Mexican Pizza

Hi friends! Howโ€™s the day going? I have a new recipe for you today–Mexican pizza! A seemingly random combination that came about in a random way. ๐Ÿ™‚

Iโ€™m a little later blogging today than usual and am still catching up from vacation. I got a lot of work done around here (and started to tackle emails like crazy) before teaching barre this morning. Iโ€™m also teaching later this evening, so itโ€™s a double dipper kind of day.

Behold, the Mexican Pizza. 

As expected on any road trip–and weโ€™ve had a LOT together–the Pilot and I talk about the most random things on the drive. Random topic of conversation this past weekend: buffets we used to frequent when we were younger. I had Pizza Hut buffet many times in elementary school, and the Pilot told me that he used to go to CiCiโ€™s pizza with his friends after soccer practice to get their $5 all-you-can-eat buffet. (The restaurant probably lost money that day, haha.) While he was talking about it, he mentioned a Mexican Pizza and I was immediately intrigued.

โ€œMexican pizza? You mean aโ€ฆtostada?”

โ€œNo! Like actual pizza but with taco toppings, like chicken, cheese, shredded lettuce, salsa, etc.”

โ€œWait, but what do they use for the sauce?โ€ I thought maybe beans would work but theyโ€™d be too thick, and salsa or guac would be weird or too watery.

โ€œEnchilada sauce!”

BOOM. I knew we had to try this immediately, and it ended up being the perfect Monday night throw-together dinner.

Mexican Pizza Recipe

I made the classic slow cooker chicken (two chicken breasts in the slow cooker, season well with salt, pepper, garlic powder and oregano, add water so it goes halfway up the sides of the breasts and cook on high about 4 hours until shredding with a fork and adding any sauces/extra flavors youโ€™d like)

and rolled out some dough. (We like the Bobโ€™s Red Mill gluten-free or the pre-made dough from Trader Joeโ€™s if Iโ€™m making the pizza for Tom and Liv, but you can use any pizza dough you like!)

I poked the dough with a fork, and added the enchilada sauce (for bonus points, make this sauce. I promise youโ€™ll never go back),

added the chicken,

cheese,

and baked on the pizza stone. 

I went to remove said stone from the oven and in the process, accidentally pushed my middle finger into the scorching hot metal grates of the oven while positioning the pot holders. Iโ€™m pretty sure I burned a layer of skin off.

The rest of the process was spent with a Mickey Band-Aid around my finger, muttering โ€œf-ing pizzaโ€ while adding the toppings, haha. It was worth it.

This is where you could get creative with toppings like pico de gallo, guacamole, black olives, green onions, cilantro and/or sliced jalapeรฑo. This would be an AWESOME party or football game food, too!

We had the pizza along with refried beans and it was a great, easy meal. Let me know if you give it a try!

    This is actually a really popular thing in Ohio. They (formerly me) call it “taco pizza.” It’s sooooo good. Especially cold the next day with Corona.

    I’m from Iowa & was going to leave a similar comment. Can’t believe you’ve never heard of taco pizza! I didn’t realize it was a geographical thing & would’ve surely thought it would have made it out west (would’ve thought that was where it originated!) in any event. Yours looks fabulous, but it’s missing a key ingredient… nacho cheese Doritoes broken up on top! ๐Ÿ˜› It’s also yummy w/ the refried beans spread right on the pizza over/mixed in w/ the sauce.

      Another Iowan here! I didn’t realize it was geographical either. Every pizza place here has it! The chips on top make it!
      At 33 weeks pregnant I know what I’ll be having for super tonight or in the very near future! ๐Ÿ™‚

    This looks delicious
    Mishaps: a couple of weeks ago I went to grab some chicken broth from the micro and didn’t realize it had spilled on the sides, thus leaving the handle slick and hot. When I grabbed it it slipped and spilled all over my inner forearm! Ouch! It looked horrible days later and I’m pretty sure I too had 2nd degree burns. Fortunately I kept it covered and clean with no infections and now, after peeling, you Can barely notice anything happened.
    I did finish my dinner, btw, and lesson learned: never grab anything without a towel or hot pot holder ( even from the micro).

