Nut Butter Monster

I’ve created a nut butter monster….

When I realized that I was out of almond butter this morning, I proclaimed that I’d try to make my own.

The Pilot just raised one eyebrow at me. Last time I *tried* to make almond butter, I overheated the Vitamix and our kitchen was full of smoke.

Feeling brave, I decided to give it another whirl.

IT WORKED!

Not only did it *work*, it’s redunk 😀

I guess the secret is adding a little bit of oil to the raw almonds?? I whirled the raw almonds around in the food processor for about 5 minutes and when nothing was really happening, I added a small splash of olive oil. A little more whirling + some sea salt, cinnamon and vanilla, and voila! Homemade AB 😀

Even though it’s Pancake Sunday, I had to use the fresh cinnamon-y almond butter in some bfast cookie dough cereal, topped with an organic peach:

The Pilot had French Toast and left his plate on the coffee table..Bella finished it for him 🙂

We’re all out of order as far as food traditions go this week, because we celebrated Indian Food Wednesday last night [Saturday] 😉

Even though the food was wonderful and my date was seksi, it wasn’t quite as fab as our Chicago Indian Feast last weekend 😉

After our dinner, we rented Shutter Island, which was intense and kinda creepy. I had CRAZY dreams last night!

This morning we’ve been cleaning around the casa and the Pilot has to go into work for a while, so I’ll hop on the spin bike at the base gym while he works.

The rest of the day looks like this:

    You have no idea how much I want channa masala now after looking at your gorgeous lil Indian feast plate!
    I’ve never made my own nut buttaz before, but it looks delicious- I can really think of ways to get creative with it!

    I always make my own almond butter! The trick is you have to keep it in the food processor for a long time–12 to 15 minutes. I never have to put oil in. I thought my food pro was going to blow up keeping it on that long, but it works beautifully. When you think it’s done, give it a couple more minutes. The oils will release from the almonds, and behold, the creamiest, best-est almond butter ever! And cheaper too.

    I am going to have to try this. The grocery store I go to only gets AB with added sugar. I bet a girl can go crazy with flavors. Dark chocolate with cacao nibs for crunch sound good right now.

    I’ve always wanted to try and make my own nut butter, but I broke my food processor making banana soft serve. I then exchanged it and attempted to make soft serve again which resulted in the lid flying off and bananas flying everywhere leaving it broken once again. I guess I should invest in a higher quality food processor 🙂 It looks like your nut butter turned out great!

      I make banana soft serve in a small Cuisinart food processor and haven’t had any issues at all like you are having. It is small, 4 cups and only $30 at Bed Bath and Beyond. I think it is the Cusinart Mini-Prep.
      I also let my bananas defrost just a little bit (5-10 minutes) and towards the end add just a small amount of almond milk.

    “Have you ever made your own nut butter???”– YES! I have made cashew butter in the Vita b/c that’s more my speed than almond butter. But I really want to just make PB. The thing about cashews is they’re so creamy so the added oil is almost not necessary but with almonds it totally is!

    Girl I broke!!! my first Vita. It was more than likely a lemon b/c it happened within the 1st two weeks of me owning it and that’s what their cust service reps told me…after I told them that it was smoking after me grinding dates + nuts without enough liquid on a super low speed (have learned not to fear high speeds in the 2+ yrs Ive owned it LOL). But they shippped me out a new one, no charge, but omg 2 weeks after I had dropped mad cash on it, seeing it break and thinking I broke it..I about had a heart attack!

    I have also overheated it where it goes into auto-shutoff mode and wont start for 20 mins.

    What can I say…I am a live-on-the-edge daring cook with my vita! LOL

    Hooray for AB success. I don’t normally make my own nut butters – mainly because I can get them cheap at TJ’s, but I have been experimenting with making my own almond milk – it’s sooo easy!

    I only tried making nut butter at home for the first time a few weeks ago—ended up with ugly-but-good sunflower seed butter. I think cashew butter is next on my list, since I’ve never had it before.

    I always make my own almond butter, so much cheaper. And IMO the key is soaking the nuts first if you are making raw nut butters! maple cinnamon almond-peanut butter was one of my fave combinations. and homemade raw salted cashew butter is DIVINE, I ate half a jar once it is so good. The horrors though my cuisinarts food processor bowl lip is broken so if I make something it leaks out, FAIL. And same thing happened to me in my vita ahaha

    i’ve yet to try nut butter but yours sounds like it tastes ah-mazing! i don’t have a vita so maybe i should start with cashews first since they are a little nicer to the blades 🙂

    I’ve made pecan butter with my Magic Bullet! We lost a part of our 90 year old food processor so until we find it, I have to abuse my blender. It was fabulous even without oil (although pecans are mostly fat so that’s probably why). I added some pumpkin butter to sweeten it up too. Mmmmmm!

    I thought Shutter Island was a really good movie. It was definitely creepy, though. How the whole thing turned out was completely unexpected. Congrats on the almond butter!! It looks just like the real stuff!

    I am TERRIFIED to make my own nut butter. Last week, I tried to make banana soft serve and ended up breaking a wooden spoon and then having a straight-up breakdown. It was ridiculous, to say the least. I’m fine with buying my $3 peanut butter from Kroger.

    I have made almond butter in the Vitamix! The key is a little oil! Definitely very good!

    Just leave the almonds in the processor or Vitamix for about 15-20 minutes. So yummy!

    I just got a vitamix and was going to try to make almond butter – I think I will try soaking the almonds like someone mentioned. Never thought of adding flavors too it but your combo sounds yummo!

    I’ve made my own nut butter manyyy times but I always had to roast the nuts beforehand. When I tried raw almond butter in the vita, it smoked (like yours)! haha

    I’ve made cashew butter in my Blendtec blender before. I loved it, but hated the sound it made! It was almost unbearably loud for me… I must be a big wimp. 🙂

    I have tried to make my own pecan butter in my magic bullet, but it just didn’t quite get to a good consistency.

    I made my first batch of nut butter with my Vita-mix a few weeks ago– just using cashews, and it turned out pretty well! I think the trick is keeping it on a LOW setting… when I tried it at a higher setting, it definitely started to overheat! I want to try almond butter next! Good to know that adding some oil will help if I need it. Oh, and all the flavor possibilities!! I can’t wait.

    I really enjoyed Shutter Island, too! Creepy, but good.

    it’s pretty amazing the things we buy pre-made when we could totally make it at home. (er, not ME of course, but in theory….) but can you believe, i’ve never even tasted nut butter before?? nor greek yogurt, or chia seeds, or Larabars…i know, what’s wrong with me (lol!)

    I just made my own for the first time today!! I ran out of almonds so it was almond-walnut butter. My food processor actually broke! 🙁 But I finished it off in the OLD blend with no handle and a broken lid. I had to stop every 30 seconds because the blender will overheat easily. It did turn out well though! All that I added was some sea salt. I want a vita Soooooo bad
