Chicken Tortilla Soup for the Soul
Little lovebug woke up coughing yesterday. Thankfully, as of now, it sounds fairly superficial -like a little summer cold/ick- but I’ve been trying to think of ways to soothe her throat and stop the coughing. She had some warm mint tea in her sippy cup yesterday morning (loved it!), and for dinner, it was chicken tortilla soup. A little spice always help with any ick that comes our way, and for the child who now won’t eat her breakfast eggs until I put tiny dots of sriracha on them, let’s just say she was a big fan.
Baked plain chicken set to cool:
(375 for 20 minutes with salt, pepper and olive oil)
and in a large pot, I sauteed 1 chopped sweet onion, 1 can chopped green chilies, 1 teaspoon oregano, two cloves minced garlic, salt and pepper.
When the onions were translucent, I added 2 cans of drained diced tomatoes with green chilies, 1 carton of chicken broth and brought to a boil.
While it was boiling, I chopped the chicken, added it to the mix, covered it and let simmer for 20 minutes or so. Just before serving, I added in two cans of black beans, more salt, pepper and oregano to taste.
Put tortilla chips and avocado in bowls (cheese for the Pilot, none for Miss Livi since dairy isn’t the best when you’re coughing),
topped with soup, and served with fresh chopped cilantro and lime.
Super simple and soooo delicious.

Ingredients
- 2 chicken breasts
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp oregano
- 1 can chopped green chiles
- 2 cans diced tomatoes with green chiles, drained
- 1 carton (4 cups) chicken broth
- 2 cans black beans
- salt and pepper to taste
- Tortilla chips
- Avocado, sliced
- Cheese (optional)
- Cilantro, chopped
- Lime
Instructions
- Preheat oven to 375.
- Season chicken with salt and pepper and bake for 20 minutes.
- While chicken is baking, in a large pot, heat oil or butter and sauté garlic, oregano and onions until translucent.
- Add chiles, tomatoes and chicken broth, and bring to a boil.
- When chicken is done, chop into bite sized pieces, then add it to the pot.
- Just before serving, add two cans of black beans.
- Salt and pepper to taste.
- Put tortilla chips in a bowl, top with cheese if desired.
- Pour soup on top, sprinkle on fresh cilantro and a squeeze of lime.
Other Happenings
CrossFit bright and early this morning.
I flipped a tire! It’s funny because at work I show guests how to flip a tire for our bootcamp class, but I’ve never done it for my own workout. It killed me in the best way possible. I’m just gonna walk around flipping heavy things now, mmm k?
I also got the chance to test out my new Nanos that Reebok sent per our partnership. They’re my sponsor for the IDEA conference, and basically it was Reebok Christmas over here. I’ll show ya all the goods next week, but definitely wanted to showcase these shoes today. I have another pair of Nanos, and the recent ones I received are equally amazing. For cross training, Nanos are my favorite shoe, hands down. SOOOOO light, comfy, and supportive enough for weightlifting and quick cardio. (I pronate so I wouldn’t wear them for long distances.)

I did my first real crow pose! I have been practicing that one forever and thought I would never get it, so I was proud!
Last night I was dead tired after 2 rounds of a leg workout, but I surprised myself and gave it my all to make it 3 rounds..no regrets except for the sorest legs ever today!
My recent accomplishment is mastering my forearm stand in yoga. It’s so empowering to be able to do that pose!
My most recent workout accomplishment was teacher training on the Pilates Reformer. But I’ve also been living cardio classes lately and new kicks would be awesome!
I recently upped my weights in the gym and it feels great!
I am a huge runner. but have had a stress fracture in my foot for the last 4 weeks! I have been trying out all different workouts in the interim-totally obsessed with the stair climber!
I got a 200# back squat earlier this month – something I’ve been wanting for years!
I started weight training again this week in combination with my normal cardio!!
I’ve been looking for some new sneakers for cross training so these would be FAB!! I have been working on my handstands in yoga and I did one today on my own WITHOUT the wall!! Super exciting 🙂
I increased my amount of daily walking from 3 to 6 miles this past week.

