8/19: Meals and Fitness for the week
Hey guys! Hope you’re having a wonderful weekend!
Thank you so much for all of the sweet anniversary wishes. We’ve been enjoying a lovely staycation as a family, and had a great night out last night.
I’ve got a Family post going up this afternoon and will have lots of pics of the day to share, but in the meantime, here’s my tentative list of meal ideas and fitness for the week.
Recipes:
Shrimp spring rolls with spicy almond butter sauce (since I didn’t make the spring rolls last week and have shrimp in the freezer)
Dinner with Lisa
Spinach and mushroom crustless quiche
Dinner with the girls after the dance show
Grocery List:
Berries, fruit, bananas
Salad greens (3)
Deli meat
Chicken (4)
Goat cheese
Mushrooms
Eggs
Pizza ingredients (BBQ chicken with cilantro and red onions)
Tempeh
Milk
Brown rice tortillas
Salad beast ingredients- whatever looks good
Prep ahead:
Grill chicken for salads and wraps
Quinoa and lentil mix
Fitness:
Sunday: OFF
Monday: 6 mile run with Rhinaย Instead: 30 minutes on Stairmaster
Tuesday: Jump rope strength circuit –Meg and I tested it out yesterday and it will be up tomorrow- nice and SWEATY ๐ Instead: 15 minutes of strength circuit, followed by 45 min hip hop class
Wednesday: Teach Zumba
Thursday: OFF (dance show night!)ย Instead: Took a 45 min bootcamp class
Friday: Jump rope strength circuitย Instead: OFF
Sat: Teach Zumbaย Instead: teach Glide + 20 min HIIT

I recently had quinoa for the first time! Definitely will prep some ahead next week. I’ll be having lots of time as I will hand in my bachelor’s thesis tomorrow….Aaaaah. Yeah!
Looks like some good eats are in store for this week! I love making pizza on the grill! SO much more energy efficient then turning on the oven!
I’ve had spring rolls on the brain too. Think I need to plan those for next week since I’m pretty set for this week.

I just finished prepping my salad beast lunches for the week. Next up, I need to make some almond butter, energy bites and quinoa. I need to be better about planning dinners, so I’m going to make a list of ideas right now. Way to get me motivated! Thx!

I’m making a chicken and vegetable curry that should last me at least a few days. Looking forward to seeing how it comes out!
Glad you guys had a great night out. Staycation as a family and then going out – sounds like a nice, low-ish key way to spend an anniversary. Congrats again on your 5 yrs!

Making turkey chipotle meatloaf tonight to take for a baby meal + enough for us for dinner and lunches; green curry with chickpeas and farmers market veggies for mid week, and lots of eggs, salads, fruit, nuts, and Greek yogurt in between. Workouts are on the calendar as well!
So far, for the week I’ve got salmon burgers and lasagna on the meal plan – we’re leaving for the weekend so I won’t plan out too much.
Question – do you plan your menus around what you feel like, or do you take sales/deals into account?
We are drowning in zucchini so most of our meals will be surrounded by that. We plan to have steak tacos, shrimp, asparagus and gnocchi, honey garlic chicken and teriyaki pork chops.
Those shrimp spring rolls sound fabulous! There’s a cauliflower mac n cheese recipe I want to try out this week, and I think I want to attempt making my own sushi!
We’ve been trying to grill chicken at the start of the week and use it for lunches and such throughout, but I have been trying to figure out how long the chicken will keep in the fridge. Any thoughts? We marinate the chicken in Italian dressing and fajita seasoning. I’ve seen some sites that say you have less time to eat it when there is sauce or gravy on it. Thanks for your thoughts!
Can you recommend a good jump rope for a short person? I’m 4’11’. Yes–I’m a shorty. I feel like every jump rope I’ve tried is too long for me and my feet get caught in it–or I’m just a bad jump roper–lol. When I do ZWOWs or Bodyrock type workouts I do the imaginary thing or use 1-pound dumbells. But I’d like to start actually jump roping. What do you use? Thanks! ๐
Your grocery list sounds so similar to mine! I just finished cooking up some meat to have on hand for the week, roasting carrots, and made PaleOMG Paleo Chicken “Nuggets”.
do you practice your zumba classes? how much time does the ‘trying out’ time amount to? i’m always curious since i see my instructors at the gym practicing quite a bit, but they have multiple classes a day a few times a week. i always think to myself, ‘yeah, if i worked out 17 hours a week i’d look like that too!’ lol me = hater
practicing for zumba for me means choreographing in my brain as i listen to music and drive haha

Just roasted some eggplant for the week and baked some Turkey Bacon, Trader Joes Brand (I bake it ahead of time, and then put it in the freezer, and take some out as needed, works really good.) I think I will roast some carrots and onion next, they are lingering in the refrigerator, so I may as well put them to use!
I hard boiled eggs, cut up pineapple, cooked some bacon, and planned meals for a few weeks.
As for fitness plans for the week, I have one distance run, one short run, two crossfit sessions and some additional weight lifting planned. One of my goals this week is to work on my warm up routein as its kinda non existent right now.
My kids love that bbq chicken pizza.
WO this week include your august wo, yoga, a couple runs, a zwow, a couple days of weights, and two days of rest!
Eats – breakfasts: smoothies, cereal, scrambled eggs with veg and goat cheese, and some HEAB muffins.
snacks: smoothies, choc coffee snack cake, larabar, hb eggs, fruit, amazeballs, yoghurt, and trail mix
lunches: lentil quinoa salad, carrot beet burgers, salad with burger and veg, gazpacho
dinners: tacos with guac, curry and socca, southwest mac and cheese, miso tofu with snap peas

So not organized this week – happens when I spend sunday at my boyfriends. But plan is to prepare some vegan burger patties and freeze them, also some gluten-free grains and baking (I want to see if gluten might have something to do with recent stomach or head aches of mine), dried fruit and nut bars and I aimed to try thedivadish’s frozen banana pb cookie ice cream for a while as well as the avocado ice cream recipe from thepuretwins – so this might be a quite ice creamy week, just appropriate with these 100 degrees out there.
Zumba question! did you get ZIN 40?!! Thoughts?!!
