytime.
i’ve never seen it!
Shark Tank. I gotta watch it!
No matter how hard I try, I cannot get into sweet potatoes. Except the candied yam sort – I can do that all. day. long. And why is eating healthy so darn expensive?! I know why, of course but geeza. Frustrating as heck. Processed food should be heavily taxed and expensive, as a penalty and deterrent for eating crap. Can I get an amen? ๐
looooove shark tank ๐
and AMEN
Did you put any water in the crock pot to make the chicken?
nope, just the veg!
Hi! I have followed your blog for 3 years now, but this is the first time I have ever posted. I am a little behind on your blog as I have been deployed for the last year. I was wondering where you were teaching now? I was just stationed in San Diego and I would love to swing by and take a class!

Devil Wears Prada and Family Guy! ๐
Don’t laugh….I love the Sound Of Music!! Also love Sleepless in Seattle and Love Actually ๐

Hi! I just found your blog!
I just finished Big Little Lies!! WOW – wait till you get to the end!
Favorite movie is Sense and Sensibility – LOVE.
Glad I found your blog. ๐
thank you so much- nice to *meet* you!
and i finished it last night!! CRAAAAZZZYYYYYYYYYY
Forgetting Sarah Marshall, Couples Retreat, and dare I say Jaws ๐
Can’t wait to try the recipe!
I’m now reading Big Little Lies because we read The Husband’s Secret for my book club last month and I enjoy her writing. Yep, I’m in a book club. Sounds super nerdy but it’s full of awesome women and we all enjoy wine and talk about life and books.
Have you read Still Alice? It’s a movie coming out soon but the book is supposed to be great.
