2/18: Meals and Fitness for the Week

Hi friends! Happy Sunday! Hope youโ€™ve enjoyed the weekend. We had an awesome 8 days in San Diego (another photo bomb of a post is on the wayyyyy) and itโ€™s time to head back to V-town. The longer we stay in San Diego makes Valdosta seem like it was a dream. Doing all of our laundry at the hotel and starting to pack up suitcases feels pretty surreal.

While Iโ€™m not super pumped about heading back, it will feel nice to eat some home-cooked meals again (and see Bell and Caro! Weโ€™ve missed their furry faces so much). Weโ€™ve gone out to eat a lot, and after an avalanche of cocktails, Iโ€™m ready for some more water and herbal tea in my life.

Hereโ€™s whatโ€™s on the tentative dinner menu this week:

Sunday: OUT

Monday: Chicken tortilla soup 

Tuesday: Sunbasket (Steak and sweet potato frites with kale and mushrooms)

Wednesday: Sunbasket (Chicken polpette alla marinara with pine nuts and cauliflower rice)

Thursday: Golden Soup and Kale Caesar salads

Friday: Easy garlic-lime salmon with rice and veggies

Saturday: OUT

For breakfasts and snacks, Iโ€™m going to make some more protein baked oatmeal – and take pics this time so I can post the recipe! – Paleo bread, chop veggies for salad, make a batch of amazeballs, and enjoy lots of these smoothies.

Workout-wise, itโ€™s back in the swing of teaching and doing my own thing this week. While we were in San Diego, I got to take so many fun fitness classes: Orangetheory, barre body, spin, lift weights at Point Loma Sports Club, and I even ended up subbing a spin class yesterday!

I was thrilled with they asked me to teach Saturday spin since I was back in town, and it was blast. There wasnโ€™t an empty bike in the room and the mirrors were completely fogged up when we finished. So good.

Hereโ€™s whatโ€™s on the plan this week:

Sunday: OFF

Monday: Teach Zumba

Tuesday: Legs and Abs (similar)

Wednesday: Teach Barre, Zumba, and short arms workout 

Thursday: OFF

Friday: Total body circuit (similar) + easy cardio

Saturday: Peloton spin class (I use the app and my own spin bike. Iโ€™ve been stalking their new treadmill like a giant creeper)

    oh, I made that apple pie oatmeal in the crockpot and it’s so yummy! thanks! that acai bowl looks so good!

    I would add a spin bike to my home gym in a second if we had space! So glad you had such a great trip.

    I love seeing your meal plans for the week! I’ve been wanting to try that golden soup, but I’m a little nervous about the turmeric dying my kitchen, do you have any tips? Glad you had a great trip to San Diego!

    I was so proud of myself when I had my meal plan and shopping done on Friday! Then, all i had to do was an hour or some prep for hubby’s lunches. Always takes longer when I photograph of course btu the instant pot helps speed things along!

    Iโ€™ve been flying by the seat of my pants lately, so thank baby Jesus that I have sunbasket coming this week. That golden soup sounds divine, I definitely want to make that soon!

    Do you like the peloton app?? Iโ€™m assuming you canโ€™t link up the app to a non-peloton bike to see what resistance and such youโ€™re at?
