Goat cheese stuffed squash blossoms
Hi friends! Happy Monday! Hope your morning is treating you well <3
We had quite a feast last night,
and I have a new love:
goat cheese-stuffed squash blossoms.
When we picked up the squash blossoms at the farmer’s market yesterday,
I had a good idea of what they were destined for, but after a little bit of Google research, here’s what I did with them:
1. Cleaned them off with a moist paper towel and removed the tiny flower bud that was on the inside.
2. Made a semi-homemade style of herbed goat cheese with:
-pre-made herbed goat cheese from AJs
-2 T chopped fresh chives
-1/2 t thyme
-sprinkle of garlic powder
-pinch of nutmeg
-sea sat, pepper
3. Transferred the goat cheese mixture into a plastic baggie and cut off the end. Piped the goat cheese into the squash blossoms and twisted the ends shut.
4. Next, I dipped each one into an egg, and then rolled in brown rice flour (which has such a nice, soft texture)
5. Sautéed in a little olive oil until brown and glorious,
and then sprinkled them with sea salt.
They came out AMAZINGLY- a perfect summer appetizer or side dish. Lightly crunchy on the outside, creamy and savory on the inside. I kept telling the Pilot, in between moaning, that it was like a healthy mozzarella stick 🙂
We enjoyed our feast with artichokes, salad, and the Pilot also had some stuffed chicken.

This morning, I have quite a few to-dos to ninja kick off the list:
-Weights + half cardio
-Go to work to make dinner reservations for tonight (!)
-Write family post
-Make dentist appointment –I miss my Valdosta dentist!- and make Bella a vet appointment
-House stuff
We move in 2 weeks!!!!
Boxes have already started to make an appearance….

Spicy Pineapple and Watermelon-Basil sound fantastic. I also heard of Avocado-Lime popsicles being sold at a farmers market in California. Sounds like summer bliss especially for a pregnant lady. I think these are all based on using a sugar-syrup but they might be fun to play with using honey or agave or stevia.

I have been using Sun Warrior protein for about 2 years now. I love it, but am losing interest in how it overpowers everything you put it in. I use the vanilla flavor and all I taste is Sun Warrior in my smoothies or oatmeal. I do not taste the vanilla, just the flavor of the powder (if that even makes sense). I was wondering if you have any tips or if you feel the same way.

Wow, impressive! I have some squash blossoms in my yard (I’m growing zucchini and summer squash), and I keep thinking I should do something with them!
I’m studying in France right no and our host mom has made ricotta stuffed fried squash blossoms on multiple occasions…holy cow they are divine. Glad you got to try some! I am not sure if it is originally a French dish or not though…
Oh my gosh, those squash blossoms look brilliant! I’ve loved them ever since I had them fried in Italy, but I’ve never had them stuffed before. Think I shall be trying this soon… 🙂
We grow zucchini at the farm where I work for the summer, so I’m hoping to coax my boss into letting me take some blossoms. Stuffing them with goat cheese is brilliant! 😀

I almost picked some squash blossoms off of our squash plants the other day to test out, but I was afraid that would hurt their productivity. This makes me want to chance it 🙂