My husband and I just bought road bikes and this weekend we rode over 20 miles. I think the last time I rode a bike was over 15 years ago so I am super proud and I didn’t fall! WIN!!
I ran a 2:20 half marathon! (A PR for me!)
During the nice summer weather here I have been running while pushing my three kiddos in the stroller. I usually just walk but have decided to add some extra challenge by turning part of it into a run. The stroller plus kids totals about 120 pounds so it is definitely a good workout!
I FINALLY took my first Zumba class and I loved it!!! Already looking forward to going back next week!
I am doing my swim laps with less breaks during my hour of laps. It feels great to also push my self to get more laps in!
My recent workout accomplishment is getting back into cycling. I did 15 miles Sunday and 11 today. Heading out again Thursday!
I’m finally able to jump rope for multiple minutes at a time – such a long time in the making and I was so surprised when the breakthrough happened that I just kept going with a huge smile on my face! Thanks for hosting this giveaway 🙂
Yesterday I did my first “2 a day” in a while. Did an hour of heavy weights and the stepper in the morning and Zumba at night. I was exhausted but felt great!!
Wahoo! What a giveaway! A recent accomplishment of mine is running my own (solo) marathon after the one I trained for was cancelled due to the highway being washed out with the biggest flood in 100 years in Calgary. My mom and husband biked behind and in front of me the entire way while I trucked along!
I’ve trained the entire month in a weighted vest in prep for Spartan Race. Not one day without it. No exceptions! Aroo!
I went to zumba tonight and we have a new instructor and she can shake it. Zumba here in florida is way more intense than in Idaho, I love it.
I cut my running time on the Sea Cliff trail from 1 hour to 45 minutes. Would love new sneakers as mine are 5 years old.
I hit a new overhead press PB this morning at crossfit 🙂 getting stronger everyday
I can lift at least 20-30 more pounds now (depending on the exercise) than I could when I started CrossFit 2 months ago!
I just completed a portion of the Camino de Santiago in Spain. While not really a ‘workout’ walking that much was a huge fitness accomplishment for me!
Biggest workout accomplishment is a 2 minute plank! I’m slowly working my way up to at least 5 minutes!
My biggest recent workout accomplishment is completing Insanity’s 60 day workout! It was tough, but I felt so much better on a daily basis being so in shape! I would like to start running soon too, hopefully a 5k to start!

Training for my first 10 Miler race. The most I have ever done is a 5 mile race so from here on out every run will be a PDR!
These days my biggest fitness accomplishment is twofold: the bike rides I can’t wait to complete that are getting longer in length and shorter in time it takes me to do and then there is my Physique 57 dvd’s which I am starting to be able to complete without screaming at the tv and without the muscle pain the next day and day after that – progress.

I ran 4 miles (for this first time since rehabbing a shoulder injury that flared with any jostling movement) through the park by our new house, in 102 degree heat!!!
I just got a new pr for my back squat – 233#!
For a little over 4 years I was really consistent at daily morning (5am) workouts but the least 9 months or so I totally lost steam. I basically took a huge hiatus from the regular gym and dabbled in bootcamp classes for a bit. But two weeks ago I kick started myself and I’m falling back into the morning groove. It feels wonderful! 🙂
After a long weekend relaxing in Wisconsin’s north woods (and indulging a bit too much as well…) I jumped back into my fitness routine with a refreshing 5 mile run! Love the Reebok sneaks and love the blog even more–so inspiring!
Biggest workout accomplishment lately is becoming a runner outside of playing sports. The last 3 weeks I have ran 3.5 miles at least 2 days a week! I hope to do my first 5k with my husband in the next couple months!
I got back into yoga tonight. I was proud that I hit a very difficult arm balance, until I realized my center of gravity was off and my pose quickly turned from an arm balance to a face-plant/belly flop. Luckily, this is pretty standard in my yoga practice. I can’t wait to go back!
I am finally feeling better in my 2nd trimester, I’ve added running to my walks and doing online barre3 classes!
I lost ten pounds and am getting toned
I did 100 rope jumps without getting tangled. I know it does not sound like much, but it is a big deal for me. I haven’t done much rope jumping since I was a kid until last year (!) on a shape-up. I was really lousy and got tangled in less than ten jumps. I spent most of my time trying to get the rope ready for my next jump. I was discouraged and decided it is not for me. But this summer I decided to practice and get better. I thought it was just about lack of coordination, but my legs surely have gotten a lot stronger! (One tip: always, always, wear a good sports bra.)
I’ve woken up at 5am for a morning workout everyday these past 2 weeks!
I ran for 40 mins straight for the first time since my c-section tonight! Felt AMAZING! 😀
I finally made it through 5.25 straight miles this evening! I’m determined to train my way to a 10K!
I’ve been doing arm exercises, and I’m finally starting to see some definition! Even better? Other people are as well! Whoop!!
For the past few months I’ve been doing the same workout routine, mostly running at the gym and using other cardio equipment. I keep telling myself that I need to mix it up a little, with weights and circuits! Today, for the first time ever, I completed a jumping rope circuit and it felt great
I went for a run in my neighborhood for the first time in FOREVER and got about 4 miles!
I don’t like shopping shoes in general, but I like shopping fitness shoes for every kind of sport!
