Blender Banana Oat Pancakes

Hiiiii! How’s it going? I’ve got some three-ingredient banana oat pancakes if you scroll down, but first, some chitchat. 🙂

So happy you enjoyed the capsule wardrobe post. So ready to spriiiiiiiing. Happy humpday! Flashback to the Valdosta days and every Wednesday was Indian Food Wednesday. I think some channa masala is happening tonight. Speaking of Valdosta, HAVE YOU SEEN THIS? I not-so-secretly wish this show would have happened about 5 years ago. 

Some happenings from lately:

Enchilada night. All enchiladas are good -they’re kind of like pizza- but homemade sauce takes it over.the.top. Try it; I promise you’ll never want to go back.

We also enjoyed a pizza-making party at our friends’ house. Look at these cute little hands decorating their pizzas:

Banana Oat Pancakes

I’m not sure if I’ve posted this pancake creation here on the blog, but it’s seriously the easiest thing.

I tweaked the standard banana-egg pancake recipe (2 eggs, one banana, some flax or chia) because I wanted it to have more of a cake-y texture and add satiety. Oats did the trick!

A high protein, gluten-free delicious twist on the classic pancake.

Ingredients

Scale
  • 1/2 Banana
  • 2 Eggs
  • 1/4 cup oats

Instructions

  1. Blend banana, eggs and oats until smooth.
  2. Use 1/4 cup scoop to portion out batter and cook on stove like regular pancakes
  3. Top with anything you’d like–my favorite combo is almond butter, maple syrup and berries

These banana oat pancakes are a great mix of protein, healthy fats and smart carbs, and taste like a lovely dessert.

This morning, I’ll be hanging out with my favorite little lady. I also plan to film quick booty video (with my favorite glute and hamstring moves!) and getting ready for spin later today.

    Reading this post before having breakfast was probably a bad idea – I’m starving!!! At least I know I’ll be making these pancakes since I have all the ingredients! How do you get them to be so perfect?? Enjoy your day with Livi!

    Ohh I’ll have to try those pancakes! I like regular protein pancakes, but I wish the texture was more cakey, like a regular pancake. This seems like the perfect trick!

    These look delicious!! I love putting nut butters on my pancakes, even though people think it’s weird. it makes them so much more filling (& tasty)!

    Ahh yes, blenders make the best pancakes! Yours look so delish and I’m kinda wishing I could have them right now. My go-to breakfast is either a big veggie omelette topped with salsa, or a great big smoothie. Either way, there’s always fruit of some sort on the side!

    ah I should not have read this before breakfast! Everything looks so yummy! That guacamole is a thing of beauty. My weekday breakfast staple is fat free Fage yogurt with bee pollen, and then I have a banana an hour or two later. I am now extra-hungry for my yogurt!

    Those pancakes look amazing, I’m going to try them at the weekend!
    I’m obsessed with Swiss Bircher at the moment – I soak oats overnight in some fresh apple juice, then throw in some nuts, seeds, a grated apple and a spoonful of greek yoghurt in the morning and top with blueberries – yum!

    That zucchini crust pizza looks amazing! My current fave breakfast combo: sweet potato, potato, bell pepper, onion, and asparagus…all chopped on Sunday night and portioned out in tupperware. When I get home from the gym I dump it all in a skillet while the coffee’s going (it almost makes a hash type thing?), then throw a couple slices of chicken or leftover steak on top with a runny egg. To. Die. For. (I love a good savory breakfast!)

    What funny timing for this post! Our office is closed today because of the threat of bad weather, so I’m working from home and opted to treat myself to a nice breakfast — I chose oat pancakes! Almost this exact same recipe. Hit the spot!

    I saw your tweet/insta with a pic of those this morning and went straight to making them before I even saw this blog post! Ha! Topped with maple syrup, peanut butter and cinnamon…SO good! Standard brekkie lately has been a smoothie bowl…just vegan protein powder, almond milk, and frozen berries 🙂

      I 3rd the request for the zucchini pizza crust!! Also, this sounds weird but I’ve made those pancakes with zucchini instead of banana and they turned out great! A little bit of a green tint, but tasted good. I think I did zucchini, eggs, flax, cinnamon, vanilla and blended it up.

