Avocado Chicken Salad

Hi! How’s your day going so far? I have a healthy avocado chicken salad for you below!

I’m so happy you liked the Fit Tuesday workout! We haven’t succeeded in making our Mardi Gras cookies (we went to the store for sprinkles and they had every color except purple, yellow and green!), but maybe we’ll find a King Cake before the day is over. Is it weird that I totally love the fact that there’s a plastic baby or trinket inside? Equally creepy, hilarious, and awesome at the same time.

This morning, Livi and I went to storytime at the library after our sprinkles mission, and then to look for a winter coat. Word on the street is that it’s kind of cold in NYC. I might die. (Actually I won’t because it’s my second favorite place in the world, behind Positano, and I’ll just be so stoked to be there.) If you see me walking out and about, chances are that I’ll look like this:

We had smoothies and some Pirate’s Booty (aka cheese-flavored air) at the mall, but were ready for a more hearty snack when we got home.

Avocado chicken salad served on lettuce for a low-carb lunch

I had a crazy hankering for chicken salad, and since we were out of yogurt (my usual chicken salad base), I thought an avocado would be a perfect replacement. It gave the salad a glorious creamy texture + a boost of nutrients. For texture, I also added some sliced grapes, celery, and fresh parsley.

This healthy avocado chicken salad replaces mayo with avocado for a creamy, texture and a boost of nutrients. Serve it on lettuce for a low-carb option.

The chicken was plain grilled chicken that the Pilot made as part of our meal prep:

Chicken salad ingredients

Took less than 10 minutes to put together, and it was absolutely delicious. This hearty and healthy filling would also be wonderful on favorite bread, on chopped greens with dressing, stuffed into a bell pepper or in a wrap. Let me know if you give it a try ๐Ÿ™‚ Veggie friends: I think it would be equally delicious with firm cubed tofu.

A decadent yet healthy twist on the classic chicken salad! Enjoy atop salad greens or as a sandwich or wrap filling.

Ingredients

Scale
  • 1 avocado
  • Juice of 1/2 lemon
  • 1/4 cup milk of choice
  • 1 1/2 cooked chicken breast, cubed
  • 1/2 cup red grapes, sliced
  • 1 scallion, chopped (optional)
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mash the avocado with a fork. Stir in the milk and lemon juice.
  2. Add the chicken, grapes, scallion, parsley and seasonings.
  3. Stir to combine. Taste and adjust flavors as necessary.
  4. Enjoy!

    My lunch was such a conglomeration of everything I had in my refrigerator. Eggs, black beans, broccoli and then a rice cake with jelly and almond butter. I know completely random.

    Yum, I can’t wait to try this twist on a classic! Today I had a salad with leftover roasted veggies and grilled tofu, and topped it with a lemon vinagerette that I whipped up. Totally brought the salad to life! I love using leftovers as a salad topper.

    this is wonderful, love. i love making my chicken salad with avocado. i love adding avocado to anything and everything ๐Ÿ˜€ my lunch was a huge salad made with spinach, avocado, lemon juice, salt and pep, sardines, grape tomatoes, and sliced cucumbers! i love a good cucumber and this was the sweetest cucumber ever. always a good salad add in ๐Ÿ˜€

    I had some King cake on saturday! So good. Really wish I could get to New Orleans in person sometime! Lunch today was a chicken, pesto, and goat cheese wrap. Delicious and quick!

    The traditional mayonaise in chicken salad always freaked me out. I need to just get over this and try it with avocado. Anytime anyone posts about it, it looks delicious! I am going to go for it and give yours a try!!

    I think this would be great with tofu too! I’ve been loving avocados lately, especially with TJs edamame hummus on bread with tomatoes and shredded carrots, or with egg whites on an english muffin with a hashbrown patty ๐Ÿ™‚

    Enjoy NYC!! I am so in love with this city. Though I am happy that we have warmer temps this year here in Switzerland – I am a wimp when it comes to cold temperatures.

    You’re halfway to a glorious curry chicken salad….substitute curry powder and cilantro instead of dill and parsley and add some dried cranberries and sliced almonds for extra texture.

    Love the recipe…will try! Hello from New Orleans Gina! Do u know what happens if u get the piece of king cake with the baby inside? You have to buy the next king cake for everyone! King cakes are so yummy and can be plain or eaten with filling(cream cheese, Bavarian cream,apple,strawberry etc) Not all king cakes are created equal. Some bakeries are so yummy while other larger chains like walmart..well, lets just say…not as good. Have a great day! Love your blog*_*

    I love anything with avocado in it! Great idea for the chicken salad. Lately I have been having a rice bowl for lunch (brown rice, rotisserie chicken, sauteed peppers, jalapeno, laughing cow chipotle cheese, avocado, greek yogurt & salsa). So good!

    It’s supposed to be 51 degrees in NYC on Saturday and stay in the 40s next week so we may be pulling out of this polar vortex!

    I think I’ll give this recipe a go with canned salmon. Do you think that would taste ok??

    My kids devoured our King cake after dinner last night (I have 4 teens, 3 of them had track practice last night!!). Would you believe our cake had no baby inside?!?! So lame! We were so disappointed ๐Ÿ™

    This sounds amazing. I would make it with tofu. How far in advance do you think this can be made? I try to prep my lunches for the week on Sunday, but not sure this would last until Friday… thoughts?

    I’ve always shied away from making chicken salad due to the mayo (though I’m not a dieter so i don’t know what I’m afraid of) and then I saw a paleo recipe for mayo but the thought of eating raw eggs freaked me out a bit. This recipe looks fantastic! Does it get creamy enough with using an avocado? I’m definitely trying it as well as your cashew sauce – thanks!

    I finally got around to making this and it was delicious! I left out the milk because it seemed creamy enough and replaced lemon juice with lime (no idea why..just sounded good). Great recipe, thank you!
