Chicken Crust Pizza + WSU Giveaway 2
Yesterday, I was really in the mood for some pizza.
Actually I’m not sure what it’s like to not be in the mood for pizza. The only dilemma: we had no crust ingredients, and Livi was snoozing peacefully upstairs.
I thought of the ground organic chicken we had in the fridge:
and decided to make it into a crust, like those low-carb/Paleo pizzas that have been going around. I’d seen a few versions using cauliflower which didn’t sound appealing to me in the least (it’s right up there with beans in brownies), but chicken? I could get on board with that.
Chicken Crust Pizza
I based the crust for one off this recipe (nixed the cheese, same spices, added 1 T flax) and was really excited to post a pic on Facebook and say “guess what the crust is made of?!”
But no. It looked like a flat chicken burger patty.
Pizza transformation occurred:
topped with BBQ sauce, goat cheese and cilantro
The verdict?
It.was.awesome- a perfect afternoon snack.
A New Workout
In other news, I finally tried out one of the Zuzana workouts from her new DVDs after doing Workout 1. It was only 9 minutes long and got my heart rate SKY HIGH- perfect HIIT session. I will do a full review on her DVDs when I’ve done all of them- hoping to have it up next week sometime. The nice thing is that they’re super short and can be done anywhere, which makes them perfect for quick, intense cardio days.
So far I will say that from what I can tell, they’re exactly like her online workouts, but for the convenience factor (no internet needed!) and price, I think it’s worth it.
This morning I’m off to do the work thing (Wednesday = my Monday) but am ready for some Zuuuuuuuuumba.

Something to talk about: If you could work out with any celebrity trainer, who would you choose? There are so many that I love (Chalene, Zuzana, Bob Harper) and my preferences change all the time, but I’d have to say Shaun T. He would kill me… and he’s very nice to look at 😉

Very interesting! I was a little turned off by the cauliflower pizza crust initially too, but I tried it once and it’s not bad at all. I prefer a traditional doughy crust, but it’s a nice change up every so often.
I want to try that chicken crust! A lot of the dough-less crusts going around lately don’t look so appetizing, but this one actually does! Plus I spend a ton of money on gluten free pizza crusts (pizza is a priority in our house) so I’d love a homemade, healthier version. Thanks for the idea 🙂

That pizza looks amazing! What kind of BBQ sauce did you use? There are so many to choose from I usually just get so overwhelmed and leave with nothing!

I want to work out with Chalene so bad! I heard a rumor that she teaches at the 24 Hour Fitness in irvine and we just moved to Orange County so I’m going to have to research that.
Solo-parenting a teething, jet-lagged 8 month old with a possible ear infection slightly derailed my workouts this week so I’m a few days late jumping on the WSU wagon. Today was my first time doing workout 1 and wowza! That plank and knee tuck is no joke, and squats/bicep curls are my favorite combo move so I was pumped to see that in the circuit! For tempo work, I’m running today. I’m doing a half mary in 2.5 weeks so it will be about 30/40 minutes but I’m doing it tempo-style. (Start humming gangham style now.)

This looks so amazing-thank you for posting:) Just to clarify so that I make this correctly…you used ground chicken instead of processing like the intiial recipe called for? and I noticed there were no eggs in this recipe…is the flax taking its place? Thanks for the help and I’m sorry if these questions are very repetitive. I love your blog 🙂
yep, no eggs! it worked great. (i would have used an egg but we ate the last for bfast)

I had a virtual Personal Training with Shannon Colavecchio and would love to have a face to face training with her. But I definitely wouldn’t mind Shaun T. to coach me. Just not sure how concentrated I would be 🙂
I’ve tried bean brownies once and found them so unappealing that it basically turned me off from any further strange ingredient swap experimentation… so I’m definitely with you on the cauliflower crusts. Chicken sounds like a much more appealing alternative, and way to get creative in a pinch!
Um Jillian Michaels all the way. She is my absolute favorite ever! And after her I’d go with Bob or Dolvett. Gotta keep it in the Biggest Loser fam.

I’m usually not a big pizza fan, but a chicken crust with bbq sauce and goats cheese sounds so ridiculously good right now! Definitely going to try it soon. While I like the idea of a cauliflower crust, this one seems like it would be just a bit more pizza like. Thanks for sharing your invention! 😉

Love this recipe! I’ve been wanting to try a cauliflower crust but I’m so nervous I wouldn’t make it right!
Gina, did you add egg with your flax? I just want to make it with chicken, spices & flax and I think that is what you said you did. Was the flax enough of a binder on its own? I have tried the cauliflower pizza crusts and they are decent, but not as good as the real thing. If you want a really awesome GF Pizza Crust try Namaste brand. Its is so good my entire gluten eating family even like it. Thanks for sharing!
I think the same on Shaun T and that’s all that gets me to do Insanity workouts sometimes. I would pick Chalene. I met her once and loved her energy – she’s a very genuinely nice person! The fact that she dealt with me crying and weird is a bonus. Yeah, don’t ask. I was nervous, okay? 🙂
Chicken crust…. now that is intriguing. Saving that idea for later when I’m craving pizza because cauliflower crust does not sound super great to me either!
I can’t wrap my mind around the chicken crust! I think I’d have to try it… I have been wanting to try the cauli crust as well, but am unsure how it would come out if I left out the cheese recipes usually call for.

I would love to work out with Zuzana. She seems like a really down to earth and sweet person. And I admire how she pulled herself up from a painful life experience and created success for herself. She’s had it tough–but didn’t let that hold her back.

Ooooh this kind of reminds of a healthified version of my beloved CPK BBQ Chicken Pizza…similar flavor profile, with the bbq sauce, cheese, and cilantro. I’m going to make this with some smoked gouda and red onions to make it even more legit. Nom nom nom!
Pizza looks delicious. Cauliflower crusts are really good you should try it. I was hesitate at first to but really good the breadsticks are good to.

I tried cauliflower crust and ground turkey crust pizza before. The cauliflower crust pizza was just ok and the husband was not happy with it at all. Lol The ground turkey pizza was surprisingly really good!
With all due respect, if you were craving pizza….why wouldn’t you just order a pizza? Im all for healthy food, but a ground chicken crust does not sound good, in any universe.
