I’d like to thank the curry

Hi guys! How’s your day going? I JUST woke up… and feel a thousand times better! :D The pilot had it way worse than I did, so hopefully by tomorrow he’ll be back to semi-normal :)

Last night, I really wanted to make soup for dinner since we were both feeling so sicky. I’m not really a “soup” person. I LOVE vegan chili, but that’s pretty much where it ends. I’d rather chew my food than slurp it from a spoon ;)

Anyway, last night was the first time I’ve made soup in the three years we’ve lived here.

Carrot Curry Soup

Adapted from my brain

I sweat out 1/2 a large onion and 1 bag (16oz) of rough-chopped organic carrots in a little olive oil, on medium-high heat for 7 minutes

To that I added a generous amount of sea salt and pepper, 1 T curry powder, 1/4 t cumin, 1/4 t garam masala, 1/4 t garlic powder, pinch of coriander and stirred well to combine

Then the liquid went in: 2 C organic veggie broth and 1/2 C almond milk

I brought it up to a boil, reduced to simmer, covered and let it simmer for 45 minutes.

Next, I used my handy hand blender that Mara sent me -speaking of Mara, she’s having a goat cheese giveaway if any of ya’ll are interested!- to blend the soup (or you could blend in batches in the blender)

Taste and adjust seasonings as necessary- mine needed more sea salt and a pinch of Stevia

Drizzle with olive oil to serve (I used Garlic Gold)

It was so. good. and made our house smell heavenly :)

I devoured my bowl of soup… the pilot ate about half of his and that’s why I think I feel so much better today ;) Drink your soup, yo.

B-fast was bfast cookie dough cereal:

(Bfast cookie minus the smashed banana, + more milk, sliced banana, cacao nibs, maca and cinnamon)

Yeahhhhhh :D

The plan for the day:

-Make some tea and bfast for the pilot

-WORKOUT! I feel recovered from the fitness conference and well enough to get my sweat on

-Deep mushy feely-feely blog post (in honor of Operation Beautiful’s release) :D

-Train a client

-Dinner with the girls

    I always crave soup when I’m sick, I swear it makes me feel better. That carrot curry soup looks delish, as soon as fall hits I’ll have to give it a try, there’s no way I can eat hot soup when its 100 degrees out :)

    What other veggies do you think could be substituted in this soup? I LOVE curry but really don’t like cooked carrots (love them raw but strangely can’t stand them cooked). Glad you’re feeling better :)

    I AM MAKING THIS RIGHT NOW. Well, when I get off the Internet at least. I am lacking food inspiration and don’t really feel like going to the store so I was trying to think of something I can do with what I have in the fridge, but nothing was coming to me. So yay, thanks!

    Also, I find it interesting that you love smoothies but are not a fan of soup. I always assumed my love of smoothies was because I *love* blended food. But I agree you do have to be in a special kind of mood for soup.

    ahh i’m so glad you’re feeling better and was able to get a good night of sleep! sometimes sleeping it off is the best thing in the world :)
    and awesome curry recipe. since i don’t cook i’m going to have to find someone to make it for me hahaha

    I am the only person I know who’s never made soup in her Vita. Never! I know, crazy, huh. I don’t have a stick/immersion blender either so if I am gonna do it, I think I need to brush up on my Vita soupey skills. haha! Seriously girl that soup looks great and you and me are the same with the no soup making in years…as in at least 5 for me? I was pregnant so there ya go, almost 5 yrs ago!

    Glad you’re feeling better! I love eating spicy stuff when I’m sick, since it’s one of the only ways to taste anything!

    I almost never make soup in the summer, but I love it when it cools off outside! (also makes for easy leftovers!)

    Curry is supposed to be a natural antibiotic. Maybe it helped you! When I get sick, I add both curry and garlic to my food.

    Glad you’re feeling better! That soup looks so freaking good. Do you think it would still be tasty as a chunky style soup and not blended? My boyfriend has texture issues, and a blended version would not be well received (wait a second….that might mean more for me…hmmm)

      yeah– you could even take half of it out, blend the rest and then add back in the half of chunky carrots and onions. that would be delish :)

    Yummy! Yum!

    I didnt have garam masala, which would be a big component of flavor. Im going to look for some online. But it still turned out good, and I served it with pecans and raisins.
