Chicken Tortilla Soup for the Soul
Little lovebug woke up coughing yesterday. Thankfully, as of now, it sounds fairly superficial -like a little summer cold/ick- but I’ve been trying to think of ways to soothe her throat and stop the coughing. She had some warm mint tea in her sippy cup yesterday morning (loved it!), and for dinner, it was chicken tortilla soup. A little spice always help with any ick that comes our way, and for the child who now won’t eat her breakfast eggs until I put tiny dots of sriracha on them, let’s just say she was a big fan.
Baked plain chicken set to cool:
(375 for 20 minutes with salt, pepper and olive oil)
and in a large pot, I sauteed 1 chopped sweet onion, 1 can chopped green chilies, 1 teaspoon oregano, two cloves minced garlic, salt and pepper.
When the onions were translucent, I added 2 cans of drained diced tomatoes with green chilies, 1 carton of chicken broth and brought to a boil.
While it was boiling, I chopped the chicken, added it to the mix, covered it and let simmer for 20 minutes or so. Just before serving, I added in two cans of black beans, more salt, pepper and oregano to taste.
Put tortilla chips and avocado in bowls (cheese for the Pilot, none for Miss Livi since dairy isn’t the best when you’re coughing),
topped with soup, and served with fresh chopped cilantro and lime.
Super simple and soooo delicious.

Ingredients
- 2 chicken breasts
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp oregano
- 1 can chopped green chiles
- 2 cans diced tomatoes with green chiles, drained
- 1 carton (4 cups) chicken broth
- 2 cans black beans
- salt and pepper to taste
- Tortilla chips
- Avocado, sliced
- Cheese (optional)
- Cilantro, chopped
- Lime
Instructions
- Preheat oven to 375.
- Season chicken with salt and pepper and bake for 20 minutes.
- While chicken is baking, in a large pot, heat oil or butter and sauté garlic, oregano and onions until translucent.
- Add chiles, tomatoes and chicken broth, and bring to a boil.
- When chicken is done, chop into bite sized pieces, then add it to the pot.
- Just before serving, add two cans of black beans.
- Salt and pepper to taste.
- Put tortilla chips in a bowl, top with cheese if desired.
- Pour soup on top, sprinkle on fresh cilantro and a squeeze of lime.
Other Happenings
CrossFit bright and early this morning.
I flipped a tire! It’s funny because at work I show guests how to flip a tire for our bootcamp class, but I’ve never done it for my own workout. It killed me in the best way possible. I’m just gonna walk around flipping heavy things now, mmm k?
I also got the chance to test out my new Nanos that Reebok sent per our partnership. They’re my sponsor for the IDEA conference, and basically it was Reebok Christmas over here. I’ll show ya all the goods next week, but definitely wanted to showcase these shoes today. I have another pair of Nanos, and the recent ones I received are equally amazing. For cross training, Nanos are my favorite shoe, hands down. SOOOOO light, comfy, and supportive enough for weightlifting and quick cardio. (I pronate so I wouldn’t wear them for long distances.)

I’ve had a few hikes – in the glaring sun – which I haven’t felt motivated to start but loved to finish in the last week! We have a 16 mile trail race in two weeks – so prepping has felt great!
I have ran 2 half marathons this year with two more planned for this fall!
I love weight lifting and I recently hit a new bench press PR of 85lbs! I can’t wait to hit 100! 🙂
A living room tabata circuit during baby naptime, whew!
In January I had a major operation where I was signed off for a year at least but got the green light by my surgeon a month ago to go back to work and get back into exercise more than six months earlier than expected!! Brag number one 😛
Three weeks ago I started crossfit, something I’d been wanting to do for ages and last night I completed my first Rx WoD – I finished last but everyone was standing around me cheering me on and it felt amazing! Brag number two 😀
I’m now walking around on cloud nine feeling the awesome aches of a good workout and feeding off the endorphins that I never want to end!!
Monday was a pretty good training day: barbell push press PB beaten (40kg – yay!) and even managed three rounds of 1 minute of plank – another PB beaten. Aching today but heading back to the gym for a bit of interval running.
I made it to yoga 3 times this past week (considering I had surgery on my foot yesterday). Looking at your blog from my hospital bed!
I’ve started playing tennis again! It had been years since I’ve picked up a racket, and I forgot how much I enjoy it! Would love to win these shoes and try them out – everyone has been raving about them!
I have recently tried my first crossfit style boot camp class and loved it!! I love strength training too, but this type of workout was amazing yet exhausting at the same time. I’d love a new pair of reebok shoes for my workouts!
a big accomplishment for me is that i now work out on vacations! woot woot! i dont overdo it bc were always walking, but i like to get some weights in 😀 yay for motivation!
Kipping Pull-Ups!
big accomplishment for me is my 185 lb deadlift pr!! last month was 155lbs. Oh yea baby!!
I wouldn’t say I have a specific accomplishment, but am always thankful that I am able to be active and rocked a good workout at the gym last night.
Not the greatest achievement, but I had a crazy tummy bug take residence inside me and was in bed for almost two days (except for trips to the bathroom…TMI?), so when I finally got back to the gym and did a half hour of cardio on the treadmill, I felt pretty good for getting back into it.
I am a college softball player and have been down and out with a shoulder/chest injury for the last week or so. Not being able to hit the gym and continue my lifting program as scheduled is disheartening, but instead of getting down on myself, I chose to focus on agility drills and improving my speed until the injury heals up. I realize now that I REALLY need some new training shoes. 🙂

I had surgery on my stomach muscles about 2 months ago & wasn’t able to exercise until recently. Yesterday I was finally able to do crunches & I loved it!

