Fall Foodie Mood
Hey guys! How’s your morning going? <3
I started mine off with a dip into the almond butter jar and a Bikram yoga class.
Bikram was tough stuff this morning. It’s been a few weeks since I’d practiced and my body definitely let me know. My back is going to be a little sore, but it felt soooooo good to sweat out some toxins and get some juicy stretches in 🙂
Bonus: the power went out halfway through class. Seksi yoga. Haha
When I came back to the casa, I tried something new for breakfast:
MILLET!
I love millet bread and I’ve had cooked savory millet before, but have never tried it in lieu of oats.
The texture was a little grainy and fun – I liked it 🙂
Work is a little earlier today (since I get out earlier!), so I packed up a quickie lunch courtesy of my personal chef.
Amy’s Mac n’ Cheese with Daiya cheese
+ Salad with grape tomatoes, bell pepper, cucumber, carrots and Garlic Gold
I’ll just heat the mac n’ cheese, plop it onto the salad and feast away 🙂
I’m out, but I hope you have a wonderful day! See ya later with a Reader’s Request post <3
Hi ho, hi ho…..
xoxo,
Gina
Something to talk about: Fall recipes!! Since it’s officially November and fall is (kinda) in the air, I always get the hankering to make autumn recipes around the beginning of November.
Some of my tried and true faves:
–Black Bean and Sweet Potato chili
–Pumpkin cheesecake with gingersnap crust
Things I can’t wait to try:
–Butternut squash and black bean chili in pumpkin bowls
What’s on your to-make list this fall?? Any other recipes you can’t wait to bust out again? Feel free to link it up- I’ll approve the comments that don’t go through right away when I get a break at work 🙂
i just tried a Giada recipe for butternut squash soup – SO GOOD, and SO easy! it calls for chicken stock but i’m sure you can “vegify” it by subbing veggie stock. definitely a winner:
http://www.foodnetwork.com/recipes/giada-de-laurentiis/butternut-squash-soup-with-fontina-cheese-crostini-recipe/index.html
i didnt make the crostini but those look great too!
I just made some butternut squash salsa: http://www.howsweeteats.com/2010/11/01/butternut-squash-salsa/! I also made some autumn mac and cheese… I’m in love with the fall fruits and even some of the veggies! More pumpkin treats are what I’m looking forward too, but I’m also ready for PEPPERMINT!
I definitely want to make those OSG cakes in jars — they look so good!
Did you just soak the millet in almond milk or did you cook it first?
That is weird the power went out in Yoga, it would of made more sense on Halloween! 🙂
I love your “personal chef”- winkwink, awesome.
I like the sound of your Fall meals!
I look forward to my Pumpkin Soup, Chili, Pumpkin Bars, Chestnuts to go with everything, and I have been loving Persimmons. 🙂
Have a great day!
i can’t wait to make the cake in a jar…and play around with the great recipes!
I always get excited for casseroles and homemade soup in the fall. Being in Wisconsin, I started fall recipes mid-September.
On a side note, I would LOVEEE it if you posted the recipe for your raw pumpkin pie. It looks so yummy!!
My favorite right now is my Pumpkin Pie Oats!! http://willrunforbooks.wordpress.com/2010/10/06/dessert-for-breakfast/
This soup may not have your typical fall flavors, but soup means fall to me! It is a spicy thai coconut-lime soup with chicken (or shrimp)! http://anutritionisteats.com/thai-coconut-lime-soup-with-chicken
I LOVE your sweet potato and black bean chili…had some friends try it and love it also!!
I can’t wait to make the Pumpkin Pizza Kath had the other day…mmmm!!
Yum, I almost forgot about your sweet potato and black bean chili! I made it last year, and I’m sure I’ll be making it again this year! 🙂
I can’t wait to try a lot of fall recipes!
I’m so excited for FALL foods, too! Now that it’s full-on squash season, I plan on making some butternut squash soup, and my favorite: Detox Lasagna! (recipe here: http://bit.ly/9Q0Rll)
Oh yeah, and Raw Pumpkin Cheesecake!! http://bit.ly/du3o1v
i just lovee millet. try to find puffed millet in the store, i love it when im pressed on time and can’t cook it- i love adding blueberries for sweetness, whole almonds for crunch , and just plain almond milk and topped with cinnamon. with the cooked kind i add it to pureed cooked squash (sweeter the better in my opinion, like butternut and cinderella pumpkin) and its so comforting. i like it really thick and creamy so i only add a splash of almond milk. my mom use to make that for us growing up so it reminds me of carefree days 🙂 i have a feeling you’ll like millet though, enjoy!
I need to make that raw pumpkin pie… it’s a moral imperative!! 😀
If you liked that bfast I made a pumpkin spice millet parfait you might enjoy: http://www.organicallyme.net/2010/10/more-of-my-favorite-grain.html
🙂
I love millet. Growing up my mom always served it with nut milk, cinnamon, and date sugar. Great combo.
I LOVE fall produce and have been trying to use as much of it as possible lately. A few of my faves so far are Lightened Up Sweet Potato Shepherd’s pie (http://bit.ly/9xvadp), Stuffed Acorn Squash with Turkey and Wild Rice (http://bit.ly/ayNPgu), and Root Vegetable Stew (http://bit.ly/awCYSB).
I’m dying to try all sorts of things, including a butternut squash lasagna (gonna have a look at your recipe now!) and anything to do with brussels sprouts!! 😉
I can’t wait to bake Christmas cookies again!!
