Don’t mind if I do(nut)

Hiiii 😀 How are you? Hope you had a great Saturday! I’m late blogging tonight because we just got back from the movies 🙂 The Pilot went with my bro to see Hangover 2 and the madre and I went to see Bridesmaids.

If you haven’t seen Bridesmaids yet, it is HILARE.

Of course, it’s crude humor but the story is actually really good. The theatre was packed, so the only two seats together were in the front row, on the side, so madre and I decided to split up so we could actually see. The girl next to me and I became fast friends.. that can happen in movies where you’re crying from laughing so hard.

A few of ya have asked which substitutions I make with Deb’s recipe, so here ya go:

-brown rice flour

-applesauce instead of pumpkin

-nix the cacao powder and use lots of cinnamon

Top with maple syrup and a blob of almond butter 🙂

Work today was so much fun. Saturdays are extra fantastic because I get to teach Zumba – we had 41 people in there today!!! That’s HUGE for a resort class- usually if I have 25, it’s a great day. I was worried because my energy plummeted around lunch time, but as soon as I walked into the gym, it was back 🙂

The only reason I’m awake this late is because of these:

My nana is having a brunch tomorrow, so I figured it was a great time to try the Twinnie’s donut mix from my last OpenSky promo.

The donut mix was super easy to put together and required ingredients I already had in the casa. Baller.

Can’t wait to see how they turn out topped with chocolate ganache and sprinkles 🙂

We’ll be off to brunch in the morning, but I promise to be back with a legendary re-cap afterwards [It will be similar to the Easter brunch.. I’m so excited]

Something to talk about: Wedding snafus! We were lucky to have a fairly seamless wedding, but we had one major snafu. After the rehearsal, I called the Mexican restaurant where we were having our rehearsal dinner and they had totally forgotten about it… and we had 83 people on the way there (my family is HUGE). The Pilot handled to situation like a pro, and thank goodness the restaurant was able to make it work. It could have easily ended up being pizza night 😉 Did you have any wedding snafus or have you witnessed any good ones?

    I cried from laughing at that movie too – so funny.

    this was NOT me – a friend of a friend got married at Disneyworld – they were walking off the elevator and he tripped, grabbed her arm and ripped the arm of her dress off! eep! the first wedding I was a bridesmaid for included a full Catholic mass = HOURS of standing up there… whew! 🙂

    this week so far i’ve seen Thor (guy had a nice bod!) and Hangover (sooo funny!!). ask the pilot about the ladyboy. hahahah. ok have a good night.

    I’ve had a multitude of embarrassing moments in my life, just thankfully not at my wedding. Looking forward to watching Bridesmaids! Might have to watch Hangover 2 as well.

    I’ve been dying to see Bridesmaids- it looks amazing!

    No wedding snafus of my own, but on the day of my cousin’s wedding as soon as we got out of the church it started POURING. I’d honestly never seen rain so hard before. It was really funny to watch all the male trolley drivers, church clergy and hotel staff walk each woman individually with an umbrella from the church to the trolleys that were taking us to the reception site!!

    I’m a wedding planner on the side and thought I had everything covered- except that our wedding song cd skipped and halfway through stopped completely. We had paid for ballroom dancing lessons and I wasn’t about to just end our dance so all of our guests started clapping and we we got to finish the dance, even with the drop and kiss at the end!

    Our whole wedding was beautiful, but was put together very quickly as we live in a muslim country and after falling pregnant out of wedlock (oopsy) we had to get married or else leave the country.

    We live in Saudi Arabia and there was nowhere for us to be wed as Christians so we had to go to Bahrain and be married in a church, in a muslim country.

    To top it off, because of the time of year of the wedding (Ramadan) we weren’t able to have a proper reception with alcohol – even for Christians, so our reception was an Iftar (sunset fast breaking buffet meal with NO alcohol).

    We rectified this by hiring a large hotel room, getting people to donate alcohol from their private stash and we had an after party til dawn in our room.

    A wedding to remember!

    Bridesmaids looks funny! We didn’t have any problems, but there was a worry about whether the cake could make it over the dirt road to the wedding site. Luckily it did.

    this is totally great timing! i saw bridesmaids last weekend, and LOVED it – way, way funny. and just attended a wedding last eve – no snafus, thank goodness, just a beautiful bride and lovely celebration.

    THe FORGOT about 83 people coming to their restaurant?! I would have had a heart attack! It seems like it is always something at every wedding – but things tend to come together. 🙂

    Our wedding was pretty seamless too – except for 2 days before the wedding, the reception hall called us, told us they forgot to charge us sales tax, blamed us for “not realizing it and trying to get away with not paying it” (REALLY!??!), and told us if we didn’t give them the extra $1,000 by the night of the rehearsal, the wedding was off. Needless to say, I was a little stressed out.