I started doing Crossfit a few weeks ago and last night I was able to do the whole workout with the prescribed weight for the first time! I also came in second…only my brother beat me haha. I would love to try out those Nanos for more Crossfit!
A big accomplishment as of late–not feeling guilty about taking a few extra rest days!
I’ve taken my 3 week old son on a couple of walks around the neighborhood! I’m not allowed to do much except that at this point, and for whatever reason, the thought of walking around the neighborhood feels daunting to me. I’d much rather go to the gym. But it feels good to be active, and my son enjoys the walks too!
Trained for and now ready for my first Iron Girl Tri this Sunday, August 4th, in Syracuse, NY. I’m a little nervous, but very excited, can’t wait!
My accomplishment was losing all of my baby weight in 3 weeks and continue to work on my fitness to stay healthy for my baby girl! xxxxx
I’m just about to wrap up Jamie Eason’s LiveFit program and have been lifting more weight than I ever thought possible. This week it’s been cool enough (I livein DC) to ride my roadbike outside in the morning and I saw the most beautiful sunrise over the Capitol. That made waking up at 5:30am for the last 11 weeks totally worth it!
I have been doing the strength workouts from p90x and my big accomplishment after the 60 day mark is being able to do the pull up sets without the support of a chair 🙂
Just finished insainity and am running my 13 half Marathon in 10 days. So excited/nervous. 🙂

Getting back into Crossfit after having a baby was a huge accomplishment for me! I am even down 7 pounds lighter then when I got pregnant! Love it!
#workoutbrag I just moved from San Fran to Tennessee, and did a 4-hour run — in the worst humidity ever.
I finally did my first unassisted pull-ups! This has been something I have been working on for a long time. Amazingly, I not only did one, but my first THREE pull-ups!! Nothing makes you feel B.A. like popping out some pull-ups.
I’ve done a number of sprint triathlons in the past but fell off the wagon in the past year due to life haha. I’m getting married in October and my fiancé and I are following a training plan to get us ready for a tri in late Sept. We did our first 2 hour bike ride in a long time, it hurt but it felt so good!!
I’ve gone to CrossFit twice per week consistently over the last few weeks! Feeling great!
First Pilates reformer class yesterday! I was pretty intimated of those scary looking contraptions but had a blast and an amazing instructor. I’ll definitely be back 🙂

Started half marathon training this week with a 5 mile run on Monday!
I am 19 weeks pregnant and did a 4.5 mile run on Saturday, with one bathroom break! I have been consistently working out since I found out I was pregnant, so that is a huge fitness accomplishment on it’s own 🙂
I recently joined a women’s soccer team. I haven’t played since high school, so it’s been a fun new challenge!
I burned 450 calories at a Tabata Interval Class last night – it was killer but felt great!

I’ve been doing CrossFit for about 5 months now and have seen massive improvements in my strength. Last week I was super proud when I was able to do 45 reps with 50 lbs for snatches. The first month I did CrossFit, 50 lbs was my one-rep max!
I’ve finally gotten back into kicking my butt in a spin class Monday and Wednesday mornings. On my way in a few hours!
i ran the whole way through the run at the end of a tough Olympic triathlon race!
Just ran my first 5K this weekend (charity race for a local family that lost a little boy to cancer) and clocked in at 27:16! Yay me! I realize this isn’t super fast for some but for a girl that after had her twins could barely get to the mailbox without having to stop for a walk I feel like I am ready for the Olympics;) Now I can’t wait to run it again next year and see if I can PR!!!
My latest workout accomplishment was reaching my max to-date BodyPump squat weight: 2 large and 1 medium plate on each side. That’s 27.5 kg total or 60 lbs. It may not sound like a lot in standard weight training, but when squatting continuously for a 5 minute song… that’s killer 😉
I want these sneakers!! My recent accomplishment is being asked to start teaching “Mommy and Me” type of classes at a brand new gym. Totally out of my element as I don’t have kids, but I love a challenge and will love learning how to teach a wider variety of classes:)
I have been lifting heavier than I ever have…I love grabbing the 15’s and 20’s for my arm workouts! 🙂
Today I was lucky enough to get my trainer alone (usually it’s a small group thing) and I kept up with him the whole way through without whining or wimping out!
Reeboks are the only cross-trainers that don’t mess up my weak little arches, so I’m definitely interested to check out a new model.
Rather than talk about myself, I want to give the kudos to my husband – he was noticing his clothes not fiitting like they used to so he took the bull by the horns and has been diligently exercising when he gets home from work at 8 pm (which I admire) and he’s been watching what he eats. I’m so proud of him!

I have increase my strength training with heavier weights, and I also increased my rep’s for my upper-body workout. Plus I worked out in my hotel room while on a three day work trip (3 sets of the 7 minute work out)!