I plan to make some traditional Ukrainian dishes, but try to make them slightly more healthy. I think it will be a challenge, but a lot of fun, definitely post them on my blog when it happens
mm, lunch looks delicious!
Ohh laawd…that pumpkin pie looks delish! Love the personal size pieces. Mmm. That salad doesn’t look half bad either! 😉
My new love in life is mac&cheese with roasted broccoli on top. Now that I learned how to roast vegetables, they are my new favorite way to eat them and I can’t wait to roast a whole bunch of new vegetables!!
Jen
I love the recipes you linked back to! Yours (that pumpkin pie, forgot about that one..and the pic with those cute lil pieces staring at me, mmmm, good!)
I saw Angela’s cake in a jar yesterday too…good stuff, huh!
The one of mine that I always make in the fall and it’s so fast is raw/no-bake vegan apple crumble. It’s tech not raw b/c oats are raw but it’s no bake and it’s fast and everyone likes it, raw GF vegans and cooked omnivores and toddlers alike 🙂
http://www.loveveggiesandyoga.com/2009/10/raw-vegan-apple-crumble-two-awards.html
Glad you had a dark yoga sesh 🙂 Fun! haha!
I made Angela’s cake in a jar last night…. minus the jar 🙂 It was fantasic!
Last month I made butternut squash twice baked and I can’t wait to make it again!
I just made a perfect recipe for this a few days ago! Pumpkin Apple Bread and Muffins. Famous in my family and so, so good.
http://kaitlinwithhoney.com/2010/11/02/pumpkin-apple-bread-muffins/
Pumpkin coconut bars!
And some homemade stuffing!
I am dying to go to a Bikram class..argh
I’m an infrequent poster but regular reader.
2 things:
1-you inspired me to finally try INSANITY. I’m on Day 8 and am still literally bounding out of bed at 5:30 a.m. for my date with Shaun T every morning.
2- I saw this recipe last week and thought of you, which seemed odd since I don’t know you, but it has some of your usual suspects in the ingredients list- http://smittenkitchen.com/2010/10/spicy-squash-salad-with-lentils-and-goat-cheese/ I’m making it tonight– yum.
Pumpkin muffins! I’ve been meaning to make some but haven’t gotten around to it!
Butternut quinoa risotto?!? YUM!!!! That’s a really great idea!
I’ve been wanting to try that Amy’s dish, actually!
Ohh that raw pumpkin pie sounds insteresting! I love everything pumpkin pie-y so I’ll have to give that a try 🙂
Oh yes, do make the pumpkin spice bars! You will not be sorry. Thanks for the link!
I can’t wait to start making autumn dishes!
I have been wanting to try millet too, although I haven’t actually looked for it at the store yet! Your pictures looks delicious!
I’ve made spicy boiled peanuts, chex mix, buttternut squash soup w/ blue cheese crumbles, & gingerbread w/ lemon glaze.
Oh & hot spiced tea mix.
Honestly, I’ve eaten so much squash that for the time being I’m kind of fall-reciped out! I’m sure in a few weeks for Thanksgiving I’ll be back on board, though.
Haha some of those recipes of yours are ones that I’ve had bookmarked for ages but never got around to making! The sweet potato and black bean chili is definitely something I want to make soon. 😀
One of my favourite fall recipes lately is spaghetti squash casserole. It’s pretty similar to this recipe: http://www.drweil.com/drw/u/RCP00184/Spaghetti-Squash-Casserole.html
I’m all about chili as soon as the temps start dropping! It’s yummy, filling and easy to make. Plus I love having leftovers!
I want to make a big batch of chili soon!! And I love anything with squash in it this time of year.
My man and I sat outside on Halloween night and sipped hot spiced cider (spiked with rum, of course!) and it was so fall-y and delicious 🙂
You’re an amazing cook! It all looks great =)
All the food looks awesome! I was wondering, do you ever have any problems with your mixed greens, spinach going bad quickly? I feel like two days after buying it, it begins wilting and going slimy? Any help would be great!
What is in that salad at the end of your post? It looks so good.
greens, goat cheese, candied pecans, apple or pear, balsamic 🙂
Love butternut squash lasagna…though
I have to come up with a way to do it stove top,
as my kitchen is sans oven.
my fave recipes so far this fall:
roasted veggie tart with chickpea crust (http://www.thesweetslife.com/2010/11/roasted-eggplant-and-peppers-tart-with.html)
pumpkin baked oatmeal (http://www.thesweetslife.com/2010/10/pumpkin-baked-oatmeal.html)
butternut squash ice cream (http://www.thesweetslife.com/2010/10/vanilla-spiced-butternut-squash-ice.html)
butternut squash lasagna? muy delicioso
I really want to try some kind of pumpkin cookies or pumpkin muffins. yum!
So what toxins did you sweat out?
who knows? haha
butternut squash lasagna for me too! btw, i got some daiya cheese today at WF’s…oh man, soo soo gooood!!
Is it telling that it’s the straight almond butter that got me excited the most? LOL.
Yummy eats!
P.S. I used to love having millet or quinoa cooked and then covered with almond milk, cinnamon, stevia and a pinch of sea salt. You could even add cacao and have chocolate millet!!!!
🙂
You have a great list of fall recipes going–they all look delish!
I thought I was the only one who (literally) mixed salads/veggies with my mac and cheese! Yum.