    I also make a Mexican Pizza – I use refried beans as the “sauce” and use ground beef (or turkey) mixed with salsa – top with cheese and the rest of the fixing. Yummy!

    Well this would be a nice upgrade for our standard Sunday-night-pizza-night. But I guess we better be careful!! ๐Ÿ™‚ (And for the record, I also enjoyed Pizza Hut buffet.)

    Never heard of Mexican Pizza! CRAZY! So good ๐Ÿ™‚ I seriously burnt some turkey bacon the other day, so much for BSAT (bacon, spinach, avocado, tomato) sand-which :'(

    I actually grew up going to a buffet called Shakey’s and we would always order taco pizza. It was my favorite. Thanks for that blast from the past!

    Ii know of this wonder called taco pizza, of which you speak, recently made Trisha Yearwood’s taco pizza (I grew up knowing the tastiness of Taco Pizza). I made my own crust, using our standard recipe. This is a bit different that yours, but delicious. Thought I’d share a similar, yet different spin of taco pizza, on a “regular” pizza crust.

    I literally made this for dinner last night for my boyfriend and I. We used the garlic and herb pizza dough from TJ’s. We did a layer of refried beans, salsa verde, chorizo, shredded mexican cheese, topped with grilled chicken, shredded lettuce and some avocado. It was amazing, especially after a killer OTF workout!

    Mishap….making gazpacho which I *thought* would be a super simple, veggie-packed weeknight side. BF isn’t crazy about having ALL THE VEGGIES ALL THE TIME, and loved the gazpacho at a local mexican place. So, I put it together, added a little extra vinegar since we like tang. It was instantly way too acidic. After aforementioned sweetheart BF tasted it and asked what I thought of it, he suggested a little baking soda to take the acid down a notch. I added a half tsp, it helped but not enough. Added another half tsp, still needed a little. Added a third half tsp, put the lid on the vitamix and started blending. Instant gazpacho volcano started to form, and my lovely soup went down the drain. First cooking fail since we started dating, and we had hot bar that night ๐Ÿ™‚

    This looks so good! I grew up in Indiana and I KNOW our Pizza Hut Book-It buffet had taco pizza on it! I now live in Michigan and I don’t think many of the pizza places up here have it, but now I’m curious and will keep my eye out for it! I love the simple combination of two great loves!

    Do you season your bob’s red mill pizza crust? We use the namaste brand, which is great, but takes foreverrrrrr! Any other pizza brands you know that have a good gf crust? ๐Ÿ™‚

    I never knew this until I went away to college, but apparently taco pizza is a Quad Cities (Illinois/Iowa border) specialty. I only had it once or twice, but it was pretty good.

    I’m from Oregon and plenty of pizza chains and independent pizza places have taco pizza here! I actually made pizza too the other night! Ready made crust from grocery store, one was BBQ Chicken (bbq sauce, diced cooked chicken, red onions, green onions and mozz), and the other was Turkey Sausage (alfredo sauce with cooked bulk hot turkey sausage, mushrooms, black olives, and mozz. Plus red onion and peppers for the adults). Most of my family doesn’t like marinara sauce, weirdos! ๐Ÿ˜€

    I LOVED taco pizza growing up (I’m originally from KY), it was my favorite thing to get on family pizza night! It’s been years since I’ve had one, though…I need to make this soon!

    I need to make this Gina! I made your shrimp and sausage jambalaya last night and it was AMAZING! So quick and easy, i was able to throw it together after i got home from work! I am totally surprised at how much spice 1/8 of a tsp cayenne gives:)

    GIna-I made this for dinner tonight! I did one pizza with just the sauce and the other with refried beans and sauce stirred together. Everyone agreed that the one with refried beans tasted a little bit better. As a native San Diegan the only mexican pizza I’d ever hear of came from taco bell, haha….thanks for the recipe!
