11/4: Meals and Fitness
After a pretty full day at work, and being out and about quite a bit lately, I told the Pilot it would be nice to stay home last night. We hung out just the three of us, grilled chicken and veggies for dinner, and crashed early- it was perfect. Apparently my iPhone didn’t get the message that AZ doesn’t do daylight savings- I woke up feeling so rested and awake at 6am! Turns out, it was 7am. Oops.
Here’s what’s on the tentative plan for food and fitness this week:
Our farm box order:
Beets with greens
Apples (2)- 1 for juicing, one for eating
Carrots
Hatch chile peppers (2)
Kale
Acorn Squash
Cherry Pieย
Meals and Prep:
-Zucchini banana pancakes and some purees for Liv (recipes to come on the Family page)
–Cranberry, salmon, apple salad (it was so good, we have to have it again)
–Sweet and savory squash bowls
–Spicy almond butter kale chipsย
-Grill chicken
-Chop salad veggies

ย Fitness:
-Sunday: OFF
-Monday: Runday
-Tuesday: November Knockout Workout
-Wednesday: Teach Zumba
-Thursday: OFF
-Friday: Active recovery (yoga with friends)
-Saturday: Teach World Beat and Zumba

I’m doing a lot of ‘first’ this week in the kitchen! First time baking acorn squash, sweet potatoes and butternut squash!

Monday: 1 hour of Total body, wednesday aerobics, thurday: essentrics (something new, never tried) and sunday running about 8 kilometers (don’t know in miles?)

I am putting together my meals for this week right now…borrowing ideas from some fitness blogs ^_~…but this week is the start of my Eat at Home Challenge. Which is gonna be interesting!
Good Luck with your Eat at Home Challenge! I did that several months ago and discovered that I was a far better cook than I realized!
I made my first stew yesterday and it turned out delicious! I even added some of the broth to my baby girl’s cereal for supper last night and she gobbled it up.
Gonna try a few of your baby recipes this week for her. She digs combos much more than single foods.
I have been trying to be a bit more active in the kitchen and actually “cook” a bit more this week. (lamest excuse ever but life’s been so busy!) I have really been wanting to do a veggie stir fry with a healthy cream sauce. oh how nice it would be to have a farm box and not need to put in the effort at the grocery store to pick out all my veggies. I should see If I can’t find a place around where I live that does that.
This week I’m going to try making split pea soup for the first time. I’ll post about it, and hopefully it turns out well!
We’ve had Hatch chilis on softshells with a little cheese to tone them down. Roast them first to remove the outer skin. Also put into Chili. Not sure what level of hotness you got but you can probably chop up into your eggs, etc. or use as you would a jalepeno.
Heres a hatch chile recipe for stew. It says pork, but chicken works well too!

I’m making my own almond butter this week. I’ve never made it before. Do you recommend anything to put in it or should I just leave it plain?
Ooooh zucchini banana pancakes sound DIVINE!!! This week marks the start of half marathon training for me! Will be very new for me adding all the running into my workout schedule!
This week I start massage for my ankle area. I was massaging it this weekend and after an hour I moved it around and noticed my range of motion had greatly increased. So I found an Orthopedic Massage Therapist a 30 minute drive from my house and will start seeing her this week. Not sure how many times a week I’ll need to be seen but I really think it will help me get back full ROM again.
I love hatch peppers, we grill them and top chicken or steak.

I’ve been reading ur site for awhile and this is my first time leaving a comment (shame on me I know!) just wanted to let you know that you’re a great role model for myself and a lot of people out there. When I lived in Denver, the Whole Foods out there made Hatchamole instead of plain guacamole. Essentially it was the Hatch Chili Peppers added to their traditional guacamole. SO FREAKIN GOOD, especially with those Xochitl chips. Yum!
Your farm box looks quite impressive! Right now I have been loving kale salads for lunches & making cranberry/pecan/coconut amazeballs. ๐ How about that Alabama game last night? Happy Sunday!

I am a runner (proud to say that I have lost over 80lbs this year) and I am always on the hunt for healthy protein packed meals! I made baked turkey meatballs (ground turkey, feta, egg, italian bread crumbs, shallot, garlic) to eat with marinara and spaghetti squash for dinners this week. However, I’m most excited because after trying to make your perfect protein pancakes a couple of times and having them not turn out, they came out perfectly today! I’m not sure what I did differently this time, but I’m excited to have them again because they were AMAZING!

I am planning my workouts for the week. Planning has really helped me stay on track. I can only do one week at a time but I have it posted and I started a journal for it. I did my first yoga day last week and it was amazing. My back felt so much better. I can’t wait to do it again. ๐ Have a great week!
After a several month hiatus, I’m joining a gym this week. I’m excited to get active again and stronger.
This week I’m making glazed pork tenderloin, citrus-marinated tofu with peppers, and massaged kale salad! At least that’s the plan… but my meals almost never go quite as planned! ๐
Hey, Gina. I wonder if I could play with this to make a Fluffernutter amazeball? My kids love those sammies so I wonder if adding a little fluff could do it. I don’t want to add too much refined sugar, though. Hmmm…

Gina! I absolutely love hatch chiles. I roasted a batch when they were fresh and froze for later use. I love roasting them and putting them in my homemade salsa, tomatillo salsa is my fave but I’m sure any would work. I have also put them in my homemade chicken salad made with Greek yogurt to give it that extra spice it needs!

I plan on taking advantage of the lower cost of apples and making homemade applesauce and a batch of apple crisp!! Nothing says fall like the smell of apples cooking!!!

I tried it once, though with HAbaneros since I can’t get Hatches here. She makes great pizza and this recipe, even with Habaneros, tastes incredible!
I’m not sure if you eat cheese…? But you could probably make the pizza vegan; just be careful not to make it too spicy in that case.
