11/10: Meals and fitness for the week
Good morning! Happy Sunday 🙂 Hope you’ve had an amazing weekend so far. The Pilot is running 20 miles (20! What?!) and Liv and I are enjoying a lazy morning together. We had an impromptu fiesta here at the house last night, so we slept in and it was gloooooorious. I’m not sure what we’ll do today– the farmer’s market and the park are always good options.
On the plan: getting meal ideas and groceries together, and planting these beautiful succulents my nana brought over from my great-grandmother’s house.
Fingers crossed that I don’t kill them.
Here’s what I’m thinking for this week:
Salmon with olive and anchovy tapenade, roasted asparagus (<– I might try my favorite green bean method with the asparagus)
Slow cooker honey garlic chicken, mashed root veggies
Nicoise salads with lemon vinaigrette
BBQ chicken drumsticks, sweet potato fries, kale chips
Plan and prep:
Chop fruits and veggies
Make fruit leather in the dehydrator
Here’s what’s on the tentative fitness plan:
Sunday: OFF. I may go for a short run to see how my knee is feeling, since it looks like it will be 18 years until my MRI referral goes through
Monday: Strength and Yoga
Tuesday: OFF
Wednesday: Dance cardio
Thursday: Shockwave
Friday: OFF
Saturday: Yoga

Is there a recipe for the honey garlic chicken? It sounds great, and I love to use my slow cooker for easy weeknights. I am sure my husband would enjoy it too.

The theme of my meal plan this week (and next) is cheap and easy, since I’m psychologically and financially gearing up for hosting 22 people for Thanksgiving this year!

The succulents are pretty!!
Just curious, have you thought about seeing a physiotherapist for your knee injury? They are also trained to diagnose AND treat injuries like this. They may have you feeling better before you even get your MRI results. If it is the meniscus, they can sometimes heal conservatively with PT treatment.
i’d love to see ANY doctor right now, but am going through the military medical runaround. still waiting for a referral :/
if they give me an option, i’ll definitely look into that!
Nothing better than a free weekend day — I love when my schedule is open enough to just do whatever comes to mind & playing the day by ear!

I tried a new roasted asparagus recipe that I am in love with in case you are keen – olive oil, garlic powder, salt & pepper and sprinkle with parmesan cheese – and roast in the oven for 15 mins yum.
If your meniscus might be torn you should definitely not be going on even a short run- you will definitely regret it in the long run. Take it easy.
I actually prepped a chocolate protein chia pudding with cherries to have after my early morning workout tomorrow. Interested to see how it tastes and hoping it is as good as it looks. 🙂 Such simple ingredients and should be the perfect way to start my busy day.
Our gym now has Shockwave classes, but I didn’t know they were rowing. I thought they were intense circuit workouts? Or does it have both??
circuit workouts that are based on rowing times– you can’t rotate from the current station until everyone has met their distance. SO fun

Your blog is one of, if not my favorite blog. But the way you have handled this knee injury is really starting to turn me off of it. You are fitness instructor and blogger, and I don’t think you are setting a good example. Trying to run on a possible torn meniscus just because you can’t see a doctor soon? And having such a long wait to see the doctor because you didn’t go earlier when you should have? (again, setting a bad example)
Also, I’m not in a military family, but I can imagine how much you are badmouthing the system to be very offensive to those that are… and also to all of the other readers who may not be fortunate enough to have any health care at all.
I still love you and the blog, but I hope you take my comment into account. You seem to be a lot more defensive lately, and that is not how bloggers succeed. Best wishes on your knee.
