7/7: Meals and fitness for the week
Hi friends! How’s your July treating ya so far? I’m so happy to hear you liked the circuit!
We’ve been having an amazing holiday weekend. Friday, we took Liv to Golf n’ Stuff for the first time:
played some arcade games,
fed the fish and rode the bumper boats,
went to Frost for gelato, and walked around La Encantada before coming home for dinner.
I’m officially on a kebab kick… if it’s grilled on a stick, I want it for every meal. They’re delicious, healthy, I can make them in advance, and the Pilot does the actual cooking process. Wins all around 😉
We tried salmon kebabs for the first time, and they were a huge hit! Since the fish cooks so quickly, the veggies were still very crisp -I prefer them soft and borderline charbroiled from the grill- but salmon was a fun way to change things up.
Saturday was a work day for me, and today, we’re enjoying the morning together being lazy. Just what Sundays were meant for 🙂

(i use an iron skillet) sautee kale in some broth with onions (or spinach is quicker), after a few minutes add tomatoes and any peppers.
whip and season 4 egg whites.
olive oil on the part of the pan where you will pour the egg, scoot the veg over & pour the egg in then stir together (i only use 1/2 the pan). season on top with fresh herbs!
pop in a 325 oven for 9 minutes 🙂
so delicious~ i had it with an english muffin, orange, some milk. and i LOVE beans with it 🙂 with salsa & hot sauce!

Tip: separate the meat/fish from the vegetables by making all vegetable skewers and all meat/fish skewers. That way, the fish cooks evenly and the vegetables are able to get soft as long.
Mmmmm…the kabobs look delicious! And I’ve got to try out the thin mint fudge!

My workout schedule is all yoga all the time, as I’m in Costa Rica doing my yoga teacher training. Since it’s the jungle, and hot and humid- my food is whatever I can make that’s quick, easy, and doesn’t result in heating up my entire house.
Today I’m prepping a bunch of rice and beans, and will likely be supplementing that with salads and fresh fruits and veges for a bunch of meals. Besides that- lots of salads, wraps and sandwiches. As well as smoothies and fresh fruit juices.

Ahhh, I miss grilling 🙂 Lucky you that you don’t have to stand over the grill! I love that watermelon season guarantees almost every watermelon you eat will be absurdly good.
i’m going to be doing some grilling this week too! i think i’ll do something with shrimp this week.

I plan on roasting a lot of vegetables this week. I’m going out of town for work so my workouts will have to work around what kind of gym my hotel has!
Great idea with the salmon kabobs. I agree 100% with your BBQ philosophy- prep now, husband grill later. We barbecue 2-3 times a week (even if it’s cooler weather). It makes dinners so much easier/happier! 🙂

Cute little Livvy! Looks like you guys had an awesome time! I plan on going to the gym to take a couple of classes and do some weights and cardio, or get in some treadmill workouts at home or a yoga video or 2. Trying to do something 3-5 days a week. I haven’t been making many recipes lately, but just A LOT of grilled veggies! I haven’t done kebabs yet this year, though, but your pics put me in the mood 😉 I have been roasting zucchini, peppers, and onions for the past month over and over, though, and just do not tire of that combo! so delicious and so simple 🙂

My boyfriend and I made the most amazing shrimp recipe tonight! We modified a shrimp scampi recipe we found online. 1.5 lbs shrimp, 1/4c red wine, 1tbsp coconut oil, 2tsp garlic, 2tsp lemon juice, pepper to taste. Throw it all together in a skillet and cook the shrimp til its done, then throw it over quinoa and some steamed veggies. So easy and sooooo good!

I have a great and easy salad in my post today (perfect for the hot weather we are having now!) I also make Turkey meatloaf every few weeks. I sometimes work late so I make it on a Sunday so my husband can eat it a few nights a week if I am working late.
I love week planning..I do it every week…4-6 workouts par week.

Those kabobs look so good! We don’t have a grill and I find that they don’t cook well on a grill pan. I just got a whole bunch of fresh mint from my mom and I’m trying to find some delicious mint recipes!

I’m going to make your quinoa and lentil salad, looks awesome! It’s funny that you used the Trader Joe’s lentils in this recipe. I just tweeted the other day that I LOVE TJ’s ready to eat lentils. I hope they never discontinue them!! I have been on a lemon vinigarette kick lately. Lemon infused olive oil, white balsamic, a spalsh orange champaign vinegar, salt and pepper and the secret ingrediant is lemon thyme!!! Fabulocity! On salads, chicken and probably would be good on white fish too!

i’ve been lovin’ me some watermelon lately. made a refreshing mint feta watermelon salad – yum!
Those kebabs are making me hungry! They look amazing. Anything on a stick is better in my opinion.
This week has 21 miles on the agenda on my half-marathon training plan. I plan to do some cross training with kayaking. I’ve fallen in love that it this summer.
Food prep this week in my house included Healthy Cocoa Oat Breakfast Muffins. They taste good at breakfast, but I love eating one or two as a snack with nut butter spread on top. My favorite is Barney Butter’s crunchy almond butter.
