3/25: Meals and Fitness for the Week

Hey hey! Happy Sunday! What’s going on this lovely morning? We’re making banana pancakes here at home, taking turns at the gym, and cleaning up around the house before the usual Sunday errands. All the regular happenings around here.

This weekend started off with a delicious note – dinner at gas station tacos – but took a bit of a dive. During the day, I had my second-ever photofacial laser treatment and was pretty pumped to blog about it. (I got good results last time and it worked well at getting rid of some of my freckles and sun damaged spots. In the pic below, you can see how the damaged spots turn brown like coffee grounds. Then within a week or so, they flake off.)

During the procedure, he said he could use a different filter and laser off the cherry angiomas I have on my cheek and neck (they’re like red freckles.) I told him to go for it, and one of them hasn’t exactly healed like the rest. I think my skin is burned? I have a blister on my neck, so I get to have that checked out tomorrow. It kind of looks like I have a hickey which is all kinds of appropriate.

And then, poor Miss P came down with double ear infections. The Pilot stayed in town to take her to urgent care, while Liv and I took a little roadtrip to Hawkinsville for her Odyssey of the Mind competition. Livi crushed her performance, and thankfully, P was doing a lot better by the time we got back into town. 

I’m ready for a low-key day around here and getting back into the routine.

My fitness routine was a bit scrambled there at the end, but I’m going to hit legs and HIIT today, then back into the teaching groove tomorrow. I’m still testing out lots of new workouts, which gives me something to look forward to when I get to the gym. It’s fun to have something new to try and not have to think about what I’m going to do when I walk in the gym doors.

Here’s what the tentative plan looks like:

Sunday: Legs + HIIT (similar workout)

Monday: Teach Zumba

Tuesday: Upper body (pull muscles) + easy steady state

Wednesday: Teach barre + teach Zumba 

Thursday: OFF

Friday: Legs (similar) and easy cardio

Saturday: Upper body (push muscles), no cardio

Here’s what the meal plan is looking like:

Breakfasts:

I’ve been really into oatless oatmeal lately. Don’t get me wrong, I still love my regular oats, but this has been a fun way to switch things up and get a protein-packed meal first thing in the morning.

Here’s the recipe I’ve been using:

Oatless oatmeal

In a small saucepan, add:

1 cup almond milk

2 egg whites

1/4 cup almond meal or almond flour

1/2 banana, mashed

cinnamon

and stir over medium to medium-high heat, stiffly constantly until fluffy and cooked through

Remove from heat and top with cinnamon and honey, almond butter, fruit, maple syrup, whatever you like. 

I’ll probably also make another flavor version of this classic fave!

Lunch:

Chopped salads or Fab Four smoothies

Dinner:

For dinner last week, I thought we were getting Sunbasket, but turns out I skipped it last week! We’re having it this week but I’m thinking about switching back to Blue Apron for a couple of weeks to change things up

Sunday: Homemade chipotle bowls

Monday: Spanish chicken and cauliflower rice

Tuesday: Sunbasket turkey meatballs and penne

Wednesday: Sunbasket miso-glazed tempeh salad

Thursday: Out

Friday: Clean out the fridge night (pro mac n’ cheese with roasted veggies)

Saturday: Roadtrip!

On a super random note: have you tried any type of laser treatment? My last one was a year ago, and I’ll probably wait just as long if I ever do it again. It kind of reminded me of the great eyelash extension disaster.

    Oatless oatmeal— super intriguing and creative! Going to try that out one time. I’d love to try Zumba- always looks so fun!

    I have had laser treatments with mixed results. I get regular LED microderm facials using organic products that I think really help my skin.

    I have never. Had a laser but plan to get rid of some visible blood vessels- vascular laser but would like to do Laser Genesis and then one for some acne indentation scarring. What was your laser called?

      it was BBL on my face but he did something different on the angiomas. i’m going to call and ask tomorrow!
      let me know if you do your blood vessels. i have one weird one poking out in my calf that i’d love to zap hahah

    I’m intrigued by the oatless oats…what consistency is the final result? Similar to regular oats?

    I have questions about the laser – are you feeling meh about it because of the blister (ugh that sucks, sorry), or because the results weren’t great? I’ve been considering doing a laser vs. chemical peel and I’ve heard mixed reviews about both. Chemical peels kind of freak me out, but I have friends who got fantastic results from them, and lasers are less terrifying to me, but the results seem less consistent. For now I’m just using the Juice Beauty green apple peel every night, haha.

      the results were pretty good. i didn’t have a ton of age spots, but my skin color is definitely more even. chemical peels scare me, too. i’ve always thought lasers were NBD until i got burned by one. :/ apparently it’s uncommon though

    I have a lot of freckles, I wanted to do that one, but they told me if you ever go in the sun again the spots just come back even darker. I thought the odds are pretty high that I would be in the sun at some point over the rest of my life! So I got the laser treatment that goes for red areas, broken capillaries, etc. two weeks ago, she told me would take about two weeks to notice any difference, but it looks exactly the same! So I’m kind of upset that I spent $200 on nothing. I’m wondering if I should call and kind of complain or ask about it, but they’ll probably just say it takes several treatments. I hope your treatment/burned area resolves quickly!

      the key is to just wear really good sunscreen on your face and it helps to keep it from coming back. that’s a bummer you didn’t get the results you were looking for. i’d definitely call and ask!

    Hey Gina! Definitely going to try the oatless oatmeal. I buy whole eggs. Have you ever tried using two whole eggs as opposed to egg whites? Just curious… thanks for the awesome breakfast idea

      i’ve done one egg with one egg white before and it worked out really well. i think 2 eggs would be a little too egg-y, but try it! i hope you love it
