‘Roon Winner, Fiesta Dinner

Last night was quite a fiesta ๐Ÿ˜‰

Before we get into all of that, hereโ€™s the winner of the macaroon giveaway:

So pilates last night was pretty much amazing. It felt good to stretch and make my abbies cry.

Zumba was a blasty as usual, and the pilot and I had a Mexican feast when we got home.

He had the white enchiladas (with refried beans on the side):

And I had a fiesta salad beast:

It had Amyโ€™s refried beans on the bottom, topped with organic greens, bell pepper, a boatload of Herdez salsa (the best store-bought salsa you will ever find. And believe me, I know salsa, haha), a 3 egg white puff, cayenne, green onion and goat cheese.

Fan-freaking-tastic ๐Ÿ™‚

I also chugged a coconut water:

The pilot and I spent the rest of our evening watching Family Guy and sitting next to each other with our laptops. True love, right there ๐Ÿ˜‰ Heโ€™s been so busy studying lately and well, I enjoy online shopping, celebrity gossip and the blog world. I keep myself occupied ๐Ÿ˜€

This morning, I decided to make a Raw Almond Butter and Jelly Shake

ab jelly shake

 

-1 C almond milk

-1 scoop vanilla Sun Warrior

-1 C organic frozen strawberries

-1 frozen banana

-1 T almond butter

Simple and delish.

 

Iโ€™m off to do a yoga podcast and head to work (7 training appointments today! WHEW!), but Iโ€™ll be back this afternoon!

My next post is kind of a bummer post, but it needs to be published so Iโ€™ll stop thinking about it. Itโ€™s been in my โ€œdraftsโ€ folder for about 4 daysโ€ฆ. yikers.

      it’s a little sweet but kind of tangy? it’s hard to describe! it took me a few to get used to the taste

      my favorite pilates dvds are the winsor pilates ones- i have them all and love them. the teach (mary?) is kind of an odd bird, but the classes are amazing ๐Ÿ™‚

      I’m curious about foods to eat pre-pregnancy too! I started taking my prenatal vitamins yesterday and thought of you right away! The doctor said I should start at least 3-6 months before trying to conceive, so I started! Yipeeeee!!!!!!

    I noticed you listed raw almond butter in this smoothie and other times you just list almond butter. Do you always use raw almond butter or do you change it up? Which tastes better? It’s too expensive for me to try both and not like one of them!

    Hey Gina – thanks for making me think about what makes me happy. I really enjoyed just leaving a comment on your ‘roon giveaway!

    I always buy Herdez now if I don’t make it at home – so far have tried their salsa verde and regular salsa, and also buy their chipotles in adobo. Yum! Like Dreena says – I blend them up and keep the puree in my freezer and chip off some when I need a little spice in my life.

    The smoothie looks divine! I’m always trying to cram so much into them, I’ve gotta remember that sometimes, simple is best and tasty! ๐Ÿ˜€

    girl. how do you do 7 appts in a day? I am so tired some days after teaching yoga but the show must go on so to speak so I just carry on…but it’s a few classes per day, not 7! Granted my classes are 90 mins but yeah, I feel for you ๐Ÿ™‚

    Those enchiladas look amazing! So does your salad! I always think to add a hard boiled egg to a salad, but never egg whites.

    My husband will watch hockey sometimes and I’ll sit next to him on the computer reading blogs – at least we’re kind of spending time together!

    I’m sure you’ve mentioned this before and I apologize if so but about how much time do you spend preparing meals since you do two separate (or modified versions) when you and the pilot eat together. My kids eat fairly healthy most of the time, my husband is never here (read: military, you know all about that! ha ha) and so I’d love some tips on pleasing everyone in the group without spending all my time in the kitchen.

    And just WHEN will the Fitnessista be publishing a raw cookbook?! ๐Ÿ™‚

      i spend anywhere from 20 minutes to an hour. the enchiladas (making the sauce, shredding chicken, everything) took 30 minutes and my salad took about 5. i try to do it fast and furious!
      and i’d LOVE to do a cookbook ๐Ÿ™‚
