It was a day

To switch up my usual long walk with a DJ dance cardio class

(something about Pitbull and booty-shaking makes a day so much better)

to test out out my new infinity scarf

and to take my first chance with Thai cooking.

Indian food Wednesday has been gone for quite a whileโ€ฆ but maybe Thai Thursday could be taking its placeโ€ฆ.

I even stopped at the Asian market to get a few ingredients:

The Pilot has been fighting off a wintery cold/ick for a couple of weeks, so I wanted to make something comforting and spicy to help kick it. I used this recipe for Thai shrimp curry, using chicken instead of shrimp. Other changes: a sweet onion instead of shallots and pre-made curry paste. Emeril wanted me to make my own, but that would be a little overambitious for my first time. I also nixed the Thai basil because the huge Asian market which would have it is about 45 minutes away, and I wasnโ€™t about to go on a wild basil chase.

To my surprise, it was extremely easy to make, the house smelled incredible, and the flavors were authentic.

I chopped the veggies and added the ingredients,

and the rice cooker was hard at work with some brown jasmine rice.

The finished product:

On a bed of brown rice, topped with cilantro, it was perfection.

Whenever we have chicken (or salmon, or something else Bell can eat), weโ€™ll cook a small piece for Bell on the side. I totally spaced it last night.

Sorry Bell, no chicken for you.

She did have some brown rice and leftover sweet potato, though ๐Ÿ˜‰

    Do you always cook your rice in a rice cooker? I am HORRIBLE at cooking rice and am thinking of purchasing one, any pros/cons?

      i always seem to mess up rice, too, so it makes it so much easier! i love it because you can cook any grain in it (quinoa and oats turn out fantastically) and it’s easy to clean. no cons that i can think of, except the fact that it’s pretty big, but we store it in the pantry. i got it at costco for $40 and have used it so many times

    That dinner looks AMAZING! Trader Joes has a great bottled red curry. I like to put it in the slow cooker with chicken, then add veggies. So low maintenance! And so yummy ๐Ÿ™‚

          yep- i need to do a tutorial post but it’s super easy. soak the beans overnight. rinse in the morning and add to slow cooker with enough water to cover. add lots of salt, cumin, and whole heads of garlic with the tops cut off. cook on high 4 hours, low about 3 hrs

            i toss it. i thought about trying it last time, but it was brown from the beans and looked kind of disgusting. it flavors the beans so well, though!

I was searching for some pregnancy related stuff and the search led me to ur blog, Its been fun folowwing ur journey and i look forward to see ur life with the little princess or the little fitnessista if i may say.I take a lot of inspiration from u and would wanna try to do similar things and activities during my pregnancy, is we get pregnant.(we are trying since 2 months,lets see whats in store)
    About the rice cooker, I wanted to know how do u cook brown rice in it,the water measurements? we have been eating brown rice since 7 months now, but i cook it in an open vessel on the stove top, Want to try to cook it in the rice cooker, how do i do that?

      for the rice cooker, i cook the rice with the same measurements as i would on the stove- 1 part rice, 2 parts water. last night it was 1 1/2 C rice, 3 C water. super easy!

    Gorgeous scarf! The colour, the knit – love it! Express is a great go-to for things like that :).

    I am in love with Thai food and have made a couple of curries myself using coconut milk as the go-to ingredient to give it that ‘Thai’ flavour – add coconut to anything and suddenly it tastes exotic. I too though heavily rely on the store-bought pastes. I’m not up to Emeril’s standards yet!!

      Snood and eternity scarf are the same. Snood isn’t a mash-up, it’s just a very old word for that type of garment.

    I love making my own Thai curries! I was really surprised at how easy it is too. But that might be because I always use premade red curry pastes. I’m sure making your own is a lot harder, but I really want to try it one time!

    I love lululemon clothes & since you are a former lulu I was wondering what you thought about this? The article seems pretty 1-sided and I haven’t looked at other sources, but I was pretty apalled by what the author was saying (if they are correct). What was your experience like as an employee??

      i’ve read that article, and was unaware a lot of the things that were brought up or had learned something differently. for example, for the “l” thing, we were told he chose a word with lots of l’s because it’s supposed to bring luck.. he wanted to have as much luck as possible, so chose a word with many l’s.
      i do agree that it’s a highly-competitive atmosphere and they focus on hiring type a’s (i worked there! haha), but it’s also a very welcome and kind environment. my managers in orlando were incredible, and i made many amazing friends from working there.
      as far as the other things addressed in the article, it was eye-opening for me to do some research and see what the dealio is.

My husband is your run of the mill super perfectionist and always uses 100 ingredients in his Thai cooking, so this is a PERFECT recipe for ME to try …SIMPLE.