    You totally read my mind with this pancake recipe! I was driving home from work last night trying to think of how I could make a healthier pancake work with the eggs I have in my fridge. Then I saw this on Insta last night! So no, you are not the only one who thinks of breakfast a whole day earlier 🙂
    My default breakfast is a plain chobani with fresh berries and bear naked fit granola.

    The pancakes and enchiladas look delicious!
    At this very moment an abundance of donuts and chocolate milk sound amazing! Today is day 1 of my “cleanse” so everything sugar is dancing around in my head! Instead of donuts I had an egg white scramble with avocado which was pretty tasty!

    Loving those pancakes. I’ve actually made them before but I don’t blend the oats. I like the crunch they give. My breakfast lately has been oatmeal with two egg whites cooked in it topped with fruit and but butter. Candy in a bowl. Do you have the zucchini pizza recipe?

    Two things: Can you get the recipe for the zucchini pizza crust?? That looks great!

    And secondly, my go to breakfast as of late is – oatmeal but instead of using water, I use apple juice. It gives it a sweet texture but fills me up until it’s time for my mid-morning snack. My other favorite to make on the weekend is onion oven roasted potatoes topped with 2 fried eggs (and in bacon if you can, it gives it that yummy saltiness) and ALL THE CHOLULA. It’s seriously so good!

    My go-to breakfast is either Kodiak cakes with bacon or an Ezekiel 4:9 English muffin with ham and cheese. But if I’m running its a cup of yogurt before my run and then full breakfast after.

    I loveeeee enchiladas. I make Creamy Chicken Enchiladas. They are pretty famous and legendary here on base… I don’t make them often.. they are rich and indulgent, and my oldest son says are only for special occasions because of that. LOL

    My go to breakfast lately is brown sugar steel cut oats with a side of egg whites cooked with onions, bell peppers and some turkey bacon bits…SOOO GOOD.

    Today though instead of oats i had Peanut Butter Protein waffles

    I made your version of the homemade sauce this weekend it was fantastic! I had to sub a whole chipotle for chipotle powder, but i think it still worked. MMMM!!! Made the enchiladas SO much better. **DROOL**

    My default breakfast is a huge green smoothie which I of course had this morning. My current favorite protein is Vega One’s new mocha flavor. It’s the BEST!! Have you tried it? It’s really good.

    Zucchini pizza has me drooling a bit 😉

    I love pancakes, but mostly for dinner 🙂 (When I studied in Greece my friends and I made breakfast for dinner one night a week–we actually found syrup in a Greek supermarket and it was awesome!) Along with pizza and brownies they are some of my favorite foods (and you seem to have all those covered in this post!) My stomach doesn’t really sit well with a lot of protein in the mornings, so I’ve stuck with my toast and a cup of tea, unless I do something crazy like make oatmeal 😉

    I made enchiladas last night, too! I used pre-made sauce, which was honestly quite good, but I bet your homemade one is even better. I’ll have to give it a try soon!

    My favorite breakfasts as of late are whole wheat toast with almond butter/a drizzle of honey, or quick microwave banana oatmeal, which was featured in the Winter Shape Up 😀

    My husband and I go through weekly rituals and change things up. We had make-your-own pizza Sundays, which turned into Taco Sundays. Now we have sushi Fridays. You never know. And I’m a big overnight oats eater for breakfast, but could always stand to switch things up. Happy Wednesday! 🙂

    My default is usually scrambled eggs and mushrooms with a giant green smoothie. On days that I have to teach early at the gym, I will grab a bar and then have my smoothie when I get home. My old default was oatmeal made w almond milk and topped w maple syrup and pumpkin pie spice. MMM now I want some of that again.

    I really need to start making these quick pancakes. I read about them everywhere and then my brain just glosses over it and they are never made. I will remedy this soon!

    I think these are great, but a tad better with a tiny bit of salt. Brings out the natural sweetness.
