Hi lovely bloggies! Hope your morning is going well!
Last night was quite a fiesta ๐
Before we get into all of that, hereโs the winner of the macaroon giveaway:
Meaghan!! Congrats, girl! Send me your shipping info and which flavor macaroons you would like (super-roons with cacao nibs, goji, chia seeds and maca, cacao almond butter macaroons or blonde)
Thank you so much to all of you for enteringโitโs always fun to see new girls (and guys! I was so excited!) come out of the woodworks to say hello ๐

So pilates last night was pretty much amazing. It felt good to stretch and make my abbies cry.
Zumba was a blasty as usual, and the pilot and I had a Mexican feast when we got home.
He had the white enchiladas (with refried beans on the side):
And I had a fiesta salad beast:
It had Amyโs refried beans on the bottom, topped with organic greens, bell pepper, a boatload of Herdez salsa (the best store-bought salsa you will ever find. And believe me, I know salsa, haha), a 3 egg white puff, cayenne, green onion and goat cheese.
Fan-freaking-tastic ๐
I also chugged a coconut water:
The pilot and I spent the rest of our evening watching Family Guy and sitting next to each other with our laptops. True love, right there ๐ Heโs been so busy studying lately and well, I enjoy online shopping, celebrity gossip and the blog world. I keep myself occupied ๐
This morning, I decided to make a Raw Almond Butter and Jelly Shake
-1 C almond milk
-1 scoop vanilla Sun Warrior
-1 C organic frozen strawberries
-1 frozen banana
-1 T almond butter
Simple and delish.
Iโm off to do a yoga podcast and head to work (7 training appointments today! WHEW!), but Iโll be back this afternoon!
My next post is kind of a bummer post, but it needs to be published so Iโll stop thinking about it. Itโs been in my โdraftsโ folder for about 4 daysโฆ. yikers.
Have a wonderful morning <3
xoxo,
Gina
Congrats, Meaghan! Lucky lucky ๐
That salad sounds delicious!
Haha the husband and I sit by each other with our laptops all the time! He has a business he can work from home with – so he often works at night. And I, like you, love the blog world, celeb gossip, and shopping! haha
Good luck today with all those appointments! Wow!
Oh girl, your salad looks phenomenal! Yum, yum!! ๐
I may have missed it, but what is the pilot studying for??
he’s going through the most difficult upgrade right now… pretty crazy stuff! he’ll be an instructor when he’s done, though
What a fab mexican feast! ๐
I’m liking the looks of that smoothie this morning. I have a lot of strawberries and oranges to eat…oh the combo to make!
I love your salad beasts! Is coconut water very sweet? Or does it taste like water with a kick? Hope everything is ok with the bummer post ๐
it’s a little sweet but kind of tangy? it’s hard to describe! it took me a few to get used to the taste
This just makes me want for you to start your business sooner!!! I want me some roooooons!
that pretty much describes me and my hubby at night. laptops and tv, chillin. of course im just checking celebrity gossip while he’s actually working…
Hi Gina! I really like Pilates and wanted to start doing it more routinely. However, the places around my house are too expensive for me right now. Do you have suggestions for good Pilates DVDs? Thanks!
Hey Marla,
This link has some really great online Pilates video resources. I love the podcasts from Pilates on Fifth!
http://pilates.about.com/od/buyingequipmentetc/qt/Videos-Online.htm
hey marla,
my favorite pilates dvds are the winsor pilates ones- i have them all and love them. the teach (mary?) is kind of an odd bird, but the classes are amazing ๐
Herdez really is the best jarred salsa out there. Everything else pales in comparison.
Almond butter and jelly shake– love it!
I’ll have to look for that salsa! I LOVE a good salsa ๐
I wish my stomach could handle coconut water… it makes me um, musical ๐
LOL
i’ve never had coconut water and don’t know much about it. what are the benefits compared to regular water?
here’s some info for ya
http://www.knowledgebase-script.com/demo/article-320.html
If it can’t be made from scratch – it must be Herdez!
๐
Love your blog!
amen!
That is my favorite salsa!! Have you ever tried Wild Oats habanero lime salsa? pretty amaze, too!
I just wanted to let you know that I was in FL this past week and finally got to try Season’s 52. My new FAVORITE restaurant!
Your AB and Jelly smoothie looks yummy!
ahhhhh seasons! i’m having it this weekend… i can’t wait!!
Yum.. i want an egg white puff now!!!!
What are the essential foods for pre pregnancy? I thought I would get your take on this!
I’m curious about foods to eat pre-pregnancy too! I started taking my prenatal vitamins yesterday and thought of you right away! The doctor said I should start at least 3-6 months before trying to conceive, so I started! Yipeeeee!!!!!!
hey nelly,
maybe ill do a post about this???
Your salad looks good.
That salad looks killer. My husband and I had all intentions of making a huge salad last night but come 9 p.m. we were just getting home. So cereal it was! You seem to be much more on top of things than that!
P.S. We ran out of lettuce and I have no time to run to the market until Thursday and I am sad. I miss my big salads!
Wow girl you’ve got a busy day! Congrats to Meghan, lucky lady!
I noticed you listed raw almond butter in this smoothie and other times you just list almond butter. Do you always use raw almond butter or do you change it up? Which tastes better? It’s too expensive for me to try both and not like one of them!
i prefer raw.. but i wouldn’t kick any type of almond butter outta bed, if you know what i mean ๐
i just about lost it when i saw those enchiladas…they look incredible! and i totally agree about the Herdez salsa! good store bought salsa’s hard to find, and this one is definitely a winner!
