Chicken Tortilla Soup for the Soul
Little lovebug woke up coughing yesterday. Thankfully, as of now, it sounds fairly superficial -like a little summer cold/ick- but I’ve been trying to think of ways to soothe her throat and stop the coughing. She had some warm mint tea in her sippy cup yesterday morning (loved it!), and for dinner, it was chicken tortilla soup. A little spice always help with any ick that comes our way, and for the child who now won’t eat her breakfast eggs until I put tiny dots of sriracha on them, let’s just say she was a big fan.
Baked plain chicken set to cool:
(375 for 20 minutes with salt, pepper and olive oil)
and in a large pot, I sauteed 1 chopped sweet onion, 1 can chopped green chilies, 1 teaspoon oregano, two cloves minced garlic, salt and pepper.
When the onions were translucent, I added 2 cans of drained diced tomatoes with green chilies, 1 carton of chicken broth and brought to a boil.
While it was boiling, I chopped the chicken, added it to the mix, covered it and let simmer for 20 minutes or so. Just before serving, I added in two cans of black beans, more salt, pepper and oregano to taste.
Put tortilla chips and avocado in bowls (cheese for the Pilot, none for Miss Livi since dairy isn’t the best when you’re coughing),
topped with soup, and served with fresh chopped cilantro and lime.
Super simple and soooo delicious.

Ingredients
- 2 chicken breasts
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp oregano
- 1 can chopped green chiles
- 2 cans diced tomatoes with green chiles, drained
- 1 carton (4 cups) chicken broth
- 2 cans black beans
- salt and pepper to taste
- Tortilla chips
- Avocado, sliced
- Cheese (optional)
- Cilantro, chopped
- Lime
Instructions
- Preheat oven to 375.
- Season chicken with salt and pepper and bake for 20 minutes.
- While chicken is baking, in a large pot, heat oil or butter and sautรฉ garlic, oregano and onions until translucent.
- Add chiles, tomatoes and chicken broth, and bring to a boil.
- When chicken is done, chop into bite sized pieces, then add it to the pot.
- Just before serving, add two cans of black beans.
- Salt and pepper to taste.
- Put tortilla chips in a bowl, top with cheese if desired.
- Pour soup on top, sprinkle on fresh cilantro and a squeeze of lime.
Other Happenings
CrossFit bright and early this morning.
I flipped a tire! It’s funny because at work I show guests how to flip a tire for our bootcamp class, but I’ve never done it for my own workout. It killed me in the best way possible. I’m just gonna walk around flipping heavy things now, mmm k?
I also got the chance to test out my new Nanos that Reebok sent per our partnership. They’re my sponsor for the IDEA conference, and basically it was Reebok Christmas over here. I’ll show ya all the goods next week, but definitely wanted to showcase these shoes today. I have another pair of Nanos, and the recent ones I received are equally amazing. For cross training, Nanos are my favorite shoe, hands down. SOOOOO light, comfy, and supportive enough for weightlifting and quick cardio. (I pronate so I wouldn’t wear them for long distances.)

