Sometimes, I even add it to the food ๐
Hey guys! How are ya?? Iโm so excited to finally be able to post right now- Iโve spent the last hour looking for my camera to finally find it in with the dog leashes. A little scatterbrained over here!
I have a TON of pics to share, so here we goโฆ
Yesterdayโs snaky:
(Ezekiel with almond butter, mequite and cinnamonโฆ my new flavor trilogy)
Lonchi was a kale salad beast (with grape tomatoes, sweet onion, nama shoyu, lime juice, agave, cayenne and half a mashed avocado)
I cleaned around the casa, did a 20 minute yoga podcast (I miss taking REAL classes.. itโs much easier to slack off in the comfort of my own home), and then the pilot and I started on dinner.
We grilled up some veggie packs:
(Summer squash, campari tomatoes, sweet onion, garlic, sea salt, pepper, evoo, rosemary and oregano)
I busted out the organic cab ๐
I just love cooking with a glass of wine. I feel like the meals I make come out better (and know thatโs purely psychological), and it just makes the whole shebang so leisurely and relaxing. For our final meal prep in school, Megan and I were practically begging our teach to let us have some vino while we (un)cooked. We had to wait until after it was all over ๐
We also had grilled sweet potatoes, corn and organic filet mignon for the pilot. (Iโm not a corn fan. At all)

I also roasted some asparagus with lemon, garlic, evoo, sea salt and pepper
And covered my sweet potato with goat jack cheese, cayenne and scallions.
This, my friends, is why I am not a vegan. I <3 goat cheese.

Iโve been meaning to tell you all that Iโm going to Cali next week for a POM event. Iโm a little beyond stoked to go back to the west coast, learn from the POM peeps and hang out with some amazing bloggies :D I found out I was going quite awhile ago (while I was in Tucson) and forgot to tell yaโll! Slacker ๐
Well Iโm off to chill with the pilot (heโs off today! yeahhhhhh!), do some work on a new website, and going to the gym with Jeni.

Your goat cheese covered sweet potato looks divine! I really like topping my sweet potato with savory stuff (like chili and cheese) instead of sugary stuff because I love the flavor contrast!

At what temperature and for how long do you grill the veggies? They look so good!!
I can never get them to be crispy when I grill them in a foil.
honestly neha, i have no idea. i just put the veggies in the foil packs and the pilot does the rest. i have no clue how to grill! i’m sorry

What a great din din. Milk in my coffee is what prevents me from going vegan!haha- the subs just don’t seem to do it for me (although I haven’t given them ALL a chance). Love veggie packets. Have so much fun in cali…I am so JEALOUS!

Raw kale is bad for me. I cannot digest it very well. My SO has the exact same problem. It doesn’t give you any problems Gena?

that’s a good reason for why i couldn’t go vegan either.. goat cheese is sooo delicious! especially on a bed of lettuce toasted yum! you and the pilot are too cute for words… love your dinners together adorable

I think roasted asparagus is my favorite veggie at the moment. SO GOOD!
I just got super happy cuz I eat with a baby fork too! Everyone always makes fun of me, but it helps me to slow down when I eat. Those sweet taters look great too!!
I had 1/2 sweet potato with black beans and feta for lunch today…. feta (and greek yogurt) are why I could never give up dairy, even though I wish I could.
Your grilled veggies look delicious! Unfortunately I don’t have a grill b/c I live in NYC so do you think I could do that (wrap in tin foil instead of putting them on a tray) in the oven? How long/temperature do you recommend?
Goat cheese is so so wonderful. Everytime I read your blog I have to remind myself to stock up on it again. I’ve never tried it on sweet potatoes, but it looks great! ๐
Yum! Everything looks delicious and healthy – love it. Sweet potatoes are one of my favorites and I love them because they remind me of Fall.