    Yum, donuts! And the movie was absolutely hilarious! We went to the less popular movie theatre in our area, though, so the seats were mostly empty!

    No major wedding snafus here. I can’t believe they FORGOT! That’s almost comical.
    I love that pic of you in the wedding dress. I wish the place where I bought mine allowed pictures because it would’ve been so nice to have a few trying it on.

    The people at our reception place dropped our cake, which was huge and beautiful. They had a cardboard replica and had to sit that out instead. No one knew but us.

    I need to see that movie! I guess our snafu would be that we forgot our marriage license (left it at the house) but since we knew the priest well, he just went on with everything and my dad stopped by the house after the wedding and picked it up! That and the fact that it snowed! (I was a few minutes late, but most guests made it fine)!

    Can’t wait to see Bridesmaids… Hangover 2 was so funny! My wedding snafu? BABY’S BREATH! Ugh! I distinctly and vehemently requested that there be NO baby’s breath in ANY of the flower arrangements, but MY bouquet showed up an hour before the wedding with TONS of it surrounding my roses. It was my only bridezilla moment, lol, but when you pay so much money for flowers and are so specific about what you (don’t) want, it is really frustrating! It seriously looked like a bouquet circa 1992. smh.

    I love donuts for breakfast!!! My favorite ones that i make are chocolate espresso with a crunchy carmel glaze!! I think i should go make some now…

    I want to see Bridesmaids! I’ve heard it is hilarious. What did the guys think of Hangover 2?

    Thankfully everything went according to plan for our wedding and reception and the worst thing I have witnessed is having to move an outdoor wedding in because of rain — but nothing too major.

    Oh gosh …. wedding SNAFUs … yes, I know them well. I’m getting married THIS coming Saturday and we had two major bombshells dropped on us over the last week:

    – at our meeting with our photographer, he let us know that he accidentally double-booked us.. so his wife and assistant are now shooting our wedding. epic fail.
    – we have planned for months to set up our reception site on Thursday … we coordinated this with family members (so they could take off work), decorators and other vendors and had it ALL set. This week, the reception site called and asked if we could move our set up date because they had someone that wanted to use the site for ….wait for it ….. VOLLEYBALL PRACTICE. yes. I went completely bridezilla on them and I think they got a little scared and let us have it back for Thursday.

    Whew. I’m so ready for Saturday. 🙂

    Thank goodness I got married in Las Vegas for $199 and had no attendees, no one I knew was there, I had a fake plastic corsage, I wore a hot pink Betsey Johnson mini dress and had NO expectations about things going “perfectly”. Wing it. <— That was the mentality. 10 years later, it still works. And they all said it wouldn't last 🙂

    And thank you for not reprinting Deb's recipe in entirety. You are the BEST. I just did a series Blogging 101 and 102 and in 101 talked about adapted from/inspired by/reprinting in entirety. I know you're always been mindful of that, too. Thank you for that, Gina 🙂

    Hmmm…. wedding snafus. Rehearsal dinner night at a pizza place. The waitress had a cast on her arm and was serving two big pizzas. One of them fell over right down the exposed back of my little sister/moh. Pizza was fresh out of oven. >( Luckily she was okay, no burns or anything, but that scared the heck out of me. Wedding day, my dad practically dragged me down the aisle, which was grass, on a hill. My bridesmaids were getting stuck in their heels and uh, my dad stepped on the train of my wedding dress right after he gave me away and he almost fell over. Luckily he didn’t 😉

    One big wedding snafu we had was that the photographer was going to set up a photo montage of pictures of DH and I and the bulb in his projector screen was dead. I guess he didn’t bring any back ups? I was a little ticked off because I paid extra for it. Luckily our reception hall had tv’s all around, but they were kind of on the small side. They were able to put the montage on the tv’s so it all worked out, just not as good as I had hoped!

    Our wedding snafu happened the night of our rehearsal dinner. We had just had a great time eating and celebrating with our family, when the all inclusive resort in Tulum called to say they had cancelled our reservation as they where closing the resort because a hurricane was going to hit. Well we called the airlines right away to cancel the flight, and the airline insisted they would not cancel us because they could still fly us there are we would be arriving a “full day before the hurricane actually hits” UGH! So I went to bed alone and stressed that night, Thank god for my wonderful hubbs, he spent the entire day of our wedding on the phone, cancelling the flight and getting our money back, and rebooking a honeymoon to Napa Valley….wooohooo! We had to shop for some clothes once we got there, but overall we had a great time, and it turned out great!

    We almost had a major snafu but I didn’t know about it until the day after. The groom and his groomsmen were set to get dressed and hang out at our house. Turns out, they got into playing Xbox and lost track of time! Luckily my itinerary had them arriving 30 minutes early, so while they thought they were super late, they were actually on time. When we came home that night, there were hangers and all sorts of tuxedo remnants scattered all over the house!

