Fall Foodie Mood

Hey guys! How’s your morning going? <3

I started mine off with a dip into the almond butter jar and a Bikram yoga class.

Bikram was tough stuff this morning. It’s been a few weeks since I’d practiced and my body definitely let me know. My back is going to be a little sore, but it felt soooooo good to sweat out some toxins and get some juicy stretches in 🙂

Bonus: the power went out halfway through class. Seksi yoga. Haha

When I came back to the casa, I tried something new for breakfast:

MILLET!

I love millet bread and I’ve had cooked savory millet before, but have never tried it in lieu of oats.

The texture was a little grainy and fun – I liked it 🙂

Work is a little earlier today (since I get out earlier!), so I packed up a quickie lunch courtesy of my personal chef.

Amy’s Mac n’ Cheese with Daiya cheese

+ Salad with grape tomatoes, bell pepper, cucumber, carrots and Garlic Gold

I’ll just heat the mac n’ cheese, plop it onto the salad and feast away 🙂

Something to talk about: Fall recipes!! Since it’s officially November and fall is (kinda) in the air, I always get the hankering to make autumn recipes around the beginning of November.

    i just tried a Giada recipe for butternut squash soup – SO GOOD, and SO easy! it calls for chicken stock but i’m sure you can “vegify” it by subbing veggie stock. definitely a winner:

I also made some autumn mac and cheese… I’m in love with the fall fruits and even some of the veggies! More pumpkin treats are what I’m looking forward too, but I’m also ready for PEPPERMINT!

    Did you just soak the millet in almond milk or did you cook it first?

    That is weird the power went out in Yoga, it would of made more sense on Halloween! 🙂

    I always get excited for casseroles and homemade soup in the fall. Being in Wisconsin, I started fall recipes mid-September.

    On a side note, I would LOVEEE it if you posted the recipe for your raw pumpkin pie. It looks so yummy!!

    i just lovee millet. try to find puffed millet in the store, i love it when im pressed on time and can’t cook it- i love adding blueberries for sweetness, whole almonds for crunch , and just plain almond milk and topped with cinnamon. with the cooked kind i add it to pureed cooked squash (sweeter the better in my opinion, like butternut and cinderella pumpkin) and its so comforting. i like it really thick and creamy so i only add a splash of almond milk. my mom use to make that for us growing up so it reminds me of carefree days 🙂 i have a feeling you’ll like millet though, enjoy!

    I love millet. Growing up my mom always served it with nut milk, cinnamon, and date sugar. Great combo.

    I LOVE fall produce and have been trying to use as much of it as possible lately. A few of my faves so far are Lightened Up Sweet Potato Shepherd’s pie (http://bit.ly/9xvadp), Stuffed Acorn Squash with Turkey and Wild Rice (http://bit.ly/ayNPgu), and Root Vegetable Stew (http://bit.ly/awCYSB).
    I’m dying to try all sorts of things, including a butternut squash lasagna (gonna have a look at your recipe now!) and anything to do with brussels sprouts!! 😉

    My new love in life is mac&cheese with roasted broccoli on top. Now that I learned how to roast vegetables, they are my new favorite way to eat them and I can’t wait to roast a whole bunch of new vegetables!!

    I saw Angela’s cake in a jar yesterday too…good stuff, huh!

    The one of mine that I always make in the fall and it’s so fast is raw/no-bake vegan apple crumble. It’s tech not raw b/c oats are raw but it’s no bake and it’s fast and everyone likes it, raw GF vegans and cooked omnivores and toddlers alike 🙂

    2 things:
    1-you inspired me to finally try INSANITY. I’m on Day 8 and am still literally bounding out of bed at 5:30 a.m. for my date with Shaun T every morning.

    Honestly, I’ve eaten so much squash that for the time being I’m kind of fall-reciped out! I’m sure in a few weeks for Thanksgiving I’ll be back on board, though.

    I want to make a big batch of chili soon!! And I love anything with squash in it this time of year.

    My man and I sat outside on Halloween night and sipped hot spiced cider (spiked with rum, of course!) and it was so fall-y and delicious 🙂

    All the food looks awesome! I was wondering, do you ever have any problems with your mixed greens, spinach going bad quickly? I feel like two days after buying it, it begins wilting and going slimy? Any help would be great!

    Is it telling that it’s the straight almond butter that got me excited the most? LOL.

    P.S. I used to love having millet or quinoa cooked and then covered with almond milk, cinnamon, stevia and a pinch of sea salt. You could even add cacao and have chocolate millet!!!!