have made it a point bang out my work outs first thing in the am 6 days a week for the past month (even if its just 30 mins) aAnnnd have made an effort to switch up my muscles— hot yoga, crossfit etc.
I ran 5 miles Sunday. The farthest I’ve ran since last August!
I teach Zumba, and just added 3 new songs to my classes this week: 2 from ZIN 45 and 1 on my own (some choreo to Cruise) – that’s my record for one week!
I’ve been so busy this summer going in and out of town that I’m just happy I’ve made it to the gym consistently the last 2 weeks!
Everything is a step in the right direction for me these days. The fact that I love to work out is an accomplishment for me. 2 years ago that wasn’t the case!
The month of July I switched to working out in the morning because the evenings have been too hot. Every day I either went to 6am hot yoga or went for a run(3-5 miles). I am not a morning person at all so getting up every day before work was a huge accomplishment!
I recently did the monsoon workout and loved it!! My quads were on fire and so were my lats from pull ups! Definitely a keeper! ๐
a huggge workout accomplishment for me is burpees! i started hearing about them about a year ago, and when i started i could only do about 5 iin a row! now i love (hate) them and can do 3 sets of 10 ๐
My biggest workout accomplishment has been the half mile training program I am now in week four of. After having put it off long enough, I’ve committed to long(ish) distance running. My body has never felt so amazing, nor has my mind felt as equally clear. Developing a whole new appreciation for running =]
It took me waaay to long to realize that if dairy in not good when you are sick, it is not good at all! My kids and I love almond milk and daiya cheese.
I was pumped to PR at the 5k I ran this past weekend. Even more excited because it was pouring raining during parts of it!
Baby #4 is just over 4 months old and I just have 3 more baby pounds to get off! Been picking up intensity of workouts! The hubs (my pilot!!) has been gone for a month and I have still had it to the gym with all four kids 4-6 times a week! Off to hit up kick boxing tonight! Could totally use some new shoes!!! Love that I fund your blog!!
I just ran a 5k in Chicago last weekend. It was great to run along Lake Michigan and even raced with my cousin! So much fun to travel for a race!
Recent workout accomplishment is hitting 500 miles of running this year!
I shaved a solid minute off my mile time and have been able to consistently maintain that time!
I recently ran a half marathon a couple weeks ago and had not put in the necessary amount of training. It was hard! But I finished strong and happy I did it ๐
I PR’d my clean and jerk a few weeks ago! I went from 115 to 125…135+ is on the horizon!!!

Recent accomplishment… Hmm, well I’ve been really consistent with my workouts over the last few weeks. I rocked “Nancy” last week at crossfit. I did the overhead squats as RX, unbroken!

I used to be an avid runner, but then I injured my knees. I’ve been slowly getting back into running, and yesterday, I ran 2 miles! It doesn’t seem like a lot, but to an (ex) injured runner, it’s a huge milestone! ๐
My recent accomplishment was completing an early morning bootcamp (not a morning person over here ๐ ) which ended with an all burpee tabata!
I swam for an hour in open water! So fun!!
There aren’t any barre classes offered where I live, so I tried an at-home barre workout last night. I loved it! It will definitely be in my rotation from now on. ๐

Recently, I hiked 22 miles in one day – a first for me.
A recent accomplishment for me is mixing up my regular work out routine by adding some stationary bike intervals… It was tough to shake things up, but I’m proud that I did.

Started running again after a knee injury last Fall…..finally felt ready to give it a go again and it’s been great!
I got a 8 mile run and a 10 mile bike ride in last week!! And it felt amazing!!

I can now deadlift 70 lbs which is a lot for me!! I am making so much progress I am really proud!

I’m a fellow military Tucsonian on a fitness adventure; this week I signed up to get my spin instructor certification, completed 3 pullups on my own and have been incorporating my own daily yoga practice outside of the studio in preparation for the Flagstaff Yoga Festival this weekend (b/c goodness know I will be sore after day one).

Just retuned to CrossFit after recovering from an Achiiles tendon injury.
Took an insanely difficult (mentally and physically) and sweaty yoga class after a long day of work. Felt great afterwards!
I just got back from a trampoline workout at a place called sky zone! It was the most fun workout I’ve had in quite some time. Lots of laughs and lots of sweat! Would love some new kicks!

Doesn’t sound like such a big accomplishment but I’ve been battling a hip injury for 6 months and I’m FINALLY back to running 3 miles. (I went from running 30 miles a week to NO running at all)
I have been doing crossfit for almost a yr and I love seeing RX next to my time!
I just PRd on my hang power cleans at crossfit the other day — 3 reps at 110# ๐ I was super happy because cleans are my favorite and of course I love to pr!
i ran 9 miles for the first time in my life last week!! now to get up to 13, yikes!
