The best vegan sushi

Whenever I see the fam, I can expect the usual shenanigans. Food and laughter are the main components, with lots of stories, random games, spontaneously passing out on the couch from a food coma, and then repeating. I can also expect that my Uncle E will share some amazing cooking tips or a new recipe with me. Whenever he talks, I’m like a sponge; he’s given me basic cooking tips and some of my beloved go-to recipes. The first time I made our favorite maple salmon was after he gave me the recipe on my phone during a lunch break at work. I scribbled it down on a piece of paper -this was pre-texting days, of course- and made it for the Pilot that night. We’ve had it at least once a month ever since.

He’s also made some incredible dishes to share on the blog, like this turkey bolognese, lavender honey salmon, and the best pasta salad ever.

And now, the best vegan sushi ever.

Soba noodle vegan sushi

Since it’s vegan, you skip out on the fish, but here’s another kicker: no rice. This sushi uses soba noodles instead, and is out of this world. I can’t wait to make it again!

Vegan sushi with Soba Noodles

Sushi used to be one of the foods that I found super intimidating. Then, I actually gave it a whirl. It’s easy, and the nori wrapper is extremely forgiving. Also, if the whole rolling thing doesn’t work out: just chop everything (including the nori) into a sushi salad.

Here’s the recipe for these incredible noodle rolls:

A unique take on sushi, using seasoned noodles instead of rice. This recipe is also vegan, with fresh sliced veggies, fruit, and a zesty teriyaki dipping sauce.

  • Author: Chef Eric
  • Prep Time: 15
  • Total Time: 15
  • Yield: 8 1x

Ingredients

Scale
  • One (9.5oz) package of soba noodles, cooked
  • One pack (8 sheets) nori
  • One cucumber, seeded and julienned
  • 1/2 cup roasted red peppers, julienned
  • 1/2 mango, julienned

For the teriyaki dipping sauce

  • 1 cup teriyaki sauce (store-bought or homemade)
  • 1 heaping tablespoon of lime zest
  • 2 heaping tablespoons of chopped cilantro

Instructions

To make the dipping sauce and noodles

  1. Combine the ingredients for the dipping sauce in a medium bowl. Drizzle some over the cooked noodles to flavor and coat well.

To prepare the sushi rolls

  1. Spread out one piece of nori (shiny side up) and add some noodles to the bottom 1/3 of the sheet. Using your hands or a spoon, press down and make sure the noodles go from end to end on the bottom third of the sheet.
  2. Add a few slices of cucumber, some bell pepper and mango.
  3. Roll the nori away from you, using your hands to pack the roll tightly.
  4. Wet the edge of the nori before rolling the final portion, and place seam side down on a baking sheet.
  5. After all rolls are completed, use a sharp serrated knife to cut into bite-sized pieces.
  6. Serve with wasabi and teriyaki dipping sauce.

Notes

  • Nori can be found at most health food stores and at Asian supermarkets

This dinner together was the epitome of what I love about Tucson, and a gentle reminder of what I’m thankful for daily: in the family department, I was truly blessed. <3 I miss them already, but before I know it, we’ll be back at my uncle or mom’s house, cooking, laughing, piñata-ing, and watching the little cousins play and run around. 😉

Hope you have a great morning <3

YUM! This sounds so good! I don’t eat fish but my husband loves sushi so this would be a good compromise 😉

  2. Brynn on July 23, 2014 at 7:27 am

I have been missing sushi so much through my pregnancy. I love veggie options and this one looks amazing! Looks like a wonderful time and delicious dinner with your family!

  3. Britt@MyOwnBalance on July 23, 2014 at 8:15 am

So funny that you are posting this today! I literally got a sushi making kit last night and I had no idea what to do with it since I’m currently not allowed to eat raw fish! Perfect timing Gina! Also going to check out that lavender honey salmon!

  4. Megan on July 23, 2014 at 8:23 am

Sushi has always intimidated me too, but since trying it (and falling in love with it) I always crave it! This looks amazing!

I love sushi! I’ve never made it at home before, you’re right – it’s definitely intimidating. That salad looks super tasty!

When I think of my family… I think of a bunch of loud people all talking and laughing over each other 😀

THE BEST PASTA SALAD EVER (yes i am yelling it) is now my go to pasta salad!!! I made it for my mom’s 50th party and several people have made it since then! SOO good! I love hearing the recipes!! That feast above looks SO delish!

First thing when I think about my family is how much fun we have together!

We were all super tight growing up, in fact, my brother was my best friend for years. We would get in group wrestling fights and have a blast.

A funny thing too is that we are all redheads. You don’t see a redheaded family of 7 (including mom and dad) very often. We are an unusual bunch.

Looks like you have tons of fun w your fam too–I’m so glad!

The vegan sushi looks amazing! I love how you said that if you mess it up you can just chop it up into a sushi salad! Your arms and shoulders look amazing in that picture and I was wondering if you could post an arm burner soon? Thanks!

    • Fitnessista on July 23, 2014 at 6:50 pm

thank you! sure, i was going to do a video tomorrow so i can definitely do an arm burner 🙂

First thing that comes to mind when you say family for me is laughter and a bunch of really strong female role models.

I love sushi, I would’ve never thought to have included roasted red peppers in a roll though – very unique.

  14. Ashley @ A Lady Goes West on July 23, 2014 at 9:48 am

I’ve never made sushi at home and always wanted to. When I think of my family (who is in Florida, and I’m in California) is playing Scrabble around the coffee table with a big glass of wine in hand. Fun times!

  15. Laura B @ FitMamaLove on July 23, 2014 at 10:23 am

That vegan sushi looks really good and I bet my whole family would like it.Seems like it would be fun for the kids to eat and they already love roasted seaweed snacks. I haven’t attempted any type of sushi yet, so we’ll see!

  16. Megan @ The Skinny-Life on July 23, 2014 at 11:06 am

First thing I think of when I think about family is MOM. My Mom is literally the core of our family and glue that keeps us together.

  17. Alex @ Kenzie Life on July 23, 2014 at 11:58 am

Wow that vegan sushi looks so cool! And with soba noodles?! How creative is that! I love it! I’ve never made my own sushi but I feel like with some practice it can’t be that difficult 🙂

  18. Sylvia on July 23, 2014 at 12:14 pm

I’m not going to lie, this menu looks pretty amazing. And I’m definitely going to give this sushi roll a try!

  19. Courtni H on July 23, 2014 at 12:50 pm

This looks awesome! I can’t wait to try it!

  20. Laura @ She Eats Well on July 23, 2014 at 1:10 pm

When I think of my family, I think of hard-core coffee lovers and dessert-lovers. My Mom is a chef and makes the riches, most indulgent desserts. Your feast looks incredible, especially that salad!!!

Salmon and sweet potato rounds = love <3 Also, your dress! Love that neckline and it looks so comfy as well. Where is it from?

  28. Samantha on July 23, 2014 at 7:54 pm

Cannot wait to try the vegan sushi, we love soba! You can get fresh, handmade soba all over the place here in Japan, it knocks store-bought stuff out of the world!

  29. Gabrielle on July 24, 2014 at 12:58 am

Oh la la! I’m a sucker for sales… thanks so much!

  30. Amie on July 25, 2014 at 2:44 pm

So, you’ve said you shared the turkey bolognese, but when I click on the link the page “Saucy” has no recipe! I’ve been looking all over your site for the recipe, but nowhere to be found. Can you share this recipe, please?
