Breathe, stretch, pizza

Hey everyone! Howโ€™s your day treating ya?

Mine has been bueno- Iโ€™m glad Iโ€™ve gotten a lot of things checked off the to-do list!

I made some hummus for tomorrow night and saved myself a bowl to munch after Zumba with some veggies:

Holy foodgasm.. I had a bite to make sure it didnโ€™t need anything else and it tasted like heaven ๐Ÿ˜€ Iโ€™ll be posting all of the recipes for yaโ€™ll either tomorrow night or Tuesday.

Next, I did some yoga upstairs in my makeshift guest room yoga studio. 20 minute Power Yoga #3 podcast and 20 minute Lunchtime Flow #1 podcast, both from YogaDownload.com. After I was nice and yoga sweaty, I decided to make some lonchi and was hankering for PIZZA!

Behold.. the pizza of my dreams

Leftover homemade marinara from the lasagna I made last night, roasted eggplant, shallot, zucchini and tomato, oregano, 1/4 cup organic garbanzo beans, 1 serving goat jack cheddarโ€ฆ

All baked at 375 on an Ezekiel tortilla for 10 minutes, and garnished with red pepper flakes and fresh basil

When I eat pizza, I like to munch all the toppings off first with a fork, then cover the โ€œcrustโ€ with red pepper flakes,

And then tear pieces, roll them up, and feast like so ๐Ÿ˜€

I also had a salad with greens and spinach, grape tomato, bell pepper, balsamic, shallot, and 1/2 T olive oil

Deeeeeelish.

The casa is cleaned and I canโ€™t believe Iโ€™ve made almost everything in advance for tomorrow night! I NEVER do that.. no matter how much I plan, Iโ€™m usually in the kitchen cooking when people are over. Tomorrow night, all I have to do is set everything out, make the salad, and get the artichoke dip and lasagna in the oven. Oh, and drink make POMtinis ๐Ÿ˜‰

My friend Ashley are going to Ft. Lauderdale this weekend— any Ft. Lauderdale bloggies in the house?!

    I would say I’m surprised at how you eat your pizza, but I remember what you do with chips and salsa, so nothing would surprise me ๐Ÿ™‚

Lived there the first 18 years of my life and with all the visiting and summers at home I would round that up to 20. ๐Ÿ˜‰ I know some great restaurant picks for you! Sublime … http://www.sublimeveg.com/ is one of them it’s a YUMMY vegetarian restaurant. I recommend the crispy cauliflower. Nom nom nom! ๐Ÿ™‚ So good!

    owww the homemade pizza looks soooo delicious! Love it! Great toppings. I really enjoy homemade hummus too- I like leaving it a bit chunky (is that weird??). I hope funny quotes lady does a guest post- that would be awesome

    Way to go getting everything ready ahead of time! Your pizza lunch looks fabulous by the way. I tend to eat things in strange orders too – I always eat sides and then eat the main dish last. Weird? Maybe. But I like to think it’s why I’m so good at having salad with most of my meals ๐Ÿ™‚

    I made some hummus too today! haha – well not exactly the same, since chickpea makes me bloated so often. I make a bloat-free one.

    I live in Miami, and I must agree with Katy that going to Sublime is a MUST! Everything on the menu is vegan and they use organic ingredients wherever possible. The restaurant has a great ambiance too. I usually go to Sublime every year on my birthday, and it’s such a treat!

    Do you ever have sandwiches for lunch? I’m a student and right now they seem like the most portable, easy thing to pack…But I LOVE salads and am bored of the plain ol’ AB + J. Do you have any suggestions?

      hey edk,
      i’m not a big sandwich person -too much bread for me and since i don’t eat meat, i tend to stick to ab and j or ab and banana. when i was in college, my favorite things to pack were hummus wraps with lots of veggies, luna bar, pistachios in a baggie, v8, salad in a container with dressing on the side, then i would shake it before i ate it. another thing that transports well is oatmeal, if you don’t mind eating it cold. hope this helps a little!

    I miss Ezekiel tortillas!! I may have to splurge and get them this week. They’re so chewy and hearty, and so much better than any other tortilla. I love the idea of making it into a pizza. I’m going to do that asap!
