Spicy and sweet pecans
Hiiiiii ๐ How are you? Hope youโve had a lovely day. I enjoyed reading about whether you do a treat night or the moderation thing. Different strokes for different folks and as long you know what works for you, thatโs all that matters ๐
We cleaned the casa today,
and Bella got a bath, too ๐

I had a legendary to-do list today, and managed to ninja-kick through most of it. I also did the legs workout I posted this am- I may or may not be walking like a cowgirl tomorrow ๐ Let me know if any of ya give it a try!
Some recent eats:
Salad beast made with leftovers from last night:
-Frijoles on the bottom, topped with romaine, shrimp fajitas, pico from home and a crumbled goat cheese medallion
Smoothie:
-Water (Iโm out of almond milk! Thank goodness for grocery day tomorrow)
-Vanilla Sun Warrior + 2 t Sun Warrior Super Greens
-1/2 banana
-frozen blueberries
-ice
It was kinda ick from the wayer, but I drank it anyway. Almond milk makes smoothies soooo much more delicious.
B-fast this morning was Breakfast Cookie Dough cereal, heated up for a minute:

This afternoon, the Pilot was getting kinda snacky, and I remembered the pecans my nana gave us from Wilcox.
She handed them to me and said โYou can grind them into nut butter or do whatever you like with them.โ (<— she knows me very well)
When I saw them, I had a mental flashback to Valdosta, when I first started working as a department store manager. I was on my break, walking down one of the mall wings when an unforgettable aroma hit me in the face. It was buttery and sweetโฆ praline pecans. They were giving out free little samples to those who would walk by, and I will never forget how delicious they were. I had a little sample almost everyday that I worked โand supported them by purchasing gifts and the like- and a tip I received from the owner was using egg white to thicken the sugary coating.
So today, I scribbled out a few ingredients and decided to make a sweet and savory version for the Pilot:
Spicy and Sweet Pecans
1. Pre-heat the oven to 325 and grease a cookie sheet with nonstick spray or the Misto.
2. In a bowl, combine 1 egg white, 1 T sugar, and a generous seasoning of sea salt and pepper. To one cup of pecans, drizzle the egg white mixture on top to coat fully โyou may not need to use all of it. Spread the pecans onto a cookie sheet.
3. In another bowl, combine 1 T brown sugar and 1/8 t cayenne. Sprinkle this mixture on top of the pecans, and bake for 7 minutes. Flip and re-season if necessary and bake an additional 7 minutes.
He LOVED them. These would be a fun snack for a March Madness game, or for late-night munchies ๐

Something to talk about: I sent in my design sheet to my new blog wizard today- facelift is officially underway! Iโll let ya know when the new bloggy will be revealed, but please let me know if thereโs anything different youโd like to see or be changed. As of now, pink will still be the theme (it will never leave, haha), new header, more user-friendly, and the pages will be easier to navigate. Should be bueno ๐

I love almonds and pecans that are roasted like that…mmm I can smell it! So good. The spiciness factor really amps it up ๐

I love bake pecans but I have to be really careful when I make them, I’ve burnt them many many times.
Adding banana in your smoothie helps make it creamier, especially when you are out of milk.

I’m afraid to try the leg workout. I did body rock 300 rep workout (with modifications) today and the 1-2-3 one legged half squat lift left my legs shaking for a good 5 minutes.
The pecans look great, but I’m a wuss when it comes to spicy things.

praline pecans from the malls in the south…omg YES they are sooo good. The smell of those nuts wafts thru the mall, drives you crazy, and you just HAVE to have them. Will never forget the smell of “mall nuts” from our time in NC & SC.

And your blog makeover…good luck girl! I know it will turn out fabulously! Since you are already self-hosted WP, there isn’t (hopefully) too much that can go wrong. When I did mine, I was going from Blogger to SH WP and it was a freaking nightmare! The migration, the comments to be transferred, 800 posts, 5000+ pictures, yeah, headache much? Hopefully yours is easy, stressfree for you, and I KNOW it will turn out beautifully ๐
I was seriously just wondering if it was possible to transfer from Blogger to WordPress. Now I know, may not be easy but possible?
Gina, I too want to try your nut recipe….my mom had a roasted pecan recipe that was AMAZING, I’m going to dig it up and see how similar it is.

I have totally made those pecans before with the same recipe pretty much. I also made another with cinnamon & sugar…AMAZING! My hubby goes mad for them!

How would I make a vegan version of the pecans w/o egg whites? Would I need some sort of liquid to replace them?
Corn starch or thinned out brown rice syrup would prob work

LOVE the pecan recipe! I have always used butter and brown sugar in a skillet, but I’m looking forward to trying the egg white version.

The only only only thing I want to see change is…the links at the top of your blog are really hard to navigate! It’s hard to get the dropdown box to stay open and then when it does stay open it’s difficult to get to the tab you want to get to without it closing.
I love your blog just the way it is! The only thing that I would love would be if you could just have everyone’s comments on one page. It would make it so much easier to read if the newest comments would be on the top and the older comments would be on the bottom (like Kath and Jenna’s pages). Love the nuts idea. There are little nut carts all around the city here and walking by them smells basically like heavenly happiness and it always makes me drool.
