Slow cooker shredded Mexican chicken
A glass of wine and jammies = pretty much the best way to cap off a Monday night. Or any night, really.
When are you too old to wear the PINK collection? Actually, donโt answer that.
Some other highlights from the day:
Mom came over in the afternoon to hang out with Livi and told me to go run errands or workout. Since Liv and I had already done a couple of errands in the morning morning, I was excited to work out during the day instead of at night.
The workout was indeed very schweaty and it was nice to go through the entire thing without stopping to write (I test every workout before posting them, minus the ones I created while preg) ๐ Have you tried it yet?
-#smoothieaday: Green-a-colada! I skipped the banana because Iโve been kind of meh about them lately – used 1/2 avocado instead
So refreshing and naturally sweet from the pineapple.
-Visiting my great-grandmother, Liviโs great-great-grandmother (tatarabuela). She said that Livi wanted some frijoles and tortillas- soon sheโll get to experience the joy that is nanaโs cooking.
-My own little Mexi meal with the Pilot at home, which cooked away in the slow cooker for most of the day.
When we went to Kelly and Shooterโs house for Cinco de Mayo, Kelly made some seriously awesome chicken taco meat. I asked her what she did and made my own little version:
-Put two chicken breasts in the slow cooker with 4 garlic cloves (whole) and enough veggie broth to go halfway up the sides of each
-Topped with 1/2 t cumin, 1/2 t oregano, 1/4 t cayenne, sea salt and pepper
-Cooked on high for 4 hours and then removed half the juice, shredded the chicken with a fork
and added 1/2 can each of organic diced tomatoes and black beans
(froze the rest of the tomatoes and saved the rest of the black beans for tomorrowโs lunch salad)
-Adjusted the seasonings as necessary
We enjoyed the taco meat with corn tortillas, greens, salsa, avocado and queso (for the Pilot). I was going to make rice and beans but skipped it- all we really wanted were the tacos anyway.
Iโm not sure what weโre up to today โdefinitely a grocery haul- but Iโm going to try and choreograph a new Zumba song for tomorrow. I did two new ones on Saturday, so Iโm slowly starting to revamp my playlist.. if I donโt have at least one new song each week, I hate all of my music. ๐
Hope youโre having a lovely morning so far <3
See ya later with a Family post!
xoxo
Gina
Todayโs workout jam:
Post your choreo!
k, i need to find a song that i love! any ideas?
I want to do Sigue Gozando Con Zumba:)
i used to do tanya’s choreography from the dvd for that one! love that song ๐
I just got licensed. I think I will do that one….I need more salsa and merengue because most all instructors do reg…..so do a salsa or merengue:)
oh i have a good merengue that i made up a month or so ago: “pegate”
i’ll try to post it for you! <3
I can’t get over how adorable your family is !
That slow cooker chicken looks SO good. And so easy. Love!
mmm! I’ll definitely be trying that chicken!
That is similar to how we make the meat for our tamales during Christmas. Granted, we use a TON of spices and ground red peppers to spice it up enough to make 200+ tamales. We have a big familia ๐ now I want to make the shredded chicken. Crave.
It’s so sweet that Olivia gets to hang out with her great great grandmother. I miss my abuelita very much.
my family has a big tamale party, too – so much fun ๐
“When are you too old to wear the PINK collection? Actually, donโt answer that.”
I had to smile when I read that because I wonder the same thing…often. In college I used to rock PINK when I was going to classed and didn’t want to get dressed, but still look “cute”. I justified wearing PINK in grad school because that’s totally still college, right? And now I’m 26 and I just. can’t. stop. When do I have to let gooooooooo? ๐
i’m fighting it as long as i can, haha
Yeah my almost 30 year old self is rocking some super comfy Pink sweats as we speak…I mean I figure as long as I don’t wear them in public I’m still ok right? I just won’t tell anyone I actually just bought this pair because they were so stinkin’ comfy and they aren’t from back when I was still in college ๐
Holy yum! I am most definitely making that crockpot chicken next time tacos are on the meal plan. ๐
Livi is so precious. Im going to alternate your may workout with my toneitup girls dvd. Im not bikini ready for the beach in 4 1/2 weeks?! Hopefully this will help. Im about to put those tacos on my crockpot right now; thanks for the recipes.
