What’s cookin’?
2 hour kitchen blitz:
Greek-style quinoa salad (lentils instead of chickpeas)
(the same I made for the last baby meal)
and my favorite chocolate chip cookies, which ended up looking like pancakes. Still taste good, though ๐ Iโve had a few kitchen fails lately, including the brownies … I guess itโs bound to happen the more I cook.
I love making meals for friends who just had babies. Weโll have the same thing for dinner and the food is ready and waiting for the Pilot when he gets home from work. I saved him some cookie dough for a pizookie when he gets home, too.
A little lunch:
and finally tried my first of the Uber Larabars!
The verdict:
Not too sweet, pleasantly salty and a crunchy texture. As much as I like the original Larabars, I have to be in the mood for a mushy bar. These will be amazing when I want a little crunch- would be excellent on top of yogurt or oats. The nutritional stats are similar to the originals, but the Ubers have a bit more sugar since many have added brown rice syrup and honey.
Iโve spent some time today day working on new stuff for the month of June โI know weโre still in May but thereโs a lot to look forward to!- and am starting to put together the Summer Shape Up. Iโm off to test out the first workout and then home to get my stuff ready for work tomorrow. Wednesday is a โwind down to the weekendโ time for many people, but for me, Wednesday = Monday. Itโs nice to have a relaxing Monday and Tuesday with my favorite girl, though ๐
Hope you have a great night and Iโll see ya in the morning with a giveaway!
xoxo

This is totally random but: did anyone else used to play Oregon Trail when they were younger? The Pilot and I were talking about it last night. Fond memories of computer class, haha. I would always go at a โstrenuous pace,โ ford the river even if it was too deep, and not stop to rest when Jonathan Taylor Thomas had dysentery. Obviously, I didnโt take it too seriously.
Looks delicious…can you make a baby meal for me?! ๐
I’m going to make both of these since I drool every time I see them on your blog!
of course!
Hahaha, totally LOVED playing Oregon Trail! I remember them being on the huge floppy disks when I was in 4th grade…man that was so long ago. My friends and I actually brought this up just recently ourselves ๐
haha floppy disks! those were the days ๐
That was my favorite game as a kid! At lunch time, they would open the computer lab on certain days for us to work on home work or play games. You can bet that I was first in line. Was it just me, but was hunting for food SO not worth it ?! I miss that game!!! Fortunately I’ve replaced it with Diablo 3. ;0)
This site really helps with solving your cookie “problems”. If you find what your cookie looks like in the picture, it tells you what you can do differently to fix them. Not sure if it works for G.F. cookies, but it’s worth a shot.

Enjoy ๐
oh thank you!
Haha I remember playing that game all the time on indoor recesses in grade 5! I always died of typhoid fever though. ๐
LOVE LOVE LOVE Oregon Trail….ahhh, those were the days!
OMG!! I haven’t heard anyone talk about Oregon Trial in forever. I loved that game but could only play it at school in computer class!! LOL I tried sooo hard to get it on my home computer. That is hilarious that you mentioned it. This might sound morbid, but I loved to go hunting and trying to kill the buffalo for my food stores. I am a serious animal lover though so don’t judge!! Good times!!
BTW .. I read your blog religiously, I just rarely comment but your Awesome, your daughter is beautiful, and I am really happy that you and the Pilot are enjoying your lives together. I was thinking about you yesterday b/c I know you mentioned in your story that you had been in unhealthy relationships (as I am now) and how it was so great that you found the right person that you want to share life with.. I hope I can have what you have one day!! Keep Rockin Girlie!!
I made your stuffed chicken recipe the other day–so delicious! And very easy for a non-cook like me ๐
Please please do a tutorial on how you style your hair. It’s gorgeous!
Ditto on the hair! Would love to know how you style it!
I LOVED Oregon Trail! I did the same as you, except that I always tried to caulk the wagon and float it. I always gave them ridiculous, old-timey names, too.
That kale salad looks delicious. I need to get back in a salad swing. I haven’t made one in weeks.
I totally had JTT on my team too!
I’ve heard rumors you can play Oregon Trail on Kindle Fire…makes me want to get one just for that!
Love your top in the first photo. Where is it from?
Same question! Must have it! Thanks!
Your Greek quinoa salad looks amazing! I MUST make this! ๐
I already follow you on open sky. My current favorite ways to sweat are urban rebounding and lifting weights. I want to try some of your foam rolling suggests for the upper body. I have used it for legs, but never know how to contort myself to roll out my arms haha Hope I win!
I’m not kidding when I say I totally had a person named JTT on Oregon Trail!
your hair looks beautiful! i am totally ordering a set of those hot rollers you use…curling irons don’t hold my curls as long as they should because my hair is too long.
Hey there, How do you cook your lentils for the greek salad? Would canned lentils work well (rinsed)?
OMG I was an absolute Oregon Trail addict! I bought Oregon Trail II which had a way more impressive interface and you were able to stock up on so many more supplies and from so many different towns! You got to go into the stores and look around at the shelves – think what they could do with today’s technology if they re-made Oregon Trail! I really hope they do. It always depressed me when someone died because the two options: “Stop and give them a proper burial”, “Leave the body and continue on”. Haha, I definitely did the latter on more than a few occasions. I was pretty ruthless!
I loved Oregon trail…I used to name the characters after my ex-boyfriends and would laugh when they died. So mean, but it was 5th grade drama so it’s ok. ๐
Just have to say I am in LOVE with the Trader Joes Kale Salad…I just had it today. Have yet to try Uber Lara bars, but am excited for them.
OMG totally remember the Oregon Trail…I remember playing it in school. haha too funny
and those cookies look great!!
Gahhh, I used to LOVE the Oregon Trail! SO FUN.
Okay, now not to be debbie downer, but have you heard that news lately that brown rice syrup in a lot of products contains higher levels of arsenic than are generally recommended? My mom actualy told me after reading it somewhere. Anyways, I stopped buying Luna Bars and others with brown rice syrup for a while, but I’m not sure what to make of it.. and I miss my fav bars. What are your thoughts on it all (if you’ve heard about this)?
i did hear of that when it first came out. it definitely made me wary of brown rice syrup, and i’m careful about how often i consume it, which is very rarely. i figured that the small amount in an occasional larabar is nbd
Loooved the Oregon Trail. My coworker and I were just talking about that today…how the oxens always died when forging the river.
Your lunch salad looks so yummy! Do you have a recipe for this one? ๐
I played Oregon Trail too!!! It was my favorite game ever. “You have died of dysentery.” I wish they still produced that so I could buy it for my niece. ๐
