Bring on the madness

March Madness is officially heeeeeeere. I look forward to this all year, and it always go by so quickly! Trying to savor it. I’ve spent some time this morning working on my bracket, and do this every time a Sportscenter announcer says they believe Arizona will make it to the Final Four.

Today was pretty chill. I taught BODYPUMP -and switched it up by using some older tracks- and took Livi her gymnastics class.

This is the latest Suja obsession: it tastes like a creamy dessert. I’m going to try and replicate it at home.

Breakfast this morning was leftovers from last night, which turned out 283748x better than I anticipated. I mean, if you’re going to put goat cheese and egg together in a dish and bake it, it’s destined to be tasty, but this was amaaaaazing.

I figured we’d have plenty of leftovers to photograph this morning in the sunlight, and we ate more than half the pan. The Pilot and I happily finished it this morning. 😉

I’m happy everyone in the family seemed to love it. We’ve been in a bit of a chicken rut lately, and I’ve been trying to explore some different options. Grilled chicken or salmon has become our default, and I used to make so many vegetarian dinners on a regular basis. I’m trying to add some spice back into the rotation.

Since Easter is just around the corner, and visions of my nana’s famous egg dish dance in my head, I thought I’d whip up something similar, using my favorite cheeses (goat cheese and Manchego!) and also make it gluten-free for my gf friends. If you’re looking for a spring brunch idea, or just trying to switch up the dinner rotation, I must say that this is an excellent choice.

The bottom layer is creaming goat cheese, layered with savory green chiles,

fluffy egg, and golden cheese on top. It’s delicious by itself, but especially amazing with chunky salsa and wrapped in a tortilla.

Just dooooo it.

A savory breakfast option, and is perfect to make ahead for family parties and brunches. Serve with fresh fruit, tortillas for wrapping and salsa.

  • Prep Time: 10
  • Cook Time: 40
  • Total Time: 40
  • Yield: 8 1x

Ingredients

Scale
  • 5 oz creamy goat cheese
  • 5 whole green chiles
  • 8 eggs
  • 1/2 cup almond meal
  • 1/2 teaspoon baking powder
  • Salt, pepper, and garlic powder
  • 1/4 cup almond milk
  • 1 cup grated manchego

Instructions

  1. 1. Preheat the oven to 350 and spray a 13×10 inch baking dish with olive oil or nonstick spray.
  2. 2. Crumble the goat cheese and distribute evenly on the bottom of the dish.
  3. 3. Gently place the green chiles on the dish, using more as needed. (You don’t need to cover the bottom of the dish entirely.
  4. 4. In a large bowl, whisk the eggs and almond milk. Whisk in the almond meal, baking powder, and season well with salt, pepper and garlic powder.
  5. 3. Stir in 1/2 cup of the manchego and pout the mixture into the baking dish.
  6. 4. Top with the rest of the manchego.
  7. 5. Bake for 35-40 minutes until golden brown and set.

    Hi Gina! Sounds delish! I had a Greek yogurt/fruit/nut bowl for breakfast, as I’m usually into a sweeter first meal of the day.     Oh this looks delicious! I had some oatmeal hemp pancakes this morning and they were quite delicious as well. I’m part of a pool for March madness this year. First time ever! I seriously have no idea where to start with my bracket so I’ll be doing a bit of research tonight. Wish me luck!

    Bear Down Arizona!!! Fellow Wildcat, class of 2006! I love March Madness every year and I have a good feeling about this year! Having Brandon Ashley healthy could just be the thing we need to make it this year! I can’t wait for the tourney! My prediction is Kentucky vs AZ!

    Ooh, I don’t think I would have thought of doing chiles for breakfast, but I love all variations on a Mexican theme, so I’ll have to give this a try sometime. How do you like that book? I have a perpetually growing list of yoga books that I want to read. Someday. When I get free time. 🙂

    I love goat cheese. This morning, breakfast was maple pumpkin oatmeal (cottage cheese added for protein.)
    Hubby and I are in the “not so much” category of sports. Buuuuut we are from KY originally, so, GO WILDCATS!

    Yum! I’m really good about rotating my dinners and getting a variety of vegetables, grains and proteins. Something I’m not good at is mixing up my lunches. They always seem to be the same thing over and over->canned tuna, brussels sprouts & a handful of sweet potatoes on lettuce with mustard. I’m looking for something new for summer. Maybe I should start eating eggs for lunch since I love them!

    I’m a Wisconsin Badger, so I do the exact opposite of that dance when I hear analysts say that the Wildcats will make it to the Final Four. 🙂

    I love that suja flavor too. Not too shabby nutritional stats either. If I’m pressed for time I grab one. I also sometimes add it to the blender with frozen spinach to get in extra veggies. Can’t taste it!!
    I’ve tried replicating it and have come very close. I used:
    1 frozen banana
    1 tbsp almond butter, raw unsalted
    Dash cinnamon, nutmeg, and allspice
    1/3 c. almond/coconut milk blend by silk
    1/2 c. Pastuerized liquid egg whites (instead of the hemp/pea protein)
    1/2 c frozen spinach.
    Vanilla extract
    Ice
    So good!! If you want it sweeter, you can add a date or two.

    We had this for dinner tonight and it was delicious! We had it with some greek yogurt, salsa, avocado, and cilantro. Oh and I heated up some black beans to go along side. Both my husband and I loved it (and that’s saying a lot since he is usually suspicious when there’s not “real” protein involved…i.e. chicken/beef/fish etc…haha)!
