Gluten-Free Chocolate Chip Cookies with Avocado Oil

As someone who is always excited to expand their nutrition and cooking knowledge, I love being introduced to new ingredients or techniques. As I learn more about food and the types of ingredients and recipes that work well for our family, our grocery purchases will reflect that. Something that has made an impact on my cooking: oils and the types I’ll use for various recipes and foods.

For a long time, I’ve cooked strictly using olive oil. It’s a healthy oil option, but it turns out that it’s really at its best when served at room temperature or heated at lower temperatures. I’ve also experimented with ghee, coconut oil, and butter in our cooking, so I was excited to try out some new oils from Chosen Foods.

About Chosen Foods:

-Carsten Hagen (from Norway) founded Chosen Foods with the belief that food has the power to heal. Carsten studied naturopathy (did not practice, but has always had an interest and passion in health and wellness), and is on a mission to make healing superfood ingredients accessible.

-They have expanded from Mexico to the United States, Canada and Bolivia, and oversee the entire production of their superfoods, from field to table. Because of this, they are directly involved in the quality, supply, trade practices, and sustainability of their products.

-Their headquarters are here in San Diego! On their site, you can find the cooking oils and sprays pictured above, in addition to grains, chia seeds, avocado oil mayo (!), and snacks.

Chosen Foods sent a goodie package with cooking sprays (avocado, coconut, avocado coconut oil blend and olive) in addition to avocado oil.

What I Like About Chosen Foods Products

The sprays are BOMB. They are amazing for pancakes, stir fry, on salads (just spritz, add a squeeze of lemon, salt and pepper, and eat!), and greasing baking dishes. They have zero calories, and one to two ingredients which equate to 100% pure oil. No weird chemicals propellants or additives.

The avocado oil is one of my new favorites. It has a high smoke point of 500 degrees (where the oil starts to break down), so it’s awesome for high heat cooking,

but also a lovely unexpected ingredient in baked dishes, like these cookies!

Gluten-Free Chocolate Chip Cookies with Avocado Oil

The avocado oil gave these cookies a light, beautiful texture (they’re perfectly soft and chewy), plus a dose of heart-healthy fats. These cookies take about 10 minutes to put together, and are preschooler-approved. 😉

Gluten-free chocolate chip cookies

Ingredients

Scale
  • 1/2 cup almond meal
  • 1 cup oats
  • 1/2 cup avocado oil (or melted butter or oil or choice)
  • 1/2 cup brown sugar
  • 1/2 cup chocolate chips
  • 1/2 teaspoon baking powder
  • pinch of sea salt
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1 egg

Instructions

  1. Preheat the oven to 350 degrees and spray a cookie sheet with nonstick spray. (I used the Chosen Foods coconut oil spray.)
  2. Mix all ingredients in a large bowl until well combined.
  3. Using a large spoon, place the dough in cookie shapes (about 10) onto your cookie sheet, leaving some generous space in between each one.
  4. Cook for 12-14 minutes, until set, and allow to cool for 2 minutes on the cookie sheet before removing to cool completely.

    Those cookies sound delicious. The oil I use the most is coconut oil. I get the kind at trader joe’s that has the coconut flavor (can’t remember if this is refiner or unrefined) because it adds an extra depth of flavor. I’ve heard about avocado oil and might have to add one more bottle to my shelf. =)

    I only use olive oil but have recently been researching avocado oil! As soon as our big bottle of EVOO from Costco is gone we are going to try avocado oil! And I am definitely going to make these cookies, yum!

    I usually use extra virgin olive oil for savory cooking and coconut oil for things with sweet notes, but it has such a high burn content! Would love to try avocado oil!

    I’m in love with coconut oil. It’s still a relatively new phenomenon for me, but I’m hooked. I’ve also returned to butter after a long hiatus. Kerrygold is everything. Right?

    I need these cooking sprays in my life!! I just ran out of my trusty coconut oil spray this weekend and I didn’t realize how much I needed it until it was gone. It’s so hard to find sprays that don’t have all kinds of extra weird stuff in them – these look fabulous!

    Those cooking sprays have me intrigued. I use Kirkland right now, but obviously all natural is much more appealing. We eat eggs nearly every morning made with that cooking spray and I use it for all my baked goods as well.

    I found out about Chosen Foods Avocado oil doing Whole 30. I love it and I now use it even when not following W30. They sell it at a great price at my Costco too.

    I love avocado oil when I have it on hand because it allows me to cook safely at a very high temperature. Due to my kitchen set up I can’t cook with high temps on my stove without greasing my entire house so I usually just use olive oil.
