Under the sea

Hey yaโ€™ll! *in my best Paula Deen voice* Hope your day is going swimmingly ๐Ÿ™‚

I canโ€™t even tell you how great it felt to take a day off from the gym this morning and sleep a little. I did have to wake up in 45 minute intervals to rotate my laundry โ€“the woes of hotel living- but it was a much-needed little rest. Plus, after last nightโ€™s wine consumption Iโ€™m not sure the gym would have felt very bueno this morning.

I didnโ€™t have bfast before school, because I knew that we were going to eat the yogurt we put into the dehydrator yesterday.

Letโ€™s just say it developed a lovely crust and looked less than appealing.

But underneath the crusty surface was a plethora of creamy, thick, tangy raw Greek-style yogurt

I plopped about 1/4 of it into a small bowl, topped it with a chopped peach and some sprouted buckwheat and goji berry granola

It was crazy good.

We spent the morning doing some prep work for the cafe โ€“Michelle and I made raw pizza crusts for them- and then we got to our oceany lunch.

The tofu we made yesterday came out of the fridge:

And we got various types of seaweeds for our seaweed salad (arame, kelp, nori, kombu, dulse)

Then we made a dressing for the salad out of orange zest and juice, lime zest and juice, sesame oil, and coriander (I may or may not have snuck a gigantic heap of cayenne into mine as well)

Everyone else made a raw miso soup to go with their meal, but I just wasnโ€™t feeling it. Not to be a princess or anything, but straight-up miso freaks me out a little, and so did the seaweed soaking liquid that was used for the โ€œfish stockโ€. I attempted making some and realized that my Vitamix hadnโ€™t totally been cleanedโ€”there were pink bits floating around- so I took it as a sign from above to not have any miso soup ๐Ÿ˜‰

So I plated out my tofu plain instead of soup-style, with a beautiful seaweed salad, our sauerkraut and dehydrated carrots.

Swanky wanky!

So delicious. Itโ€™s considered a macrobiotic meal, which is something we talked about in class yesterday.

Iโ€™ve always been a huge fan of sea vegetables and it was so fascinating to learn about the many benefits they provide:

  • Theyโ€™re highly bioavailable, which means that their nutrients are almost immediately absorbed into the bloodstream
  • Theyโ€™re great sources of iodine, magnesium, vitamin K, calcium, folate, and tryptophan (which can help us to sleep better)
  • The nutrients in sea vegetables can prevent birth defects and cardiovascular disease
  • The magnesium can help prevent headaches and reduce asthma symptoms
  • Reduce the risk of high blood pressure and heart attack
  • Reduce the bodyโ€™s inflammatory response
  • Provide relief from menopausal symptoms

Pretty amazing, ehh?? You all know how much I love my dulse- and this whole time, itโ€™s been doing great things for me! Have you had your sea vegetables today?? ๐Ÿ˜‰

Well itโ€™s work time over hereโ€ฆ itโ€™s my first night doing pastries/desserts by myself! CRAZY. Wish me luck ๐Ÿ˜€

    I get my daily dose of sea vegetables (DULSE DAILY!!), but it doesn’t look as beautifully presented as yours!!

    Good luck tonight! ๐Ÿ˜€ I am drooling over the seaweed salad, one of my favorite foods ever!

    I was wondering how the dry brushing was going? I’ve been thinking about trying it in hopes that it’ll make my slightly loose post-weight loss skin look a little better. Even if the whole detox thing is a bunch of crap, I’m thinking the exfoliation is probably worth the cost of a cheap brush.

      in 100% honesty, i haven’t tried it yet! i keep saying i will, and then forget. so embarrassing haha. michelle and megan swear by it, though, and i’ll definitely let you guys know what i think after i actually do it!

    The Greek yogurt looks great! I love Greek yogurt…I’ve never put peaches on me…I’ll have to give it a shot!!
    I was wondering how your body feels since you’re not doing as much exercise as you normally do? Do you have more/less energy, feel any different? Just curious!

      hey melissa,
      i’ve felt great since i’ve been eating so well. the thing is, i’m actually burning about the same amount of calories i did when i was teaching. i workout 1-1.5 hrs a day and i’m on my feet at school and the restaurant ALL DAY! so all i all, i feel about the same ๐Ÿ˜€

    I’ve had my dulse…LOVE it on salad!

    I’d love to try kelp noodles, too. Do you know where to buy them? Are they refrigerated or dry packaged (like dulse)?

      they’re dry packaged like dulse ๐Ÿ˜€ we just soaked everything before we used it

    I might be crazy but I think yogurt “crust” would be kind of tasty hahah. The actual yogurt underneath definitely looks more appealing though.

    The only sea vegetable I’ve tried is wakame from sushi restaurant seaweed salad. I think I need to expand on that palate though cause you sure can’t beat those benefits!

    Your breakfast looks amazing! It must be fun to be able to eat all the stuff you’ve worked so hard to put together.
    Dehydrator question: What do things like your dehydrated carrots taste like? Are they crunchy or more like just dried out? I don’t have a lot of experience with dehydrated foods so I am curious about the consistency. Thanks!

    The yogurt looks PRIMO! Way to go girl, and good luck w/ pastries by yourself tonite! Thank you for admitting, too, that straight up miso and the soaking water from the sea vegetables wasnt your thang. I was wondering how that works…after a month, there’s gotta be a food that’s not someone’s fave, not everyone likes everything under the sun, so be a princess, and know when to say….ummm, no thanks ๐Ÿ™‚

      they don’t have a cookbook for sale for the restaurant yet, but that would be a great idea!
      i’m sure you can find many similar recipes online

    Hey Gina! Just curious, when you make stuff like raw yogurt and tofu, is that actually yogurt (like, dairy), just processed in a different way? Is it the real thing? Have a good time at work/school tomorrow!

      hey girl-
      it’s not dairy at all.. both are made out of nuts and a probiotic powder and then fermented. pretty cool, huh?!

    Was just going to ask you what the base of the yogurt was, but you already answered that in a comment previously! Very cool–would love to taste a nut-based yogurt (or even tofu). It’s definitely the number one thing I give into, even when I’m trying to avoid dairy! I think I’m going to try homemade coconut milk kefir soon though–I’m very intrigued by fermentation, as it’s so healthy and there are plenty of vegan ways to get it if you just know where to look (coughFitnessista.comcough).