    Wedding snafus. Luckily I didn’t find out about it until after hubby had fixed it but turns out the groomsmens tuxes were in the proper shop but they hadn’t shipped hubbys. So the day before the wedding and he has no tux. Fortunately they flew it in asap. We live in Canada and it was literally half way across the country.

    I’m really looking forward to seeing Bridesmaids!

    My boyfriend’s little sister was just diagnosed with Celiac’s disease, she is 19 years old and just finished her freshman year of college. She is having a really hard time making the transition to a gluten free diet. I would love some suggestions on some really YUMMY gf recipes/foods to try. Her main diet (before being diagnosed) consisted of a lot of pasta and her fav restaurant is Buffalo Wild Wings lol. Her palate is pretty bland and she isn’t a fan of veggies 🙁 She is worried about what she will be able to eat next year at school too! I would REALLY appreciate any help!!

      the good news is that there are gluten-free versions of everything! waffles, bagels, bread, pasta, english muffins, etc. amy’s makes an awesome gluten-free frozen pizza, too. what are her favorite foods, and i’ll give ya some ideas?

        She loves mac & cheese, breaded chicken, pretty much all pasta dishes, she eats a lot of soup and loves chocolate desserts!

          for mac n’ cheese, make it using brown rice noodles instead of regular
          for breaded chicken, make the bread crumbs from scratch by food-processing brown rice toast (i like the food for life brand)
          -pasta: use brown rice pasta or quinoa pasta
          -soup should be find, just make sure it has no noodles (rice is ok)
          -chocolate dessert: flourless chocolate cake! best gluten-free dessert ever 🙂 also, check out these brownies http://fitnessista.com/2011/05/best-idea-ever/
          -mexican dishes: use corn tortillas instead of flour, and you should be good to go!

    I saw Bridesmaids w/ 3 girlfriends and we were pretty much rolling in the aisles. Such a good time. My favorite part was when Kristen Wiig’s character and the snotty one were driving back and forth in front of the cop trying to get him to help find Maya Rudolph. I think I started wheezing instead of laughing at that point. 😀

    i was performing my first wedding on a gorgeous hot day outside, and as i grabbed the mic to start it up, realized (along with all 150 guests) that the mic was busted. nope, it wasn’t off, something in it melted, and it the outdoor noise was too loud to go without an amp. i frantically looked around for the sound guy, who happened to be sick with the flu in the bathroom. the musician was sitting about 20 feet away with a tiny speaker attached to her mic, and i asked if i could borrow it…. but the cord was only 5 feet long. SOOO i asked the wedding party, bride and groom to shimmy over, completely off center, to the side of the setup, to be able to do the wedding. thankfully we were all laughing (it was a dear friend’s wedding), and it loosened the crowd up a bit! we also almost lost a bridesmaid to the heat- thankfully there was an empty chair in the front row she went and sat down on!

    On the way to the church on my wedding day my mom was stopping at a red light, and some guy wasn’t watching where he was going (he was looking behind himself talking to his girlfriend) and he walked into the side of my mothers car, rolled across her hood, and torn off her antenna. He was okay but it sure wasn’t a good way to start! At our reception my brother was doing the toast and before he started he asked everyone to “say a prayer for the guy mom ran over on her way to the church.” lol

    Our wedding was one huge snaffu! A major storm blew through which brought our outdoor wedding indoors, my grandmother had to leave because she is terrified of lightening and the room we were in was all windows, the chairs in the diningroom weren’t covered, the candles in the centrepieces didn’t get lit, the flowers were lost for a while, the wrong cake was delivered, they closed the bar during the dinner and refused to serve my husband (we had paid for the open bar all night), the fire alarm went off in the middle of the night and stayed on, there was no power in the hotel in the morning because there was a gas explosion a few miles away… I could go on! I just kept thinking that the reason we were all together was to get married and as long as that happened we would be fine. What a day!

        Anything Melissa McCarthy’s character said or did was so hysterical. (driving past Annie in her van with the nine puppies she took as party favors from the shower? her exchange with the air marshall? omg.) the plane scene was hysterical, too! I would not be happy though if I could not go to Vegas for my bachelorette party!

    Oh wow…I am sure that you were freaking out about the rehearsal dinner venue.

    Everything ended up being fine but I was seriously about to lose it when my husband showed up to have our “First Look” pictures and he hadn’t showered and was in a tshirt/shorts. And did I mention that we were on a super tight schedule…? He was intercepted by my bridesmaids but when I finally saw him my first words to him were, “I am super mad at you right now but I don’t want to regret these pictures for the rest of my life so I’m just going to smile and be in love.”
