This gluten-free angel food cake is an excellent substitute for the original kind. Fluffy, light gluten-free angel food cake is perfect with coffee and would be excellent with some summer berries for dessert!

I *tried* to make a version of my uncle’s famous bolognese sauce. Needless to say, it was not the same, but still really good.

We enjoyed it with a side of sautéed zucchini and then dug into dessert, which was the best part about the meal. It’s beautiful, isn’t it?

I blame one of my work friends for my outta control angel food cake craving. She used to own a bakery and is a fantastic cook, so she surprises us with decadent treats on the reg. Last week, she brought the most perfect angel food cake in, and I had a few pieces in between classes. Basically, it awoke a beast because I’ve been thinking about angel food cake ever since.

Gluten-Free Angel Food Cake Recipe

I was really excited to try out a gluten-free version, so I looked up a recipe since I wasn’t sure where to start. I followed this recipe, almost exactly, just using brown rice flour instead of white since that’s what we had on hand.

Whenever I make a recipe, I check to see how many eggs it requires. Eggs are a valuable commodity in our house because we somehow always seem to run out before the week is over, whether I buy one carton or two.

Angel food cake is very egg expensive. Since I couldn’t see myself wasting 10 yolks, I figured I’d give carton egg whites a whirl, even though I’d Googled and read mixed results.

One of the best tricks my nana taught me about cooking: if you believe it will turn out well, it will. So I left them out at room temperature for a half hour like the recipe called for and gave them a whirl.

I whipped them up until they were stiff (on the patio since it was nap time–my neighbors probably think I’m crazy!).

folded everything together gently, and sprinkled some chocolate chips on top for extra deliciousness, and into the oven it went.

The final result? Pretty heavenly.

The texture was fantastic – not as great as Susan’s, but I’ll take it. 😉

I love angel food cake because it’s one of those desserts that reminds me of summer (especially with fresh berries!) and is one of those treats that’s naturally pretty healthy.

Caroline update: this weekend was our first weekend walk with a turkey burger bribe for each step. After Caro turned herself into a 40-lb rock statue (she’s usually about 15 lbs), she ended up riding in the Bob stroller with Livi, and loved it. Baby steps, eh?

    I made an Angel Food Cake from scratch once and it may have been the best dessert I’ve ever made at home! I was obsessed with Angel Food growing up – it was the one cake I requested for every birthday!

    What I have found works best(had many fosters) is to give lots of treats/praise while putting on the leash and while its on. I then let them get comfortable in it. Have the dog wear the leash around the house. It is something you just keep building on. Couple minutes, turn into 5 etc etc. You need to get the dog comfortable WITH the leash before walking her on it.
    **Although I would not recommend this while your daughter is awake or home.

    Also, any fosters I get, I generally do not do a regular collar. I like to use harnesses. It releases the “grip” or tension on the neck and they tend to be a bit calmer. If the dog is not used to a harness and it is a lot to get the dog in and out for walks, again leave it on. But with a harness, you can leave it on full time.

    Haha I’ve definitely pulled tricks like using the mixer outside! We often have a cocktail at night and my husband goes outside to shake it so as not to wake the bambino.

    That cake looks delish. Did you know you can make your own rice flour in the vitamix? I keep rice in the freezer so it’s already cold whenever I need some. You can google it but it’s so quick and easy and organic on the cheap if you buy rice in bulk. It was so exasperating always buying white/brown or wondering if you can mix if you are running low. Learning to make it myself has saved me mucho stress, not running to the grocery constantly and worried about bad substitution results.

    This looks so yummy! Even though I love sweets, right now I’m on a low carb diet and the pasta has me drooling. The other night my hubby made a great bolognese sauce and we put it over sauteed squash and zucchini. It wasn’t *exactly* as good as pasta, but it was a wonderful alternative that I felt good about having seconds of.

    I’m so glad to know that the boxed whites worked for this. I hesitate to do recipes where there are a million whites because I never know what to do with the yolks.

    Ooooh, those banana s’mores…my friend pre-made a bunch and pulled them out of the cooler during a rafting trip last summer. We put them in the campfire coals and had a ridiculous dessert.

    Okay, I wish I could use a mixer outside. Pennsylvania got snow yesterday!! ugh. And my go to dessert is chocolate and coffee or chocolate and peanut butter. If one of those two combos is offered I am all over it.
    I love that Caroline rode in the stroller with Liv! I think we need a picture next time!

    That angel food cake looks amazing! Have you tried double harnessing bell and caroline? We did that with my puppy when he was too scared to go on walks and now he loves them.