let me know how they turn out!
how challenging is the tone it up dvd? i was thinking about ordering it
The chicken tacos are wonderful! I think you would like this dvd cause you can mix & match workouts iif you want. The pure2raw sisters have been doing it & are supposed to do a review. It motivates me because they are so cute & the hawaiian scenery!
wow that sound so good. I love your chicken recipes. I may just wear VS Pink into my 80’s who knows…
i’ll be right there with you ๐
Thanks for the recipe, I just threw the ingredients in the crockpot! I need to grocery shop today so I’ll go out to get the fixins later.
yay, i hope you love it! it makes the house smell AMAZING
I love making chicken in the crock pot. So easy & yummy.
I have been trying out being vegan for 4 weeks now, and omg those chicken tacos look amazing makes me miss meat wayyyyyy too much.. Must stay strong! lol. Your Great grandma gets to play with livi that’s awesome! You are soooooo lucky to have some much family living around you =)
That is such a sweet picture of Livi with your great grandmother ๐
That chicken looks amazing- def going to try it!
I’m the same way with Zumba… if I don’t have a new song each week I end up hating all my playlists too! Or I try to bring a few from the past back if I dont have time to look at the ZIN dvd’s
Never too old for PINK!!! I worked at VS for 3 years (ending 2 years ago), so I have a ton of stuff from there. I’m 25 and I still wear their t-shirts, tanks, sleep shorts, undies, and sweats all the time. Those shorts you’re wearing are totally cute, and I think they’re definitely still age appropriate!
love that slow cooker recipe- so easy…im all about that hah
We were calling Sunday Mexi-Mama’s Day… since we ate Mexican for lunch and dinner with our mama’s! We didn’t really plan it that way, but I wasn’t sad about it haha. So yummy! Those tacos look delish, I never use our slow cooker… fail!
Pajamas + wine = pure happiness!
for real
Gina I have often wonder that same thing about the pink collection. I am 31.. I don’t know I guess when I start looking old I will have to give it up..LOL
I’m pretty sure I could eat homemade Mexican every night without getting tired of it! Have fun working on your Zumba chorey! I’m putting together a spin class and sometimes they take aaaages to come together but this one hasn’t been so bad!
mmmmmmm…. mexican + wine + pink jammies (in my 27th year i might add) is bliss ๐ no worries. i don’t think i’ll ever give it up!
Woah, how cool that Livi gets to hang out with her great-great-grandmother. That is sooo cute!
Sounds really good!! Jammies and wine sound amazing right now ๐
Aren’t grandma’s awesome. I’m only 39 (yesss, “only”) but already looking forward to my grandmaw days. I shall embrace the gray hair & all. And still gonna be in beast mode with my workouts. BOOM!
I’m 28 and I plan on wearing my Pink PJs for years to come! I think you’re safe ๐
I have a similar chicken taco recipe. I make a lot of it because then I put it on salads, quesadillas, etc. I put a few chicken breasts in the slow cooker with taco seasonings and a jar of chunky salsa and let it go to town. Then when it is nearly done, I break it up with forks. Delish! I also make lentil taco “meat”. I soak brown lentils for a few hours, then drain. Chop an onion and toss into a skillet then add the lentils and some sodium free chicken broth and seasonings and let it simmer. I smush (technical term) the lentils a bit while they cook. I use this in place of meat in tacos. I crave this dish often!
I also wear the pink, I think that as long as it feels comfortable and you select more “grown up” styles and colors you canwear it at any age ๐
I want to make a whole big pot of that chicken and use it for the weeks meals. Yum! I also saw on pinterest the other day that if you put whole cooked chicken breasts in your kitchen add mixer with the mixer that has the 3 triangles and then spin on medium it shreds in seconds. I LOVE simple kitchen tips like that!
Hablas espaรฑol, sรญ? Hablas espaรฑol o inglรฉs a Livi? (sorry if I got some Spanish wrong. I can speak it well but I’m not fluent.)
si entiendo espanol pero usualmente hablo ingles. cuando mi madre y nana estan aqui, siempre usan el espanol con livi.
(I’m switching to English now. I can’t say this in Spanish.) do you plan on raising her bilingual? Did you grow up speaking Spanish? Does the pilot know Spanish?
