Low-carb zucchini pizza
I’m always messing around with pizza. I think it’s a safe bet because even bad pizza is pretty freaking amazing, so I feel more comfortable toying around with different flavor profiles and crust ideas. One of my all-time faves is this Three Great As pizza, and we’ve also been enjoying lots of chicken crust pizza. I wanted to create a new fun crust option that would be gluten-free and Paleo-friendly, but meatless for my veggie friends. Zucchini pizza crust fit that bill.
We are swimming in zucchini–I buy a huge pack of the organic zucchinis since it’s a great dinner component and fun in chip form–and am always looking for ways to switch it up. Often, I’ll use zucchini as “noodles” for pasta, and already know that zucchini and marinara are a match made in heaven.
It had to happen.
The base for the pizza: zucchini fritters.
Shredded zucchini,
an egg,
some flax and seasonings,
all pan-fried to be topped accordingly.
Lots of cheese and olives for the little lady, veggies and goat cheese for myself ๐
Here’s the recipe if you want to make some ahead to be topped as pizza, or fill with sandwich fillings as a lunchtime feast. The possibilities are endless! ๐
Zucchini Crust Pizza
- Yield: 2 1x
Ingredients
- 1 large zucchini, finely grated
- 1/2 cup almond meal
- 1 heaping tablespoon flax meal
- 1 egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon sea salt
- 1/8 teaspoon pepper
- A little butter or olive oil
- Pizza toppings of choice
Instructions
- Set shredded zucchini in a bowl with a sprinkle of sea salt, let set while you prepare the rest of the ingredients and strain any excess water
- Heat a skillet on medium-low while you mix all ingredients (minus the pizza toppings, of course) in a large bowl.
- Add a little butter or oil to the pan, and half of the batter to make a large pancake-type shape.
- Cook for 3 minutes on each side, or until the batter is browned and cooked thoroughly.
- Top with pizza toppings of choice, or use as bread for a sandwich!

Yum! I do love zucchini pasta – never thought of making pizza out of it. Though I bet I would also like the fritters just as they are, dipped in some salsa ๐

I NEED to make this. We have a ton of Zucchini because we get it in our CSA delivery each week. You’re absolutely right that its an awesome thing to have because you can do so much with it!
i’ve done this with spinach & it’s really delish. i bet the zucchini was yummy too!
Oh, this reminds me of the cauliflower pizzas – but I prefer zucchini so I bet this is even better.

Sounds pretty good. I tried to make zucchini fritters last summer and failed so I want to try again. Any suggestions for substitutions for almond meal and flax???

Wow! That looks so good! I definitely want to try this. How do you come up with all these recipes? I made a BBQ chicken pizza last night for dinner. Overall it was a pretty healthy take on pizza and was good, although next time I will probably not choose spicy bbq sauce!

Ooh that looks good. I love homemade pizza. We buy the crust pre-made at Trader Joe’s and my husband usually tops it with all kinds of goodies. A personal favorite was grilled pizza with steak & goat cheese.
This looks wonderful! I love zucchini, so I am excited to try this out. We usually make personal pizzas on garlic Naan, which you can buy in bags of two at the store by the flatbreads and rolls. It is the perfect size for a personal pizza and cooks up really well in the oven or on the grill. It doesn’t hurt that we LOAD it up with toppings either ๐

I just made zucchini + corn veggie burgers and am now craving them as mini pizzas after seeing this. This looks incredible and I love how fluffy the crust looks.

My Mom used to make zucchini fritters when I was a kid. We used to dip them in marinara sauce, so the idea of pizza is stellar.
They are also good dipped in a good homemade tzadziki sauce.

This looks amazeballs! I’m a vegan so will skip the feta, and might try yellow squash instead of zucchini. My garden just exploded with squash, so I gotta use them up. ๐
this is a bit ironic because i had THE BEST PIZZA OF MY LIFE today—- in ITALY!!!
we went to the Pizzarium, and in italian pizza shops you pay by weight when they cut a slice. i cant have cheese & they had tons of options! i had 3:
roasted yellow peppers with tomato sauce & basil
organic tomatoes
some carmelized fennel with (some local) greens & pine nuts
each slice was the size of about 2-3 squares and was AHMAZING! first time ive had a non-whole grain thing in a long time but the crust was so fluffed & tasty! glad the few times i do eat pizza, its delicious ๐
Ummm… yum! I love the idea of using zucchini! I’ve done cauliflower and just almond meal with flaxseed meal but zucchini is one of my favorite veggies! Definitely pinning for future use ๐

The best pizza I ever had was in Halifax – it had figs, roasted chicken, mozzarella, caramelized onions, and dandelion greens on it. So good!

Made these last night. Didn’t stay together for me – but I didn’t do a good job of straining the water out. It made an excellent zucchini hash, though! Phenomenal flavors.

I tried cauliflower pizza crust and just about died of pain (cauliflower + IBS = no bueno) even though it tasted amazing – and as someone who is obsessed with zucchini, I’m sure I’ll love this!
