Stuffed bell peppers
I got to see the sunrise this morning.
While Iโm not a morning person in the least โI usually wake up around 6:45 or 7, but donโt turn into a human until at least 8- it was surprising to discover that I actually liked waking up so early today. Iโm not going to make it a habit or anything, though ๐ I had the 6:30am weight room shift at work, which Iโve only had once before, and it wasnโt that bad at all.
Maybe it was my supreme inner happiness from finding a new bread love.
A few people have recommended this bread to me, and I might even say that itโs a new favorite. The texture is similar to millet bread (dense and chewy), but the taste is richer, like a hearty whole-wheat or rye. This makes me very happy because I love wheaty, dark breads, and all of the gluten-free varieties Iโve tried have been more like white bread, which Iโve never been a huge fan of.
Egg sandwich with salsa, yogurt and an apple
Leftover tempeh bacon, black rice bread, egg and nutritional yeast
with a side of notes from the conference call.
As tempted as I was to use the bread for last nightโs on-the-go dinner โwe always eat on the way to Tuesday night classes- but decided to step it up a little from a usual sandwich and made stuffed bell peppers instead.
Stuffed Bell Peppers

These were extremely easy to make and SO delicious. The Pilot loved them, too.
First I pre-heated the broiler,
the steamed two cleaned bell peppers (seeds removed), cut-side down in the microwave. 6 minutes in a little bit of water:
Next, I sautรฉed some shallot, onion, and garlic in a little olive oil, added some spicy organic turkey sausage (tempeh or chopped portobello mushrooms would work well, too) and chopped fresh tomatoes.
After about 10 minutes, stirred in some cooked brown rice, oregano, sea salt, and shredded goat gouda.
Stuffed the peppers, topped with more shredded cheese and broiled for 2 minutes:
Easy. Fantastic. A little messy to eat in the car, but we were ok with that. For the Pilot, I just added extra cheese and placed his pepper (whoa! haha) on top of the extra pepper filling.
Tonight is another on-the-go dinner, since we have another class in a little while.

I’ve noticed that you don’t normally have any greek yogurt (such as Chobani) and was wondering what your thoughts were on it. I know it definitely fills me up – but I checked out the ingredients and there’s quite a few things in the Chobani that I’m not too positive about.

there are weird things in my goat’s milk yogurt, too, but i really like it ๐ if you like the chobani and it works for you, i’d say stick with it- they have a plain version, too, which has more natural ingredients
you could always add in your own fresh fruit to the plain version and some honey or stevia to flavor it on your own
You have such pretty handwriting! And your notes look so organized! When I take notes, there are arrows, scratch outs, underlines, and doodles galore!*

Can you recommend where I could find some good HIIT workouts that require no cardio equipment. The only things I have are light hand weights and bands.

Stuffed peppers are such an awesome idea! I will have to make a vegan version for My Love and Baby Sister some time soon. I love getting up early too, it is so calm and peaceful.

Better get used to that sunrise with a baby on the way:) I’m naturally a morning person, but that definitely means I like to hit the hay by 10 p.m.
I’m gluten free too, I’ve yet to find a bread I love. Looking forward to trying that kind!
As a kid I was never a fan of stuffed peppers but I want to give them another try. Maybe I just needed a better ratio of fillings to pepper?

I love black rice bread! I don’t have a gluten sensitivity, but sometimes I still prefer it to regular bread. The richer flavor and dense texture are what get me, too.
The stuffed peppers recipe looks delicious! I’ve made something similar to it before, except it was stuffed inside a tomato. ๐

Oh wow – I just looked at the Zumba article and found out it is a serious calorie burner. Good news since I already love Zumba! Going to a class tonight:)

I couldn’t help but notice “how to stop late night snacking” was a note from your conference call. This has always been my downfall! I do great all day, only to fall prey to night time snacking. I’d love some tips on this topic! Have you covered this in a previous post by chance?
i haven’t- but the tips she gave earlier were pretty much the same for that. if you eat a filling breakfast and lunch, with snacks high in protein and fiber, you won’t be as hungry at night or tempted to snack. if you do get snack-y, try some berries with almonds, cheese, or an egg ๐

I want to believe that I am an on-the-go girl. I love waking up early, before the sun rises and sweat it off by walking. We have something in common girl, glad I arrived in this blog.
