Comfort Blossoms

We had quite a feast last night,

and I have a new love:

goat cheese-stuffed squash blossoms.

When we picked up the squash blossoms at the farmer’s market yesterday,

I had a good idea of what they were destined for, but after a little bit of Google research, here’s what I did with them:

1. Cleaned them off with a moist paper towel and removed the tiny flower bud that was on the inside.

2. Made a semi-homemade style of herbed goat cheese with:

-pre-made herbed goat cheese from AJs

-2 T chopped fresh chives

-1/2 t thyme

-sprinkle of garlic powder

-pinch of nutmeg

-sea sat, pepper

3. Transferred the goat cheese mixture into a plastic baggie and cut off the end. Piped the goat cheese into the squash blossoms and twisted the ends shut.

4. Next, I dipped each one into an egg, and then rolled in brown rice flour (which has such a nice, soft texture)

5. Sautéed in a little olive oil until brown and glorious,

and then sprinkled them with sea salt.

They came out AMAZINGLY- a perfect summer appetizer or side dish. Lightly crunchy on the outside, creamy and savory on the inside. I kept telling the Pilot, in between moaning, that it was like a healthy mozzarella stick :)

We enjoyed our feast with artichokes, salad, and the Pilot also had some stuffed chicken.

This morning, I have quite a few to-dos to ninja kick off the list:

-Weights + half cardio

-Go to work to make dinner reservations for tonight (!)

-Write family post

-Make dentist appointment –I miss my Valdosta dentist!- and make Bella a vet appointment

-House stuff

We move in 2 weeks!!!!

Boxes have already started to make an appearance….

Ugh – I need to move soon too! We’re just renting right now, but our lease is up in August and we are not staying (no a/c…thought I could do a swamp cooler but I was WRONG!!!), so we need to start the hunt. Need to start collecting some boxes of my own!

How do you cook and eat your artichokes? I’ve never bought them fresh, I’ve only bought the hearts for salads and recipes.

That artichoke looks delicious! Any chance we might get instructions or a photo tutorial on cooking an artichoke? That’s one thing I haven’t tried lately. My one attempt ages ago was a flop! :) Thanks for posting! You always keep it fun.

You love moving? I hate it, i always get stressed out and get sick. Talk about anxiety! I would never know what to do with squash blossoms! They sure look tasty though!

Those squash blossoms look so good — I love mozzarella sticks but they are always so greasy and leave me with a stomachache — I need a good replacement!

Wow, those goats cheese squahs blossoms look absolutely incredible! :-D out of this world delicious…I love how you Gina-fy foods and make something “decadent” so healthy! These look delicious! We have a massive pumpkin plant that is taking over the garden (we didn’t plant it, Zak just threw our Halloween pumpkin on top of the garden last fall). Perhaps I should remove a few of the blossoms and try out this recipe!

I’m sure you don’t need a reminder – but be very careful and don’t lift anything too heavy on your move! I’m so excited for you and can’t wait to see how you’ve decorated things. I’m glad you tackled squash blossoms – I’ve seen them done on the food channels, but your version looks fantastic – you could smother a shoe in goat cheese though and I’d eat it, I just love goat cheese. usually they’re stuffed with some kind of cheese, but maybe you could stuff them with sauteed veggies and herbs ?

those are SO interesting.. did they taste sweet? for some reason i am imagining cooked eggplant. i didn’t even know you could eat them!
and now i really really reallyyyy want an artichoke!!! what do you dip them in? i’ve never dipped artichokes in my life. my mother always makes them stuffed, so we just eat the stuffing inside and scrape the leaves. yum.

I love squash blossom empanadas! I despise moving though, good for you for liking it though. This move is probably more exciting for you than any move I have ever made though… so maybe one day I’ll have a super exciting move too!

Gina, I’m sure you have dental insurance… but when I was pregnant I didn’t. Some quick research led me to discover that most med plans cover dental for pregnant women because gum disease may affect the baby. Just a heads up – may be useful for other readers to know as well!

I wish I had a TJ’s in El Paso. Boo.

Wow, I didn’t know squash blossoms could be eaten, much less in such a delicous way! Did you do anything with the baby squash that was originally attached? We are growing squash in our garden, I wonder if I just cut the blossom off the plant if the baby squash would die?

My grandmother used to make squash flowers picked straight from her garden…they were definitely nowhere near healthy!! But oh so good!

I finallyyyyy found squash blossoms at our farmer’s market and have been eyeing them for a couple weeks now… I think it’s time to take the plunge! This method looks fantastic, although I’m not a big goat cheese fan :( I wonder if queso fresco would work instead?

yep or you can use mozzarella, ricotta, cottage cheese or a mixture of cheeses