Love the salad beast…always a good choice ๐
I love a good pilates workout. I don’t think i’ve ever had an unsuccessful class!
I have yet to try the Herdez salsa and I love salsa. I vow to buy it next time I see it!
HI! I am wondering how you make that egg white puff? Thanks ๐
Don’t worry about a bummer post! You should be able to post *anything* on here! It’s your blog girl ๐ And we’re all here to support you!
xoxox,
Lauren
Yay! Herdez salsa. I think I could eat a bottle of this all by myself in a sitting! Those enchiladas look divine.
gahhh that feast you made looks amazing!!
so nervous for your news – i really hope you dont have to stop blogging!!!
I second that – I really hope you don’t quit blogging!!
On pins and needles over here about your news!
Your salad looks great….will have to try the salsa cuz I know you know salsa! Sounds like a great night….
Your goat cheese looks so good. Every time I buy it, it tastes funky so I was wondering what brand you buy?
hey jen,
that particular one is the chevre brand.. my favorite is the alta dena raw goat cheddar though ๐
awww I have the biggest grin on my face at that image…nothing better than being totally chill with the love of your life. nut butter+jelly smoothies=amazing. i have a banana that *needs* to get used…maybe i’ll have one as a pre-Pilates snack! also I love that you do Pilates! it’s my favorite thing ever
Hey Gina – thanks for making me think about what makes me happy. I really enjoyed just leaving a comment on your ‘roon giveaway!
I always buy Herdez now if I don’t make it at home – so far have tried their salsa verde and regular salsa, and also buy their chipotles in adobo. Yum! Like Dreena says – I blend them up and keep the puree in my freezer and chip off some when I need a little spice in my life.
The smoothie looks divine! I’m always trying to cram so much into them, I’ve gotta remember that sometimes, simple is best and tasty! ๐
I second – I spent my drive home from work thinking about what makes me happy thanks to you. Something that does NOT make me happy – I didn’t win the macaroons. ๐ Just get that online store bzouncin’ girl! Hope everything is ok for you.
Hi! Where did you get that cup with the straw built in for your shakes? That looks awesome!!
hey beth,
the straws are separate- they’re made of glass. you can find them online at glass dharma
Ohhhh duh! Got it. thanks!
the AB & J shake looks great.
girl. how do you do 7 appts in a day? I am so tired some days after teaching yoga but the show must go on so to speak so I just carry on…but it’s a few classes per day, not 7! Granted my classes are 90 mins but yeah, I feel for you ๐
your food always looks so yummy! I’ll have to try that shake sometime soon!
Any chance you are going to relocate to Colorado?
After reading your blog for a while I tried Zumba at 24hourFitness again and found an awesome class/ instructor! It rocks! Thanks for inspiring me :-).
hahah i wish, but no
that’s great news- zumba is my fave ๐
Ohhhh, that’s too bad! I thought there might be a chance since we do have pilots here ;).
I got a free pass to try out a Zumba class in NYC. I’m excited, but I have no idea what to expect–is it HARD??
And yes, whatever is bothering you, get it out. You’ll definitely feel better. I use my blog for therapeutic reasons often and it always helps ๐
http://www.firednfabulous.blogspot.com/
no, it’s not hard! it’s FUN! just an hour of pure dancing goodness.
I don’t know how you keep from digging into the Pilot’s enchiladas! Holy cheesy moly, that looks awesome.
Seriously, your self-restraint is to be admired.
hahah i’ve had plenty of gooey enchiladas in my life ๐
“and well, I enjoy online shopping, celebrity gossip and the blog world.” Haha love it! Your fiesta beast looks bueno! I hope everything is a-okay!!
Those enchiladas look amazing! So does your salad! I always think to add a hard boiled egg to a salad, but never egg whites.
My husband will watch hockey sometimes and I’ll sit next to him on the computer reading blogs – at least we’re kind of spending time together!
K
I’m sure you’ve mentioned this before and I apologize if so but about how much time do you spend preparing meals since you do two separate (or modified versions) when you and the pilot eat together. My kids eat fairly healthy most of the time, my husband is never here (read: military, you know all about that! ha ha) and so I’d love some tips on pleasing everyone in the group without spending all my time in the kitchen.
And just WHEN will the Fitnessista be publishing a raw cookbook?! ๐
i spend anywhere from 20 minutes to an hour. the enchiladas (making the sauce, shredding chicken, everything) took 30 minutes and my salad took about 5. i try to do it fast and furious!
and i’d LOVE to do a cookbook ๐
Ha, my husband have lots of nights sitting next to each other on our laptops! Love it. ๐
mmmmmm I love egg white puffs on salad. I’m kind of glad you will be posting the news bc you have had me thinking about it since you put it up in future posts a few days ago. I’m sure whatever it is will work out though.
How long are the training appointments? That sounds like a LONG day of training!
an hour each. and yes, it was a LONG day!
omg, those enchiladas are mouthwatering…lol i almost cannot handle it!
Hi Tina! I was wondering how you make your egg white puffs? They always look so, well, puffy :-).
Wow, I can’t believe I wrote “Tina.” Sooo sorry, I don’t know where my head was. I’ve been reading your blogs for months now and I know that you are Gina ๐
no worries! <3
