Hi friends! Hope you’re having a great day. Today I have a refreshing green juice recipe for you! I’m loving all of the Winter Shape Up check-ins!! This morning was spent doing taxes with Sasha – we want to have everything GTG before we move – and a nice walk with Livi and Bell around the neighborhood. (Caro was still sleeping as per usual.)

A new favorite addition: mint!

Despite Tucson’s extremely mild winter, I’ve still managed to kill almost all of the plants in our yard. This is sad, but once we found out we were moving, I officially quit my already half-hearted efforts to keep plants alive. I want to bring our hibiscus with us, along with the succulents from my nana’s house, but other than that, the pots will just be cleaned out to start again in the spring.

The only plants that have survived are the ones nana has watered when she stops by:

We went to visit nana and Tata this weekend, and nana’s succulent plants are OVERFLOWING. They would make any fashion blogger shriek with delight haha. The funny thing is that you pretty much have to work to kill a cactus, but believe me, I’m pretty good at it ๐Ÿ˜‰

Anyway, our mint is still on its last leg, and I’m thankful because it’s been a delicious smoothie and juice addition. I’ve always put sprigs in my water bottle, and just recently started to experiment with other uses. It adds a refreshing pop! ย to any beverage and a nutrient boost. Mint is high in Vitamin A, which supports the immune system and promotes healthy skin.

This juice also includes kiwi, which is one of my favorite ways to get extra Vitamin C, especially during the cold and “ick” season.

I always feel weird posting juice recipes, because there are 14374892798 different ones out there. (And let’s be real, most of them are a hodge podge of what we have in the fridge.) But, this is one of my current favorite combos. It’s extremely light, hydrating, and I feel so energized after drinking it. I can’t help but wonder if washing it down with my PM coffee hinders any effects, though ๐Ÿ˜‰

For this one, I leave the kiwi skins ON <— something I would never usually consume – the little pricklies freak me out.ย  This way I can’t taste or feel them, and the skin gives an extra boost of nutrients.

    I’m sure once it’s juiced, the kiwi skin isn’t overly apparent? Haha, I wouldn’t be eating one on its own anytime soon ๐Ÿ˜‰

    My favourite smoothie combo lately has also included mint: frozen strawberries + coconut water + vanilla rice protein + mint. I’ve had to play around the with mint a bit though…it can either give it that perfect, refreshing taste or one leaf too many, and it can be overpowering!

    I need a juicer!

    I will have to give this juice combo a try! I’m always looking for new ones! My landlord has a mint bush in the front and I always pick from it, so this is perfect!

    And yes to skins on for kiwis. I mean, sometimes I don’t eat them, but they are awesome to help satisfy my “something crunchy” craving.

    Kiwi skin = NAY! I’m sorry, I typically don’t prefer leathery FUR in my diet.

    In other news, here’s a fun fact about mint! A master bartender (who makes a mean mojito) once told me the majority of mint’s flavor is in the stem!! Go ahead and give it a sniff to compare… I know you wanna.

    My current favorite smoothie recipe is green apple, spinach, cucumber, lemon, ginger and almond milk. Just enough to get an extra serving of veggies in and hold me over until breakfast!

    Kiwis with skin are the best! It is the only way to eat them ๐Ÿ˜‰ same with Mango skin!

    OMG, I would never think to eat kiwi skin. I didn’t even know you could! I do love {peeled} kiwis though. We go through several a week in this house!

    Mmm this sounds delicious Gina! I’ll admit my Vitamix has been getting more action than my juicer these days, but when I do juice I love a mix of dark greens, cucumber, apple, lemon juice and a great big hunk of ginger! A fairly classic combo but it’s SO good!

    Do you ever juice with your VitaMix?? The kiwis are a great idea! I just ordered one, and hope it can replace my juicer that just died. But, a little unsure how it handles greens and such…

    I always eat kiwi skins! I didn’t realize that was even an option until I read somewhere how incredibly nutrient-dense they are. I wasn’t even sure that was true, but it doesn’t take much convincing for me to NOT have to peel something. And kiwis are the worst to peel. Period. ๐Ÿ™‚

    I like this juice combo! I would never eat the skin straight up but in a juice it would probably be fine! My favorite combo without fail is apple, carrot & beet!

    I love kiwi skin and it has so many great things for you! Kiwi’s are a great source of potassium which is always good in my book!

    That juice sounds great!!! You probably can leave the skin on the kiwis. The only fruit that I’ve found I have to take the skin off when I juice is oranges. I didn’t do it once and that juice was bitter-central!

    Saw a Vita Mix demonstration Saturday and he said, “if the skin is thin, toss it in; if it’s thick you could be sick” I would leave the skin on a kiwi!

    The chin strap on Liv’s helmet is too loose. The strap should be snug against her chin. If the helmet doesn’t fit properly she isn’t going to get the proper protection.

      That was the first thing I noticed! If helmets aren’t on properly they won’t protect the noggin! I used to fit them at safety fairs and I now compulsively want to fix kids I see on the street. I highly recommend getting fitted at an event-they can help you learn what it should be doing to fit properly so that you can adjust as she grows!

    I have never thought to add mint to my juice or smoothie! I’ll have to give it a try. I have been loving blueberry + strawberry + spinach + chia seeds + coconut oil smoothies lately. Very easy but delicious!

    I’m a believer in the kiwi skin!! I chomp through the whole thing. It’s so much easier and the texture is a nice contrast!

    I’ve never actually eaten kiwi skin even though I know that you can. It just seems to textured and weird. Kiwi berries are fun, though, because they’re small and don’t have any fuzzy skin. Have you tried those? I feel like maybe you’ve mentioned them before. I’ve bought them at Trader Joe’s and also received them in a CSA box.

    I have always eaten kiwi skin. The prickles don’t bother me and if you eat it like an apple aren’t noticeable. In fact to me the skins taste almost like apples. Eating them like this does have downsides though. You don’t realize they are rotten inside until it to late :s

    I honestly cannot remember the last time I had a kiwi. They looks so delicious in your picture, I will definitely be grabbing a few next time I am at the store!

    I kill plants too. I’m okay when it’s warm and summer like, but as soon as fall sets in, they’re goners. I’m still addicted to my chocolate green smoothie – banana, cherries, spinach or kale, almond milk, and a spoonful of cocoa powder. Yours sounds good though!

    I love the addition of kiwi in my smoothies. makes it an even brighter shade of green. ๐Ÿ™‚ I have never eaten the kiwi skin except for one time. And then I got a rash around my lips. I take them off each time and compost them. My mint plant is hanging in there….. but my aole vera plant isn’t looking to happy. I have find a way to revive him.

    I have been LOVING my juicer lately! I Just got it not long ago and finally brought it out to experiment, mostly fruits really, but last night I had some orange, pear, and kale it was DEELISH! My son even asked if we could throw in carrot with it! After picking my jaw up off the floor I happily grabbed a handful and threw them in! ๐Ÿ™‚ He GULPED it down! yay for juicing ๐Ÿ™‚

    For the longest time I didn’t know you could or would want to eat the kiwi skin – so I’m a nay!! I’d love to try this though if it means leaving it on without tasting fuzz!!!