After 7 years of not using any Spanish, I can still read this:)
Brittany, I will show you how to ask! My grammar sucks but I speak fairly well lol.
“Tiene usted planes de enseรฑar a las dos linguas como el primer a su hija? Cuando usted fue una niรฑa, se habla a Espaรฑol? A su esposo, el se puede habla Espaรฑol?”
More or less…
muy bien! ๐
Thank you! My grammar sucks too but I try.
LOL to the PINK collection!! I recently got my Fox Racing catalog in the mail and asked my husband when I was too old to wear it ๐
“When are you too old to wear the PINK collection? ” <— ha, I've often wondered that myself! ๐
Thanks for sharing the chicken recipe – I've never really used a slow cooker but I think it seems like a useful tool.
Enjoy the rest of your day!
That chicken taco recipe in the slower cooker sounds delicious. Making it tonight!
let me know what you think!
Livi with her great-great-grandmother…wow. That’s amazing! You guys come from a great gene pool and longevity…there are no greats, and no great-great’s in our lineage.
Um, I have 3 pair of VS pink bottoms that I’ve had since college. Love them and rock them all the time. And I’m 30.
Hi! I teach Piloxing (super fun and kick butt combo of Pilates and Boxing) and am always looking for new music! Where do you get yours? Need a certain BPM to keep on pace so itunes is a bit limited. Thanks! and keep the posts coming – love them ๐
Ooh I’m having tacos tonight! I think I’ll steal your filling recipe, except with lentils or beans instead of meat. Yum!
Awesome shortcut to shredding chicken: put the chicken into a stand mixer fitted with the paddle attachment. Put the speed on the lowest setting and watch it closely, as it shreds really quickly. ๐
awesome tip, thank you!
I was just about to comment and suggest this! My hubby and I love chicken salad sandwiches made with shredded chicken and cesar dressing- but I hate shredding chicken! The stand mixer shortcut is FABULOUS. Perfect every time. Just be sure to do it while the chicken is hot.
Did the sweaty May workout x2! Definitely sweaty, definitely awesome.
whoo hoo!
that chicken recipe looks so easy to make and i will definitely try it this weekend.
Those tacos look delish! I’ve never tried avocado in my smoothie… it sounds good!
That photo of Livi with her great great grandma is sooo sweet! I must say miss Livi is quite the fashionista already!
You have posted quite a few slow-cooker recipes that I want to try. I think with meat (as opposed to vegetables) I’m always afraid I won’t cook it enough and/or as soon as I leave the house something will malfunction. That chicken looks so good though and I’ve got some Trader Joe’s organic chicken breasts in the freezer. Maybe I’ll defrost them before the weekend and try it then! So far I have liked every recipe I have tried on this blog.
haha thank you- she dresses better than i do ๐
if you’re scared about doing meat, try browning it in a pan first. that always keeps me from feeling like it will be undercooked. hope you like the tacos if you try them!
That’s a good idea! Thanks.
I’m turning 25 this year and still dress in the junior section. Sometimes the prints are TOO MUCH but then the ladies section is too… old for me and the prints are ugly as well. I can’t decide! Good thing I’m just in workout wear all the time!
Livi is getting more gorgeous by the day! Is that possible?
Love that you have so many generations to learn and share with!
That looks reallllllly good. I may just have to try that. I have a love affair with my crock pot.
Your hair looks great in that smoothie photo!
The photo of Livi and her tatarabuela is so nice. It’s so great for so many generations to be able to meet each other!
That food looks delicious. But on a more serious note…how completely precious that Olivia got to meet her great, great grandmother in her lifetime….truly amazing!
I’ve been craving Mexican food, and this recipe looks so good! I think I’ll make it for my family this week! ๐ Thanks for sharing!
Absolutely amazing that not only is a Great-Great-Grandmother around to play with a beautiful baby, but she looks so great. How lucky – make sure you get lots of pix of the generations together!
definitely. we’re so lucky to have her
You had me at Wildcat. ๐ Thanks for the recipe, [putting a version of it in the crockpot right now!
Made this overnight in the crock pot. SO SO GOOD and it took no time to throw together!!!! Thank you
